3/4 pound fusilli pasta
3/4 pound bow tie pasta
1/4 cup good olive oil
1 1/2 cups pesto (packaged or see recipe below)
1 (10-ounce) package frozen chopped spinach, defrosted and squeezed dry
3 tablespoons freshly squeezed lemon juice
1 1/4 cups good mayonnaise
1/2 cup freshly grated Parmesan
1 1/2 cups frozen peas, defrosted
1/3 cup pignoli (pine nuts)
3/4 teaspoon kosher salt
3/4 teaspoon freshly ground black pepper
1/4 cup walnuts
1/4 cup pignoli (pine nuts)
3 tablespoons chopped garlic (9 cloves)
5 cups fresh basil leaves, packed
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
1 1/2 cups good olive oil
1 cup freshly grated Parmesan

Steps:

  • Cook the fusilli and bow ties separately in a large pot of boiling salted water for 10 to 12 minutes until each pasta is al dente. Drain and toss into a bowl with the olive oil. Cool to room temperature.
  • In the bowl of a food processor fitted with a steel blade, puree the pesto, spinach, and lemon juice. Add the mayonnaise and puree. Add the pesto mixture to the cooled pasta and then add the Parmesan, peas, pignoli, salt, and pepper. Mix well, season to taste, and serve at room temperature.
  • Place the walnuts, pignoli, and garlic in the bowl of a food processor fitted with a steel blade. Process for 15 seconds. Add the basil leaves, salt, and pepper. With the processor running, slowly pour the olive oil into the bowl through the feed tube and process until the pesto is thoroughly pureed. Add the Parmesan and puree for a minute. Use right away or store the pesto in the refrigerator or freezer with a thin film of olive oil on top.
  • Notes: Air is the enemy of pesto. For freezing, pack it in containers with a film of oil or plastic wrap directly on top with the air pressed out.
  • To clean basil, remove the leaves, swirl them in a bowl of water, and then spin them very dry in a salad spinner. Store them in a closed plastic bag with a slightly damp paper towel. As long as the leaves are dry they will stay green for several days.

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta; cook, stirring occasionally, until tender yet firm to the bite, about 12 minutes. Drain.
  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain on paper towels; crumble into small pieces.
  • Mix basil, lemon juice, olive oil, garlic, pepper, and salt together in a small bowl.
  • Combine bacon pieces and avocado in a large bowl. Stir in basil mixture. Add pasta; toss to combine. Sprinkle Romano cheese on top.

This was a stunning success. The resulting pesto was meatier than conventional recipes, but not heavy in the way a meat sauce is. And as it does with Parmesan, the herby tasta of the basil cuts through the fatty bacon. This pesto is delicious tossed with pasta, but it's also great smeared onto slices of sourdough bread, topped with tomato and a slab of fresh mozzarella, then briefly broiled.,

6 slices thick-cut bacon (preferably smoked)
12 ounces farfalle pasta
2 1/2 cups fresh basil
1/4 cup pine nuts
3 garlic cloves
1/4 cup extra virgin olive oil
salt & fresh ground pepper, to taste
1 tomatoes, seeded and diced

Steps:

  • In a large skillet over medium-high heat, cook bacon until crisp, about 8 minutes. Use a slotted spoon to transfer bacon to paper towels and drain well. Let bacon cool slightly.
  • Meanwhile, bring a large saucepan of salted water to a boil. Add pasta and cook according to package directions. Reserve 1/4 cup of the pasta cooking water; then drain pasta, return to the pot and set aside.
  • In a food processor, combine bacon, basil, pine nuts and garlic. Pulse until well chopped.
  • Then with processor running, drizzle in olive oil until ingredients form a thick paste.
  • Stop processor and scrape sides with a rubber spatula as needed. Season with salt and pepper, then pulse again to blend.
  • Add pesto to pasta and toss well. Add just a bit ot the pasta cooking water and toss again. Serve topped with diced tomato.

