Braised Pork with Apples and Rosemary image

A simple and savory winter stew featuring braised pork with apples, rosemary, chilies, and fresh citrus served over polenta. Recipe adapted from Italian Slow and Savory by Joyce Goldstein.

1 tablespoon grapeseed oil or other neutral, (heat-tolerant oil)
2 pounds pork shoulder, (fat trimmed, and cut into 2-inch cubes)
sea salt
fresh ground pepper
2 cups dry white wine
2 - 4 dried Thai chili peppers, (or 1 - 2 sliced fresh Fresno chilies)
1 head garlic, (smashed, peeled, and chopped)
3 sprigs rosemary, (plus more for garnish)
4 medium tart apples, (peeled, cored, and cut into 1-inch wedges)
2 blood oranges, (or any sweet orange, supremed* (see notes below))
1/4 cup shaved Parmesan
4 cups water, (plus more as needed)
1 cup polenta
1 teaspoon sea salt, (plus more to taste)

Steps:

  • Sprinkle cubed pork generously with sea salt and pepper on all sides.
  • Note: during the searing stage, the pork and rendered fat splatters and pops quite a bit. Use a deeper pot than you think you'll need, and ideally, keep a splatter screen handy.
  • Set a large Dutch oven or other heavy bottomed, deep-sided pot over medium/medium-high heat, and when hot, add the oil. (Oil should be hot, but not smoking). Working in 2 - 3 batches, sear pork on all sides, about 2 minutes per side. Remove cooked pork to a plate.
  • Drain off all of the rendered fat. Deglaze pot with a 1/2 cup white wine, scraping up any browned bits with a wooden spoon. Next, add seared pork, chilies, garlic, rosemary, and all remaining wine. Bring stew to a boil, then turn heat down to a gentle simmer over medium-low heat and cover.
  • Check braise after an hour. Meat should be incredibly tender, but still hold its shape. Cook up to 1 hour longer (I've found that cooking time varies, so check meat every 20 minutes to be sure it doesn't overcook). When pork is tender and just melts in your mouth, fold in apples, cover pot, and cook an additional 20 - 30 minutes, until apples are cooked through but still have some bite.
  • Meanwhile, make the polenta. Bring water to a boil, whisk in polenta and sea salt. Stirring occasionally, cook 35 - 45 minutes, or until polenta is creamy. If needed, add an additional cup of water. Taste, and add sea salt to taste.
  • To serve, ladle braised pork and apples over polenta. Garnish with minced fresh rosemary, fresh citrus wedges, and shaved Parmesan.

This roast is by far the best tenderloin recipe I've ever made. The sweetness imparted from the gravy and the apple flavor is quite different from what is typically expected from a pork roast. The apple and onion mixture cooked with the roast makes an excellent side dish with a little of the gravy over the top.

4 teaspoons dried rosemary
1 ½ teaspoons dried thyme
1 ½ teaspoons dried marjoram
salt and pepper to taste
3 pounds pork tenderloin
1 (12 fluid ounce) bottle hard apple cider
water
3 Granny Smith apples, cored and cut into 1 inch pieces
1 large red onion, cut into 1 inch pieces
5 tablespoons brown sugar
⅓ cup all-purpose flour
¾ cup maple syrup

Steps:

  • In a small bowl, mix together rosemary, thyme, marjoram, salt, and pepper. Rub herb mixture over tenderloin. Place in a container, and pour hard cider over roast. Add water until pork is completely submerged. Cover, and refrigerate 6 to 8 hours, or overnight.
  • Preheat oven to 325 degrees F (165 degrees C).
  • Place roast in a roasting pan, elevated from the bottom, and pour marinade around the meat. Bake for 1 hour in preheated oven.
  • In a large bowl, mix apples and onion. Put mixture around and on top of roast. Spoon brown sugar over entire pan evenly. Place roast back into oven, and continue to cook for 1 hour more, or until meat reaches 145 degrees F (63 degrees C). Transfer roast, apples, and onion to a serving platter.
  • For the gravy, brown flour in a skillet. Pour the marinade/drippings mixture into the skillet. Stir in syrup. Cook and stir over high heat until liquid has thickened to desired consistency.
  • Slice roast, and serve with gravy.

