BOY SCOUT FOIL DINNER

Boy Scout Foil Dinner image

My oldest son is a Boy Scout and made this on a camping trip. It's winter here right now but I decided I'd make something close to bake in the oven.

Provided by rysharen

Categories     One Dish Meal

Time 1h10m

Yield 5 serving(s)

Number Of Ingredients 7

1 lb hamburger
1 1/2 ounces Lipton Onion Soup Mix
2 small onions
5 red potatoes
1 1/2 cups baby carrots
1 1/2 tablespoons olive oil
salt and pepper

Steps:

  • Preheat oven to 375. Take 1 lb hamburger and mix it by hand with 1 pkg Lipton Onion soup mix and set aside. Chop red potatoes and onion and mix together with desired amount of baby carrots and toss with Olive oil and salt and pepper then set aside. Pull out a sheet of Tin foil and Pam spray it. Layer it with the hamburger then salt and pepper the hamburger before adding the Potato, carrot, onion mixture. Salt and pepper again before folding up. Place foil packets on cookie sheep and place on lowest shelf in oven. Bake 25 minutes and turn over and bake another 25 minutes. Take out and check for doneness. If vegetables or hamburger are not done place back into oven and bake longer till done.

THE BOY SCOUTS CAMPFIRE QUESADILLA

The Boy Scouts Campfire Quesadilla image

Provided by BSCA Troop 19

Categories     Chicken     Kid-Friendly     Dinner     Lunch     Summer     Grill/Barbecue     Healthy     Tortillas     Monterey Jack     Sugar Conscious     Peanut Free     Tree Nut Free     Soy Free     Small Plates

Yield Serves 4

Number Of Ingredients 6

1 (3-pound) rotisserie chicken, skin removed, meat shredded into bite-sized pieces (3 1/2 cups chicken)
5 ounces coarsely grated Monterey Jack cheese
3/4 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
4 (7-inch) flour tortillas
Hot sauce (optional, for serving)

Steps:

  • Cut 8 (12x16") pieces of heavy-duty foil. Layer 2 pieces of foil on top of each other to create 4 stacks.
  • Place a flour tortilla in the center of each foil stack. Dividing evenly, top one half of each tortilla with chicken and cheese and season with salt and pepper. Fold tortillas in half, then bring edges of foil together to enclose the quesadillas and crimp edges to seal.
  • Prepare a campfire or grill for medium, indirect heat, preferably with hardwood or hardwood charcoal. Let coals burn until covered with ash and glowing red with no black remaining.
  • Place foil packs side by side directly onto hot coals or grill and cook, rotating with tongs occasionally, about 5 minutes. Carefully remove 1 packet from heat and check if cheese is melted. If necessary, return pack to coals and continue to cook, 5-10 minutes more. Serve with hot sauce, if desired.

This recipe is great when camping, or at home. I used to make this with my Boy Scout troop. The recipe is for one serving, so adjust accordingly.

Yield 1

Number Of Ingredients 9

6 ounces blade roast, trimmed and cut into 1 inch cubes
1 potato, cubed
2 carrots, sliced
1 onion, chopped
1 clove crushed garlic
1 pinch salt
1 pinch ground black pepper
1 tablespoon butter
1 tablespoon water

Steps:

  • On a large square sheet of foil, layer beef, potato cubes, carrots, onion and garlic. Sprinkle with salt and pepper, top with butter and a tablespoon of water.
  • Roll edges of tin foil together and seal tightly.
  • Bury it in campfire coals or put in a preheated oven at 375 degrees F (190 degrees C). For either cooking method, cooking time is about 1 hour. You can eat it right out of the foil, or empty it into a dish.