1-1/2 teaspoons butter
2-1/4 teaspoons olive oil

3 tablespoons 2% milk
2 tablespoons chicken broth
1 tablespoon water

This pasta dish is a simple recipe with just a few ingredients, but it is big on flavor. I use bowtie pasta because it looks so pretty but any kind of pasta can be used. This recipe is a favorite for all the workers!". It is true that this is DELICIOUS and very rich.The article said 12 servings and it is rich enough that 12 is possible but they would be very small servings. We 8 dinner-sized servings.

1 lb uncooked bow tie pasta
1 (8 ounce) jar sun-dried tomatoes packed in oil
8 ounces pepper bacon (or bacon with 1/4 teaspoon black pepper)
1 (10 ounce) jar basil pesto
1 cup grated romano cheese

Steps:

  • Cook pasta according to package directions. Drain tomatoes, reserving some of the oil. Cut tomatoes into julienne strips.
  • Cook bacon in a large skillet over medium-high heat until crisp. Drain and crumble.
  • Drain pasta, shake off excess water and place in a large bowl. Add tomatoes and pesto; mix well. Add bacon and Romano and toss well. For a moister consistency, add some of reserved sun-dried tomato oil. Season with black pepper. Serve immediately.

1/2 pint cherry tomatoes, halved
1 cup crumbled feta cheese
kosher salt & freshly ground black pepper

2 bunches basil leaves
1/2 cup toasted pine nuts
1/2 cup freshly grated parmesan cheese
1 small lemon, juice of
2 garlic cloves, peeled
kosher salt, to taste
fresh ground black pepper, to taste

Steps:

  • For the pesto, place all ingredients with ½ cup of the oil in a blender and blend.
  • Gradually drizzle in the remaining ¼ cup of oil until pesto is thick and smooth.

  • For the pasta, bring a large pot of salted water to boil.
  • Stir in the bow ties and cook, stirring occasionally, until al dente, about 10 minutes.
  • Drain the pasta and run it under cold water just until it stops steaming.
  • Bounce the pasta around to get rid of as much water as you can.
  • Dump the pasta into a large serving bowl.
  • Stir in the pesto until the pasta is coated.
  • Toss in the cherry tomatoes and the crumbled feta.
  • Taste the salad and season it as you like with salt and pepper.
  • You can make the salad up to about 1 hour before you serve it.
  • If the salad looks a little dry, add some olive oil prior to serving.

4 slices bacon, cooked and chopped
1 lb bow tie pasta
2 pinches salt for the pasta water
1 tablespoon oil
1 onion, chopped
4 garlic cloves, minced
1 cup of pasta water
1 tablespoon parsley, chopped
salt and pepper, to taste
cajun seasoning or creole seasoning, to taste
2/3 cup half-and-half
1 (15 ounce) can lasueur early peas, drained
1/2 cup parmesan cheese, grated

Steps:

  • Cook the bacon and chop; set aside.
  • In a large pot add two big pinches of salt to boiling water for pasta.
  • Cook pasta according to package directions.
  • Reserve 1 cup of the pasta water before draining the pasta.
  • When pasta is just about ready, in the pan you cooked bacon in add oil and heat over medium heat, sauté the onion until soft, but not browned, about 4 minutes.
  • Add the garlic and cook another minute.
  • Stir in one cup of the pasta water and the parsley, salt, pepper, Cajun seasoning and half and half; bring to a boil.
  • Add the peas, reduce heat and simmer just until the peas are warmed through.
  • Taste and adjust seasonings.
  • Add pasta and toss together, top with bacon and parmesan cheese.
  • Add the remaining pasta water only as needed for moisture.

  • Gradually add milk, beating until mixture is smooth.
  • Microwave cream cheese mixture at HIGH 3 minutes or until thoroughly heated, whisking every 30 seconds.
  • Add salt and pepper to taste.
  • Pour cream cheese mixture over warm pasta, tossing to coat.
  • Top with crumbled bacon and 1/2 cup grated Parmesan cheese.
