Time 8h35m

Number Of Ingredients 15

3 pounds boneless chuck roast, trimmed and cut into 2-inch cubes
¼ cup all-purpose flour
2 teaspoons minced garlic (from 2 garlic cloves)
2 teaspoons chopped fresh thyme, plus more for garnish
1 teaspoon chopped fresh rosemary, plus more for garnish
1 teaspoon chopped fresh oregano
1 ½ teaspoons kosher salt
¼ cup olive oil
2 (8 ounce) packages fresh cremini mushrooms, quartered
¾ cup dry red wine
2 cups frozen pearl onions, thawed (from 1 [14.4-ounce] package)
1 ½ cups unsalted beef stock
5 medium carrots, peeled and cut diagonally into 2-inch pieces (about 2 cups)
1 tablespoon sherry vinegar
1 tablespoon Fresh oregano leaves

Steps:

  • Place the beef cubes, flour, garlic, thyme, rosemary, oregano, and 1/2 teaspoon of the salt in a large ziplock plastic freezer bag; seal and toss to coat the beef. Remove the beef from the bag, reserving the flour mixture in the bag. Heat 2 tablespoons of the oil in a large nonstick skillet over medium-high; add the beef, in batches if necessary. Cook until browned on all sides, 10 to 12 minutes. Transfer the beef to a 5- to 6-quart slow cooker, reserving the drippings in the skillet.
  • Add the mushrooms and remaining 2 tablespoons oil to the reserved drippings in the skillet, and cook, stirring occasionally, until the mushrooms are deep brown and all of the moisture has evaporated from the skillet, 6 to 8 minutes. Add the red wine, stirring to loosen any browned bits from the bottom of the skillet. Add the mushroom mixture to the slow cooker. Add the pearl onions, beef stock, carrots, reserved flour mixture, and remaining 1 teaspoon salt to the slow cooker, and stir until combined. Cover and cook on LOW until the beef is very tender, about 8 hours. Skim the fat from the cooking liquid, and stir in the vinegar. Garnish with the additional chopped fresh thyme and rosemary and the oregano leaves, if desired.

Time 30m

Yield 2

Number Of Ingredients 10

1 (12 ounce) sirloin steak
salt and freshly ground black pepper to taste
2 tablespoons oil, or as needed
⅓ cup shiitake mushrooms, stems discarded, caps thickly sliced
½ shallot, sliced
1 clove garlic, peeled
⅓ cup dry white wine
⅓ cup beef broth
¼ cup butter, cubed
2 tablespoons chopped fresh tarragon

Steps:

  • Season steak with salt and pepper on both sides.
  • Heat a heavy skillet over high heat until a drop of water immediately sizzles and evaporates when flicked onto the skillet's surface. Pour in oil. Add steak and cook until it is beginning to firm and is hot and slightly pink in the center, about 4 minutes per side. An instant-read thermometer inserted into the center should read 140 degrees F (60 degrees C).
  • Remove steak from skillet and set aside. Tent with foil to keep warm. Discard oil remaining in the skillet.
  • Reduce heat to medium-low and cook mushrooms, shallot, and garlic, stirring frequently, until softened, about 5 minutes. Pour in white wine and cook until slightly reduced. Pour in beef broth. Reduce heat to low and stir in butter, 1 cube at a time, stirring well after each addition. Stir in tarragon. Season with salt and pepper. Serve mushroom sauce over the steak.

SIRLOIN STEAKS WITH PORT-RED ZINFANDEL & MUSHROOM SAUCE

Sirloin Steaks With Port-Red Zinfandel & Mushroom Sauce image

This is a fantastic and quick way to make a steak with a wonderful sauce. From Bon Appetit "Too Busy To Cook." If you don't have port on hand, just use 1 1/2 cups red wine.

Provided by CarolAnn

Categories     Steak

Time 40m

Yield 3-4 serving(s)

Number Of Ingredients 10

3 tablespoons butter, divided
2 large shallots, sliced
1 1/2 lbs mushrooms, sliced
1 tablespoon flour
1 cup red Zinfandel wine (don't use white)
1/2 cup ruby port
1/2 cup reduced-sodium chicken broth
1 1/2 lbs top sirloin steaks
3/4 teaspoon black pepper
1/2 teaspoon salt

Steps:

