3 yukon gold potatoes
1 green bell pepper
1 red bell pepper
2 small onions
6 cloves garlic
1/3 cup extra virgin olive oil (65 ml)
sea salt & black pepper
handful freshly chopped parsley

Steps:

  • Cut 3 yukon gold potatoes into rounds that are a 1/4 inch thick, then cut each slice into 4 evenly sized quarters, add the potatoes into a stock pot, fill with cold water, just enough to cover the potatoes, heat with a high heat
  • Meanwhile, cut 1 green bell pepper into thin strips, 1 red bell pepper into thin strips, thinly slice 2 small (or 1 large) onions, and cut a slit on 6 cloves of garlic (skins on)
  • Exactly 10 minutes after turning the heat on the potatoes they should be cooked al dente, you dont want to over cook them, or they will break apart when you fry them, pierce one with a toothpick, if it easily goes in but with resistance, they are perfect, drain into a strainer and run some cold water over the potatoes
  • Heat a large deep pan with a medium-high heat and add in 1/3 cup extra virgin olive oil, after 1 minute add in the sliced onion and the cloves of garlic, mix with the olive oil, after 2 to 3 minutes and the onions are translucent, add in the strips of green and red bell pepper, continue to mix with the olive oil, after 6 minutes and the bell peppers are tender, add in the boiled potatoes, gently mix together so the olive oil is coating all the potatoes, mix every 1 to 2 minutes
  • About 12 to 15 minutes after adding the potatoes and they have developed a light golden color, season everything with sea salt & black pepper, mix together and transfer everything into a large serving dish, sprinkle with freshly chopped parsley, enjoy!

1 1/2 pounds ground beef (20% fat or less)
1 1/2 pounds of potatoes
1 can of chili beans (any brand (15.5oz))
1 can of your favorite beans (drained (15.5oz) - my favorites are pinto or kidney beans)
1 teaspoon of black pepper
15 oz of grated cheese (cheddar, white cheddar, pepper jack, etc.)

Steps:

  • Put a medium sauce pan of water on high. Peel potatoes and cut into chunks about the size of grapes. When the water boils, add potatoes and simmer over medium-high until cooked through. This will take 20-25 minutes.
  • While potatoes cook, heat a large cast iron skillet on medium high. Add the hamburger, turn down to medium and stir occasionally until beef is browned.
  • Preheat the oven to 350 F.
  • Add the can of chili beans (include all sauce in can) to the beef. Drain the other can of beans and rinse with water. Add to the beef.
  • When the potatoes are fork tender drain them well. Add potatoes and pepper to the beef mixture. Stir gently to combine. Spread to make an even layer in the skillet.
  • Top with cheese and bake in preheated oven until casserole is hot through and cheese is melted and bubbly, about 15 minutes.
  • Check to make sure the center is hot. If you are using a thermometer, it should read 160F.

Nonstick cooking spray, for greasing the baking dish
6 large russet potatoes
Pinch salt
8 ounces sliced bacon
1 cup milk
1/2 cup mayonnaise
1/2 cup sour cream
1/4 cup (1/2 stick) unsalted butter
Pinch garlic salt
Pinch freshly ground black pepper
2 cups grated Cheddar

Steps:

  • Preheat the oven to 400 degrees F. Grease a 2-quart baking dish with cooking spray.
  • Peel the potatoes and cut them into 1-inch cubes. Place the potatoes and salt in a pressure cooker with water to cover and bring to a boil. Reduce the heat and simmer the potatoes until very tender, about 5 minutes. (If you do not have a pressure cooker, boil the potatoes in a pot of water with a pinch of salt until tender, about 20 minutes.)
  • While the potatoes boil, cook the bacon in a medium skillet over medium heat until browned and cooked through, 8 to 10 minutes. Drain the bacon on paper towels and, when cool enough to handle, crumble it into small pieces. Set aside.
  • Add the milk, mayonnaise, sour cream, butter, garlic salt, pepper and 1 cup of the cheese to a stand mixer with a paddle attachment. Whip the mixture until thoroughly combined. Drain the potatoes and add to the mixer. Mix again to combine and the potatoes are whipped smooth.
  • Spoon the mixture into the prepared baking dish. Sprinkle the crumbled bacon and remaining 1 cup cheese over the top and bake until the cheese is melted and the casserole is heated through, about 20 minutes.

