These bars are so good! If you love cashews, chocolate (who doesn't) and caramels, you will love these. They are pretty easy and come out looking and tasting like they were difficult to make :)

3/4 cup firmly packed brown sugar
3/4 cup butter, softened
1 large egg
1 1/2 cups all-purpose flour
1 cup rolled oats
1 (14 ounce) bag caramels, unwrapped
1/3 cup half-and-half
1 cup large cashew pieces
1 cup semi-sweet chocolate chips or 1 cup semisweet chocolate chunk

Steps:

  • Preheat oven to 350 degrees.
  • Grease a 9 x 13 inch pan.
  • In a large bowl, beat brown sugar and butter until light and fluffy and then beat in egg.
  • Stir in flour and oats and blend well.
  • Press into prepared pan.
  • Bake for 15- 18 minutes until light brown.
  • In a medium saucepan combine caramels and half and half and cook over low heat until caramels are melted and mixture is smooth, stirring occasionally.
  • Pour caramel mixture over baked crust.
  • Sprinkle with cashews and chocolate.
  • Bake an additional 8- 10 minutes or until chocolate is softened and caramel begins to bubble around edges of pan.
  • Cool completely and refrigerate to set chocolate.
  • Cut into bars.

1/4 cup cold butter
1/2 cup all-purpose flour
3/4 cup chopped unsalted cashews, toasted
2 tablespoons confectioners' sugar
1/8 teaspoon salt
FILLING:
4 packages (8 ounces each) cream cheese, softened
1-1/4 cups sugar
1 tablespoon vanilla extract
5 large eggs
2 tablespoons heavy whipping cream
TOPPING:
1 cup sugar
3 tablespoons water
3/4 cup heavy whipping cream
1 cup unsalted cashews, toasted

Steps:

  • Preheat oven to 350°. Place a greased 9-in. springform pan on a double thickness of heavy-duty foil (about 18 in. square). Wrap foil securely around pan. Place on a baking sheet., In a small bowl, cut butter into flour until mixture resembles coarse crumbs. Stir in cashews, confectioners' sugar and salt. Press onto the bottom and 1/2 in. up the sides of prepared pan. Bake 15 minutes. Cool on a wire rack. Reduce heat to 325°., In a large bowl, beat cream cheese, sugar and vanilla until smooth. Add eggs and cream; beat on low speed just until combined. Pour over crust. Place springform pan in a larger baking pan; add 1 in. hot water to larger pan., Bake until center is just set and top appears dull, 65-75 minutes. Remove springform pan from water bath. Cool on a wire rack 10 minutes. Carefully run a knife around edge of pan to loosen. Cool 1 hour longer. Refrigerate overnight, covering when completely cooled. , Before serving cheesecake, combine sugar and water in saucepan. Cook over medium-low heat until sugar is dissolved. Bring to a boil over medium-high heat; cover and boil 2 minutes. Uncover; boil until mixture is golden brown and a candy thermometer reads 300° (hard-crack stage), about 8 minutes. , Remove from heat. Stir in cream until smooth, about 5 minutes (mixture will appear lumpy at first). Add cashews; cool to lukewarm., Remove cheesecake to a serving platter. Spoon cooled caramel over cheesecake. Refrigerate leftovers.

1 c old-fashioned oats ( not quick kind )
1 pkg 14 oz caramels ( come in packages of caramel chips but 11 oz only so you'll need a extra package to make 14 oz.
1/3 c half and half cream
1 1/2 c semi-sweet chocolate chunks ( or chocolate chips which i used.
1 1/2 c salted cashew halves and pieces
sea salt to spinkle lightly on top.

Steps:

  • 1. Pre heat oven to 350 Degrees In a large mixing bowl, cream butter and brown sugar. Beat in egg. Stir in flour and oats. Press into bottom of a 13-in x 9-in. x 2 in baking pan coated with cooking spray. Bake at 350 Deg. for 15-18 minutes or until golden brown.

1/2 cup unsalted butter, cut into 8 pieces plus extra for greasing
3 ounces unsweetened chocolate, coarsely chopped
1 cup sugar
1/4 teaspoon salt
2 large eggs, at room temperature
1 teaspoon vanilla extract
3/4 cup cake flour, sifted
3/4 cup semisweet or bittersweet chocolate chunks
1/4 cup cream
Approximately 40 store-bought caramels
Pinch salt
1/2 teaspoon vanilla extract
1/2 to 3/4 cup raw cashews

Steps:

  • Make the brownies: Preheat the oven to 350 degrees F.
  • Line an 8-inch square baking dish with a sheet of aluminum foil, making sure to cover the corners and sides. Lightly butter the aluminum foil, including corners and sides.
  • In the bowl of a double boiler set over simmering water, combine the butter and chopped unsweetened chocolate. Stirring often, heat until melted and smooth. Remove from the heat and stir in the sugar and salt. Add the eggs and vanilla and stir until well blended. Fold in the sifted flour and stir just until the flour disappears. Stir in the semisweet or bittersweet chocolate chunks.
  • Pour the batter into the prepared baking dish and spread evenly. Bake approximately 30 minutes or until a toothpick inserted into the center comes out clean. Baking time will be longer if you are using a metal pan. Do not overbake. Transfer the dish to a wire rack and cool completely.
  • Make the Carmel-Cashew Topping: Pour the cream into the bowl of a double boiler set over simmering water. Unwrap caramels and put them into the bowl. Stirring frequently to prevent sticking, combine the cream and caramels until the mixture becomes homogeneous and smooth. Take the mixture off the heat and keep stirring until the caramel becomes a little thicker and the mixture begins to cool down. Add a pinch of salt and the vanilla and stir. Coarsely chop the cashews and fold them into the caramel mixture until nuts are completely coated with caramel. Pour mixture over the top of the cooled brownies and spread evenly.
  • Refrigerate the brownies until the caramel is set, about 30 to 45 minutes. Remove brownies from the pan by grabbing the sides of the aluminum foil and lifting them from the pan. With a serrated knife, cut the brownies into 2-inch squares. These can be stored in an airtight container for 2 days or in a covered container in the refrigerator for 4 days.

1 cup light brown sugar
1 cup golden syrup (such as Roger's®)
1 (14 ounce) can sweetened condensed milk
½ cup butter

Steps:

  • Lightly spray a 9x13 inch baking dish with butter flavored cooking spray. Arrange chopped cashews in the bottom of dish.
  • Combine brown sugar, golden syrup, sweetened condensed milk, and butter in a large, heavy bottomed saucepan. Bring to a boil over medium-high heat. Do not stir once the sugar syrup begins to boil. Heat to 250 degrees F (120 degrees C), or until a small amount of syrup dropped into cold water forms a rigid ball.
  • Pour caramel over top of cashews. Stir well. Use a heatproof rubber spatula to spread the mixture evenly in the dish; allow to cool for 1 hour. Cut cooled caramel into squares or roll into balls as desired.
