BOURBON CHERRY SODAS

- In a medium-sized saucepan over medium heat, bring cherries (and any juices), water, and sugar to a simmer. Cook for about 30 minutes, until the syrup mixture has thickened slightly and the cherries are wrinkly. Remove from heat, strain mixture through a sieve and discard the solids. Cover and transfer syrup to the fridge until chilled.
- This really depends on the size of the glasses you're going to use, but here's what I did in mine: add 1/4 cup of the syrup to each glass. Then add two tablespoons of bourbon, 3/4 cup Club Soda, and 1-2 tablespoons of cream. (As long as you keep a 1:3 ratio of syrup and club soda, you should be good to go.) Top each glass with whipped cream and a cherry. Enjoy!

- Pour off or drink 5 oz. from cherry soda so that 7 oz. remain in can. Combine bourbon, Campari, and lemon juice in a measuring glass or cocktail shaker. Fill with ice and stir or shake well to combine, about 20 seconds. Strain into can.

BLACK CHERRY BOURBON SODA
Black cherries are used to infuse bourbon for the ultimate cherry soda. Cherry Bourbon can be stored in the refrigerator for up to 1 month.

- Add the bourbon and brown sugar to a small saucepan over medium heat, stirring occasionally, until hot. Stir until the sugar is dissolved. Remove from heat and cool slightly.
- Pack cherries into a small jar and pour the hot liquid over; press gently on the cherries to make sure they are submerged. Cover and refrigerate for at least 1 week or up to 1 month.
- To prepare sodas: Fill four 12-ounce rocks glasses with ice, add 1 1/2 ounces (3 tablespoons) cherry-infused bourbon to each glass and top with about 4 ounces soda water each. Garnish with 2 or 3 whole Bourbon Cherries. Serve immediately.

- Combine cherries and simple syrup in the bottom of a rocks glass (I also like to use a half-pint jar depending on my mood). Muddle (i.e. smash and crush) the cherries with the syrup until pulpy. Add the bourbon and lime juice and stir. Add one or two ice cubes, and top with club soda.
- Combine the water and the sugar in a medium saucepan over high heat and bring to a boil, stirring to dissolve the sugar. Reduce the heat to a simmer and add the mint leaves. Let the mixture reduce and infuse for about 10 minutes over low heat. The syrup should thicken slightly (don’t let it turn golden). Remove from heat and let the mixture cool to room temperature. Using a metal sieve or slotted spoon, strain the spent mint leaves from the simple syrup and discard. Store the mint-infused syrup in an airtight bottle or jar in the fridge until used. Unused syrup will last four to six weeks in the fridge.