  • Melt 2 T butter in large nonstick skillet over medium high heat.
  • Add shallots and saute 2 minutes.
  • Then add mushrooms, cover pan, and cook about 5 minutes, then uncover and cook 5 minutes more until browned.
  • Add flour and stir for 1 minute.
  • Next add zinfandel, port and broth.
  • Bring to a boil and boil sauce down, stirring occasionally, until sauce thickens enough to coat a wooden spoon thinly.
  • Season sauce to taste with salt and pepper and set aside.
  • Pound steak between two sheets of wax paper to about 1/2 inch thickness.
  • Coat both sides with salt and pepper.
  • Melt remaining 1 T butter over medium-high heat in another large skillet (I don't use nonstick for this).
  • Cook steak about 2 minutes per side (for medium rare) or longer to suit your preferences.
  • Transfer steak to a plate.
  • Add mushroom sauce to the steak pan, bring to a simmer, scraping up any browned bits on the pan.
  • Serve.

Categories     side-dish

Time 35m

Yield 6 servings

Number Of Ingredients 8

2 tablespoons olive oil
1 shallot, finely chopped
1 1/2 teaspoons kosher salt, divided
3 (10 ounce) packages cremini mushrooms, trimmed and quartered
4 sprigs fresh thyme
2 tablespoons dry Marsala, sherry or white wine, optional
1/2 cup chicken or vegetable broth
1 tablespoon unsalted butter

Steps:

  • Heat a large straight-sided skillet over medium high heat. Add the oil and heat another 30 seconds. Add the shallot and 1/2 teaspoon of the salt to the hot pan and cook, stirring often, for 2 minutes or until fragrant and beginning to soften. Add the mushrooms to the pan along with another 1/2 teaspoon salt and the thyme. Cook, stirring often, until the mushrooms have let off some of their juices are beginning to brown, about 10 minutes.
  • Deglaze with the Marsala, if using, and add the broth and remaining salt. Reduce the heat to low to maintain a gentle simmer. Cover and cook for 5 minutes. Uncover the pan, increase the heat to medium and cook until the liquid has reduced by half, about an additional 5 minutes. Discard the thyme sprigs, stir in the butter and serve.

BEST EVER BRAISED SIRLOIN TIPS

Best Ever Braised Sirloin Tips image

These are the best tasting sirloin tips. Or at least, they are the best I've ever made. The secrets to the beefy flavor are using beef fat (saved from making stock) to brown the beef and using beef demi-glace paste in the liquid the beef is braised in. Braising the beef in the oven means you don't need to watch it while it...

Provided by Heidi Hoerman

Categories     Gravies

Time 2h45m

Number Of Ingredients 11

2 1/2 lb beef sirloin tip roast (or similar lean cut)
1/2 tsp black pepper, freshly ground
3 to 4 Tbsp beef fat (or vegetable oil)
1 large sweet onion, finely chopped
4 large cloves garlic
1/2 c dry red wine (merlot works well)
1 Tbsp soy sauce
1 1/2 c water
2 Tbsp beef demi-glace paste
2 Tbsp cornstarch dissolved in about 1/4 cup water
salt, if needed to adjust final flavor

Steps:

  • 1. Preheat the oven to 300F.
  • 2. Cut the beef into 1 inch (or slightly smaller) cubes, discarding any fat or gristle. Most of the "silver skin" can remain as it will melt in the long cooking.
  • 3. Toss the beef in the black pepper.
  • 4. Using a large Dutch oven or similar oven-safe pan with cover, melt 2 Tbl of the beef fat on medium-high heat. Brown the beef in small batches, adding fat as necessary. Adjust the heat to prevent the pan drippings from burning. Remove the last of the beef from the pan.
  • 5. Discard any excess fat leaving enough in the pan to lightly saute the onions and garlic. Cook the onions and garlic for 2 to 3 minutes, stirring to coat them with the pan drippings.
  • 6. Stir together the wine, soy sauce, water and demi-glace paste until the paste is dissolved.
  • 7. Add the browned beef cubes and the liquids to the onions and garlic and bring to a simmer.
  • 8. Cover and simmer in the oven for 1 1/2 hours or until the meat is fork tender.
  • 9. Continue to simmer on top of the stove and slowly add the dissolved cornstarch, stirring to prevent lumps. This should quickly thicken the liquid to a rich gravy. Simmer another minute, if the gravy has not thickened to your liking, add more dissolved cornstarch but be careful! Too much cornstarch will turn the gravy into a sticky goo.
  • 10. Taste and adjust with salt if needed.
  • 11. Serve hot over rice, potatoes or noodles.