1/2 head cabbage, shredded
1/2 onion, finely chopped
4 slices bacon, chopped
4 medium potatoes, peeled and sliced
salt, to taste
pepper, to taste
1 (10 1/2 ounce) can cream of chicken soup
1 cup half-and-half cream

Steps:

  • Put the cabbage in a medium pot and cover with water.
  • Salt and pepper to taste.
  • Cook for approximately 10 to 15 minutes once boiling. Drain.
  • Spray a 3 quart casserole dish with non stick cooking spray.
  • Layer 1/2 the cabbage, the onion, and sprinkle with half the bacon.
  • Add salt and pepper to taste.
  • Arrange half of the the potatoes on top of mixture.
  • Repeat layers, ending with potatoes on top.
  • Salt and pepper to taste.
  • Mix cream of chicken soup and half and half together; pour over the casserole.
  • Bake, covered, at 375 degrees Fahrenheit for 45 minutes to an hour.

6 -8 large potatoes (russet)
1/2 lb bacon
8 hard-boiled eggs

Steps:

  • Preheat the oven to 350°F Peel and slice the potatoes about 1/2 inch thick, then cook in salted water just until tender (do not overcook). Drain and run under cold water to stop the cooking.
  • Cut half a pound of your favorite bacon cut into 2 inch pieces setting aside about 3 uncooked slices for top. In a frying pan, cook the balance of the bacon pieces until it just starts to crisp.
  • Slice the boiled eggs width wise about 1/4 inch thick.
  • Using a deep casserole dish, layer 1/3 of the potatoes, 1/3 of the egg slices, and 1/2 of the cooked bacon. Repeat the layer. For the final layer, add the remaining potatoes, eggs and the raw pieces of bacon on top. I like to pour the bacon fat remaining in the frying pan over the whole dish.
  • Bake uncovered in the oven for approximately 35 minutes, or until the bacon on the top is crisp. Enjoy.

This wonderful casserole is the best 'breakfast casserole' I have ever eaten. It could easily be served at any time of day. I first ate it at a Wedding Shower and could hardly wait for the bride's mother to get the recipe for me from the Aunt who lived in another state. I am posting the recipe exactly as I received it...however I would personally increase the salt to 1 teaspoon instead of the 1/4th teaspoon since I remember adding salt when I ate it before.

3 cups frozen hash browns
3/4 cup shredded monterey jack pepper cheese
1 cup cubed cooked ham
1/4 cup green onion, well chopped
4 well beaten eggs
1 (12 ounce) can evaporated milk
1/4 teaspoon black pepper
1/2 teaspoon salt

Steps:

  • Grease 2 quart rectangular baking dish.
  • Arrange potatoes evenly on bottom of baking dish.
  • Sprinkle with cheese, ham, onions.
  • Combine milk and eggs and seasonings.

It is called Poor Man's Casserole because almost everyone should have the ingredients in their kitchen! This is a very versatile dish because you can add as little or as much of the ingredients to suit your family.

1 small onion, chopped
1 garlic clove
salt and pepper, to taste
1 (8 ounce) can tomato sauce
1 1/2 cups cooked rice
1 (4 ounce) can corn
1 1/2 cups cheddar cheese

Steps:

  • Brown the hamburger meat with the onion, garlic, salt and pepper.
  • Drain the fat.
  • Then add the rice, corn, and tomato sauce and mix together.
  • Top with the cheese.
  • If you have a cast-iron pan put the casserole in the oven for about 5 minutes to melt the cheese. If you do not have a cast-iron pan, just cover the casserole until the cheese melts.
