BOURBON GLAZE RECIPE
A splash of bourbon flavor can fill a delicious homemade bread or cake with a warm fall taste. This bourbon glaze pairs perfectly with our Mini Apple Cider Pound Cakes, but you can also drizzle it on many of our classic fall cakes and baked breads for a surefire, crowd-pleasing sweet. SWEET POTATOES WITH BOURBON AND BROWN SUGAR
These silky mashed sweet potatoes are spiced with cloves, nutmeg and a little black pepper, brightened with lemon zest, and spiked with bourbon (or orange juice, if you'd prefer). Puréeing them in a food processor yields the smoothest, airiest texture, but for something a little more rustic, you could mash them by hand. Whichever you choose, these reheat well, either in a microwave or in a pot over low heat.

Steps:
- Heat oven to 350 degrees. Wrap potatoes in foil, place on a rimmed baking sheet, and bake until tender, about 1 hour. Let rest until cool enough to handle but still warm, then remove the foil and peel off the skins.
- Add sweet potatoes to a food processor, along with butter, brown sugar, bourbon or juice, lemon zest, salt, nutmeg, pepper and cloves. Purée until smooth. (Or, for a chunkier texture, mash them by hand.) Taste and add salt, sugar or both if you like. Serve while still warm or reheat before serving.

SWEET POTATOES & PEARS WITH BOURBON GLAZE
This Christmas I was looking for a sweet potato recipe that did not have the melted marshmellow topping. We found this on gumbopages and have to thank "The Oregonian Food Section" for such a wonderful recipe. The bourbon cooks off and leaves a very rich flavor to complement the pears and sweet potatoes. YUMMY! NOTE: Cane syrup can be difficult to find; I made my own using 1-1/4 cup sugar and 1/4 cup water. Boil until syrupy.

Steps:
- For the chops: Preheat a gas grill to medium-high heat on one side and low on the other side. If using a charcoal grill, bank very hot coals on one side of the grill.
- Put the cider, bourbon and honey in a small saucepan and cook over medium heat until reduced by half. Whisk in the butter and hold the sauce in a warm place
- Rub the chops with some olive oil, then sprinkle with the coriander and 1 teaspoon each salt and pepper. Grill on the hot side of the grill for 3 minutes per side. Move the chops to the cooler side of the grill, cover with the lid and cook, occasionally brushing with the glaze, until they reach desired tenderness and temperature, 145 degrees F for pork. Let rest for 5 minutes.
- For the fritters: While the meat is cooking, grate the sweet potatoes on the large holes of a box grater into a clean kitchen towel. Wring as much liquid out of the sweet potatoes as possible and discard the liquid.
- In a medium bowl, combine the sweet potatoes, thyme, garlic, onion and lemon zest. Stir in the flour and egg and mix to combine.
- In a large cast-iron pan, add enough canola oil to reach a depth of 1/4 inch (enough oil to come halfway up the sides of the fritters) and place over medium-high heat.
- Form the fritters by hand or using a 1/4-cup measure. In batches, fry the fritters until golden-brown, about 2 minutes per side. Transfer to paper towels to drain. Season with salt and pepper. Serve with the chops.

- Preheat the oven to 425°F. Place the diced sweet potatoes onto a sheet pan and drizzle with a generous amount of olive oil. Toss well to coat. Spread the potatoes into one, even layer. Season with a pinch of salt. Place the pan on the bottom rack in the oven and roast for about 30 minutes, or until tender and slightly crisp.
- When the sweet potatoes have about 5 minutes left of roasting, heat a skillet over medium heat. Add the butter and let melt. Whisk in the brown sugar, maple syrup, bourbon, cinnamon, salt, and cayenne pepper. Bring the mixture to a simmer.
- Reduce the heat to medium-low and let the glaze cook until thickened and syrupy. Stir in the pecans. If the glaze gets too thick and looks like it won’t easily coat the sweet potatoes, add a splash of water to loosen.
- Transfer the sweet potatoes to the skillet and gently toss with the glaze. Serve on a large platter with any extra glaze in the skillet spooned over top.
