Cá KHO Tộ RECIPE - VIETNAMESE CARAMELIZED & BRAISED FISH



Cá Kho Tộ Recipe - Vietnamese Caramelized & Braised Fish image

This is a Vietnamese classic of caramelized, sweet and salty braised fish with a moutwatering sauce perfect with lots of white rice.

1 lb catfish filets (bone and skin optional)
salt to clean the fish
2 tbsp oil
5 cloves garlic (minced)
1/2 yellow onion (sliced)
1 tsp salt
1.5 tbsp fish sauce
About 1/2 teaspoon thick soy sauce
1/2 c water
1/2 c coconut juice (or replace water & coconut juice with 1 cup coconut soda)
1 chile (sliced (to taste, optional))
freshly ground black pepper (or add as a final topping when serving)
1 green onions (roughly chopped)
black pepper (freshly ground )
1 red chile (sliced, optional)

Steps:

  • Generously salt fish and rinse under water to clean it. Set aside to dry.
  • Add oil to a pan and saute garlic over medium heat until lightly browned.
  • Layer onion on top, then the fish, evenly spaced.
  • Add the seasoning & cooking liquid (& optional chiles) and turn the heat to high until boiling. Taste the sauce and adjust the seasoning.
  • Bring it to a simmer for ~20 minutes. Adjust seasoning if needed.
  • Gently flip the filets of fish over and simmer for a final ~10 minutes with the lid partially covered.
  • Stand there to watch it the final ~10 minutes to prevent it from burning! During this time you can continually spoon the sauce over the fish.
  • Add green onion during last 2 minutes to wilt & top with sliced chiles, and some freshly ground black pepper.

Chili and Beer-Braised Catfish image

This is a quick, tasty and different alternative to fried catfish. Tomatoes, beer, chili powder, garlic, onion, Worcestershire sauce and a shot of Tabasco combine in a delicious simmering sauce. This makes a lot of sauce; I like to save what isn't used and add a few impromptu ingredients for a nice homemade seafood stew.

1 tablespoon chili powder
1 clove garlic, minced
2 teaspoons flour
1/2 teaspoon salt
1 lb catfish fillet, cut in serving-size pieces
2 tablespoons olive oil
1/2 large onion, chopped
8 ounces bottles beer (lighter is better; I like Mexican beers here, like Sol)
1 (14 1/2 ounce) can diced tomatoes, with juice
2 tablespoons Worcestershire sauce
2 teaspoons Tabasco sauce

Steps:

  • In a large plastic ziplock bag, combine flour, chili powder, garlic and salt.
  • Add catfish pieces and coat thoroughly.
  • Heat olive oil in a large skillet and brown catfish on all sides, about 3 minutes per side.
  • Remove fish to a plate; set aside.
  • Add onions to skillet and cook for about 5 minutes or until turning golden.
  • Add beer, tomatoes with their juices, Worcestershire sauce and Tabasco sauce; simmer together about 5 minutes, then return browned catfish to skillet and simmer uncovered until done, turning occasionally, about 15 to 20 minutes.

This Cá Kho Tộ recipe is the TASTIEST way to slow cook fish. For such a budget-friendly cut, it's incredibly moist and fall apart tender!

650 g / 1.4 lb fish ((preferably in steak form))
3 cloves garlic ((finely chopped))
2 red shallot ((finely chopped))
3 chili ((optional))
2 tbsp fish sauce ((or to taste))
1 1/2 tbsp sugar ((or to taste))
1 tsp chicken bouillon powder
1 tsp pepper
1 tsp cooking oil ((with a neutral flavor))
1 US cup coconut water ((or water))
4 tbsp oil
3 tbsp sugar ((or to taste))
spring onion ((finely chopped; to garnish))

Steps:

  • Combine the fish with the sugar, chicken bouillon powder, pepper, fish sauce and oil as well as half of the garlic and red shallots. Let it marinate for a minimum of 20 minutes.
  • To make the caramel, heat up a claypot on low heat and add the oil and sugar in. Let it brown and stir in the remaining aromatics for 10 seconds.Note: Work VERY quickly with the sugar because it will burn if left on the heat for too long.
  • Add the remaining garlic and red shallots to cook for 20 seconds, then pour in the coconut water and turn the heat up to high.
  • Add the fish in and let it simmer for 30 seconds, then gently flip it over to coat the sauce on the other side. Pour the remaining marinade over it.
  • Let the fish braise on a low-medium heat for 1 hour or until soft with the lid partially on. The sauce should be slightly thick and sticky when it's done. If you plan to add chili, you can put it in now.Tip: Scoop the sauce onto the fish every 15 minutes to make sure every part is covered.
  • Garnish with spring onions and serve immediately with hot rice!

⅓ cup water
2 tablespoons fish sauce
2 shallots, chopped
4 cloves garlic, minced
1 ½ teaspoons ground black pepper
¼ teaspoon red pepper flakes
⅓ cup water
⅓ cup white sugar
2 pounds catfish fillets
½ teaspoon white sugar
1 tablespoon fresh lime juice
1 green onion, thinly sliced
½ cup chopped cilantro

Steps:

  • Mix 1/3 cup of water with the fish sauce in a small bowl and set aside. Combine shallots, garlic, black pepper, and red pepper flakes in a separate bowl and set aside.
  • Heat 1/3 cup of water and 1/3 cup of sugar in a large skillet over medium heat, stirring occasionally until sugar turns deep golden brown. Gently stir in the fish sauce mixture and bring to a boil. Stir in the shallot mixture and cook until shallots soften, then add the catfish. Cover and cook the catfish until the fish flakes easily with a fork, about 5 minutes on each side. Place catfish on a large plate, cover, and set aside. Increase heat to high and stir in 1/2 teaspoon of sugar. Stir in the lime juice and any sauce that has collected on the plate. Bring to a boil and simmer until the sauce has reduced. Pour sauce over the catfish and garnish with green onions and cilantro.

1/4 cup milk
1/3 cup yellow cornmeal
1 1/2 teaspoons grated lemon peel
1/2 teaspoon salt

1 lb. catfish fillets
1/2 cup tartar sauce, if desired

Steps:

  • Spray shallow baking pan with nonstick cooking spray. Beat egg in shallow dish or pie pan until foamy. Add milk; mix well. In another shallow dish, combine cornmeal, lemon peel, salt, thyme and pepper; mix well.
  • Dip catfish fillets in egg mixture; dip in cornmeal mixture to coat. Arrange fish in sprayed pan.
  • Broil 4 to 6 inches from heat for 8 to 10 minutes or until fish flakes easily with fork, turning once. Serve tartar sauce with fish.
