BOURSIN CHEESE CREAMED SPINACH BAKE
From Cuisine at Home. I can't abide frozen spinach, so baby spinach leaves fit the role nicely. Cut down on the fat content by using lower fat milk instead of cream. A brief history of boursin, compliments of www.cheese.com: "Boursin is a modern, creamy, fresh cheese of cylindrical shape without rind. It is made with garlic and herbs or even black pepper. It is a soft industrial cheese with no affinage (maturity/aging process). The cheese was founded by Monsier Boursin in 1957. It has a rich, sweet flavor with a hint of acidity." Update: I discovered recently that there is a posted boursin cheese recipe on this site. I have not tried it.

Steps:
- Preheat oven to 425 degrees.
- Butter a shallow baking dish and set aside.
- Prepare the sauce first by sauteing the onion in butter over medium heat. Cook until soft, about 4-5 minutes.
- Add flour and stir well to coat. Cook about 1 minute.
- Gradually whisk in the milk and whipping cream, stirring the mixture constantly to break up any lumps. Simmer sauce for 1 minute. DO NOT burn.
- Next stir in the boursin cheese a little bit at a time, until melted and smooth. Remove the pan from the heat.
- Now add the spinach, Parmesan cheese, lemon zest and seasonings. Transfer the spinach mixture to the prepared baking dish.
- Toss together the topping ingredients. Add the topping to the spinach mixture and pat down with your hands.
- Place the dish on a baking sheet and bake until crumbs are golden and saucy bubbly; approximately 20-25 minutes.
- NOTE: Casserole can be prepared up through Step #8, covered with foil and chilled for baking at a later time.

- Preheat oven to 425 degrees.
- Coat a shallow 2 cup baking dish with nonstick spray.
- Sauté the onion in 1 tablespoon butter in a saucepan over medium heat until soft, about 5 minutes.
- Add the flour and stir to coat onion. Cook about one minute.
- Gradually whisk the milk and cream into onion mixture, stirring constantly to prevent lumps.
- Simmer sauce for approximately 1 minute.
- Stir in the Boursin a bit at a time until cheese is melted and sauce is smooth. Remove it from the heat.
- Add the spinach, Parmesan, zest and seasonings. Blend and transfer to prepared baking dish.
- For The Crumb Topping: Combine crumbs, butter, oil, salt and pepper.
- Top spinach with crumbs, pressing them to adhere. (Note: The dish can be made to here, refrigerated and baked later).
- Place dish on a baking sheet.
- Bake until crumbs are golden and sauce is bubbly, about 18-25 minutes.

KETO CREAMED SPINACH WITH BOURSIN CHEESE
This easy creamed spinach recipe is made with delicious boursin cheese and six other ingredients for the perfect side dish that's low carb and keto friendly too.

- Begin by cooking down your spinach and kale in a large skillet over medium heat. Cover it with a lid for a minute or two, then gently fold it over in the pan until it cooks down.
- Remove from the heat and use a fine mesh strainer or cheese cloth to remove the excess moisture. I use a wooden spoon or spatula and push down on the mixture in a strainer to squeeze as much out as I can. This is a key part to the recipe, don't skip this step!
- Set the spinach and kale aside and use the same skillet to melt the butter over medium heat.
- To the pan, add the minced garlic and cook for 30-45 seconds.
- Add the boursin cheese and break it down into the pan with a whisk.
- Slowly add the heavy cream into the pan and whisk the boursin cheese into it. Let the mixture heat through and allow the cheese to fully dissolve into the liquid.
- Slowly whisk in the parmesan cheese to the sauce and whisk continuously until smooth. Turn of the heat.
- Season with salt and pepper to taste. Then fold the spinach and kale into the cream sauce.
- Bake in the current skillet if oven safe or transfer to another pan or baking dish. I used a 9 inch lodge cast iron pan.
- Preheat your oven to 350 F. Add the pork rind crumbs over the top and bake until golden brown and bubbling, about 30 minutes.
- Let rest 5 minutes or so before serving and enjoy!

- Bring a large pot of lightly salted water to a boil. Cook gnocchi in the boiling water until they float to the top, 2 to 4 minutes.
- Meanwhile, melt butter in a heavy skillet over medium-high heat. Add sliced mushrooms and sauté until softened, about 3 minutes. Add garlic and sauté until fragrant, about 30 seconds. Reduce heat, and pour in cream.
- Scoop out 3/4 cup of pasta cooking water and set aside. Place spinach in the bottom of a colander and drain the gnocchi over the spinach to wilt it.
- Stir cheese into the skillet and add reserved cooking water; keep stirring until cheese is melted.

- Cook the pasta in a large pot of well-salted boiling water over high heat until al dente, about 9 minutes.
- Meanwhile, heat the broiler to medium. Place the boursin and cream cheese in a small saucepan over medium heat; cook, mixing well, until the cheese melt and form a sauce (or microwave in a bowl, 1 1/2 minutes). CHICKEN STUFFED WITH BOURSIN CHEESE AND SPINACH
I created this recipe years ago, and during the past year have seen similar ones in newer cookbooks. While the recipe calls for Boursin cheese, I made it recently with the Tipsy Boursin Cheese recipe posted on this site and it is just as good as when made with the real thing. The stuffing also makes wonderful stuffed mushrooms. I prefer to take the breast off the bone so the spinach is lightly cooked, but it can be made with the bone in - just bake it longer. Use the type of spinach you would buy for a salad and serve it with Jasmine or Basmati rice.

- Preheat oven to 350 degrees. Use a baking dish that will hold all four breasts, such as a 13 x 9 pan.
- Make stuffing: Wash and dry spinach. Roughly chop the spinach and place into a medium size bowl. Using a fork or your hands, mash the spinach and cheese together until the spinach is coated with the cheese and most of the lumps are gone.
- Season the chicken lightly with salt and pepper on both sides. Slide your fingers under the chicken skin to loosen it, leaving some of the membrane intact so it will better hold the stuffing.
- Lightly drizzle olive oil on the bottom of the pan, and lay the chicken breasts skin-side up on top of the oil.
- Dividing the stuffing evenly between them, stuff the breasts. Using the opening you made with your fingers, gently push the spinach/cheese mixture under the skin, working it around so it looks attractive.
- Drizzle the skin lightly with olive oil.
- Place pan in oven and bake for approximately 45 minutes to 1 hour.
- If you have extra stuffing, bake it in a small greased dish for about 25 minutes.
- Check the chicken after 30 minutes and lay a piece of foil over the pan if it is getting too brown.

- Heat oven to 350°F.
- In a medium-sized bowl, beat eggs lightly, then beat in sour cream and black pepper. Stir in milk and butter, and set aside.
- In a small bowl, sift together flour and baking powder. Stir several times and set aside.
- In a large bowl, combine, in order, the spinach, shallots, cheeses, artichoke hearts and bacon. Stir well after each addition.
- Add flour mixture and stir well.
- Add egg mixture and stir well.
- Pour into a greased 11x7 pan (I used a glass one). Note: a 10-inch pie pan also works.
- Bake in the pre-heated oven for 30-40 minutes, until golden on top.
- Let rest for at least 10 minutes before slicing.
- Can be served warm but is best at room temperature.