1 teaspoon dried thyme
1 teaspoon rubbed sage
1 teaspoon pepper
1 boneless rolled pork loin roast (3 pounds)
1 tablespoon canola oil
1 cup chopped onion
3 garlic cloves, minced
1 large apple, peeled and chopped
1/2 cup thawed unsweetened apple juice concentrate
1/2 teaspoon salt

Steps:

  • Combine the thyme, sage and pepper; rub over pork. In a Dutch oven, brown meat on all sides in oil; remove and keep warm. In the same pan, saute onion and garlic until tender. Add the apple, apple juice concentrate and salt; bring to a boil. Return meat to the pan. , Cover and bake at 325° for 55-75 minutes or until a thermometer reads 160°, basting occasionally with juices.Remove to a serving platter and keep warm. Let stand for 10 minutes before slicing., Pour cooking liquid into a measuring cup; skim off fat. Cool cooking liquid slightly; place in a blender or food processor. Cover and process until smooth. Serve with the roast.

This is a wonderfully flavorful and moist roast that is browned briefly on top of the stove and finishes cooking in the oven. As it cooks there is time to prepare side dishes and have dinner on the table in only one hour. It is from Jeff and Jodie Morgan's "Working Parents' Cookbook." My family loves coming home to the fragrance of this dish as it cooks - and loves eating it even more! (Cooking time includes thickening the sauce.)

7 garlic cloves, minced
3 tablespoons fresh rosemary, chopped or 1 tablespoon dry rosemary
2 1/2 teaspoons sea salt or 2 1/2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
5 tablespoons extra virgin olive oil
3 lbs boneless pork roast
1 1/2 cups whole milk, plus more if needed

Steps:

  • Preheat the oven to 400F.
  • In a small bowl combine garlic, rosemary, sea salt, pepper and 3 Tablespoons of the olive oil into a paste; set aside.
  • In a dutch oven or other oven-proof pot, heat remaining olive oil over medium heat.
  • Brown the pork roast on all sides, about 2 minutes per side.
  • Remove the pot from the heat and stir the milk into the pan juices.
  • Spread the garlic-rosemary paste over the top of the roast and cover the pot.
  • Place the pot in the oven and cook, basting occasionally with the pan juices, for 45 minutes. (If the pan juices evaporate you may add more milk, about 1/2 cup at a time.).
  • Check the temperature of the roast. It is ready when the thermometer regesters 155°F.
  • Transfer the roast to a cutting board and let rest for 5-10 minutes before carving.
  • Meanwhile, whisk the pan juices to break up any solids (the milk will curdle during the cooking.) If the sauce seems too thin, simmer on top of the stove over high heat for a few minutes to thicken.
  • Slice the roast and serve with the sauce spooned over.
  • Especially good with mashed potatoes, rice or egg noodles.

1 pork tenderloin, 1 1/2 pounds
1/4 cup flour
1/2 teaspoon salt
1/4 fresh ground black pepper
1 tablespoon olive oil
1 cup fresh apple cider
2 garlic cloves, crushed
1 shallot, finely chopped
1 tablespoon fresh rosemary, finely chopped
1 tablespoon fresh thyme, finely chopped
2 tablespoons grainy mustard
2 tart-sweet apples, un-peeled but cored and cut into quarters
1 tablespoon butter

Steps:

  • Preheat the oven to 350°F.
  • Add the flour, salt and pepper to a shallow dish and whisk together. Add the tenderloin, turning to coat it completely, shaking off any excess.
  • In a heavy-bottomed pot or Dutch oven, over medium-high heat, add the olive oil and when it is hot add the pork and sear, turning to brown on all sides, about 4-5 minutes. Transfer the pork to a plate lined with paper towels to absorb any oil.
  • Add the shallots and garlic and cook for 1-2 minutes. Add the cider, scraping the bottom to remove any browning bits. Add the rosemary, thyme and mustard to the skillet, increase the heat and bring the mixture to a boil, stirring often. Return the pork to the pan, cover and transfer to the oven and cook for 20 minutes. Remove from the oven and add the apple quarters and continue to cook, covered, in the oven for an additional 15 minutes until the apples are slightly soft but still firm and the pork registers 145°F on an instant-read thermometer.
  • Transfer the apples and pork to a plate and allow to rest for 10 minutes.
  • While the pork is resting, place the pot over medium-high heat and bring the liquid to a boil, if it is very thin then allow it to reduce by 1/3, whisk in the butter to make a glossy sauce. Transfer the sauce to a dish or pitcher.
  • To serve: Place the pork onto a cutting board and slice crosswise into 8 slices. Arrange the slices of pork on a serving platter with the apple slices and spoon the sauce over the pork.
