1/4 cup bourbon or unsweetened apple juice
2 tablespoons brown sugar
2 tablespoons Dijon mustard
3 garlic cloves, minced
1 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon pepper
4 bone-in pork loin chops (1/2 inch thick and 8 ounces each)

Steps:

  • In a small saucepan, mix bourbon, brown sugar, mustard and garlic; bring to a boil. Reduce heat; simmer, uncovered, 2-3 minutes or until slightly thickened., Mix onion powder, salt and pepper; sprinkle over pork chops. Grill, covered, over medium heat or broil 4 in. from heat 3-5 minutes on each side or until a thermometer reads 145°. Let stand 5 minutes before serving. Serve with sauce.

Steps:

  • In a shallow dish or large zip-lock heavy-duty freezer bag, stir together the first 6 ingredients; add in pork chops.
  • Cover dish or seal bag and chill 30 minutes, turning once.
  • Remove pork from marinade, reserving marinade.
  • Grill pork over med-high heat, covered w/ grill lid for 10-12 minutes (or until done), turning once.
  • Transfer reserved marinade to a saucepan; bring to a boil; cook, stirring occasionally, for 2 minutes.
  • Pour sauce over chop and serve.

4 double-cut pork chops, approximately 2 inches thick (about 12 to 14 ounces)
Light olive oil, for brushing
8 cups water, for boiling
Peach bourbon BBQ sauce, recipe follows
8 cups water
2 tablespoons apple cider vinegar
1/2 cups kosher salt
1 cup brown sugar
3 bay leaves
1 tablespoon whole black peppercorns
6 cloves fresh garlic, cut in 1/2
2 tablespoons unsalted butter
3/4 cup minced shallots
2 (16-ounce) bags frozen peaches
2 tablespoons fresh lemon juice
2 tablespoons apple cider vinegar
1/3 cup light brown sugar
1 tablespoon Worcestershire sauce
1/2 cup chicken stock
1/3 cup bourbon whiskey
Kosher salt and freshly ground black pepper

Steps:

  • Once the brine has cooled completely, add the chops and allow to soak for at least 6 but no more than 12 hours. Remove chops from brine just before smoking.
  • Smoke pork until internal temperature reaches 140 degrees F, or about 1 to 2 hours
  • Keep grill temperature at approximately 200 to 250 degrees F or pork will overcook. Smoke chops until internal temperature reaches 140 degrees F. After desired internal temperature is reached, brush chops lightly with oil and grill over hot coals for 1 1/2 minutes; rotate 1/4 turn clockwise and grill 1 minute more to create attractive grill marks. Flip chop and repeat grilling method; the prettier side is the top.
  • Chops should ultimately reach an internal temperature of 150 to 160 degrees F. If necessary, place chops in 375 degree F oven after grilling to finish cooking. For an extra fancy presentation, pull the pork off the bone, slice into 1/4-inch strips and fan out on the plate.
  • Brush grilled chops with melted butter and let rest 2 minutes before serving. Place each chop on the plate on a serving plate. Serve with peach bourbon bbq sauce.
  • Serving suggestion: Try adding a starch as an accompaniment: mashed potatoes, stewed white beans, or even steamed brown rice.
  • In a nonreactive, stainless steel 8-quart saucepan, bring all brine ingredients to a boil and stir until sugar and salt are completely dissolved. Transfer to a 1-gallon plastic or stainless steel container and refrigerate until completely cooled.
  • In a medium saucepan melt butter over medium-high heat. Add shallots and sweat for several minutes until soft. Add peaches, bring to simmer and cook for 5 minutes. Add lemon juice, cider vinegar, brown sugar, Worcestershire sauce, and chicken stock. Simmer for 15 to 20 minutes until thick. Add whiskey, return to simmer, cook for 5 more minutes and remove from the heat. Adjust seasoning and sweetness. Puree mixture with immersion blender or food processor until smooth and thick.

Steps:

  • Prepare a medium-hot grill.
  • In a bowl, mix together the mustard, brown sugar, and bourbon. Rub the pork chops with the garlic and house seasoning, then brush with half the glaze.
  • Place the chops on the grill. Grill until the chops are slightly charred and cooked, about 20 minutes. Brush with the remaining glaze before serving.

1/2 cup good bourbon
1/4 cup olive oil
1/2 cup brown sugar, (packed)
1 teaspoon garlic powder
1 Tablespoon soy sauce
1 teaspoon kosher salt
1/4 teaspoon black pepper
4 pork chops, (around an inch thick, bone in or boneless works)

Steps:

  • In a small bowl, whisk together Bourbon, oil, brown sugar, garlic powder, soy sauce, salt and pepper until well combined.
  • Place pork chops in a plastic zipper bag (or a bowl) and pour the marinade in.
  • Seal and move the chops around a bit to make sure they're fully covered.
  • Refrigerate for around 2-4 hours (It won't hurt them to go longer but 2-4 hours is the ideal amount of time).
  • Remove from the refrigerator 15-20 minutes prior to grilling.
  • Spray the grill with olive oil cooking spray and preheat the grill to medium high heat.
  • Place meat on the grill and discard leftover marinade.
  • Cook for 5-6 minutes per side, turning once (this time will vary based on your grill and the thickness of the meat so keep an eye on it).
  • Remove the meat to a clean plate and tent with foil. Rest for 10 minutes. Serve immediately.

3/4 cup low sodium soy sauce (use only low sodium)
1/2 cup Bourbon
1/4 cup Worcestershire sauce
1/4 cup water
1/4 cup vegetable oil
2 tablespoons fresh minced garlic
3 tablespoons brown sugar
2 tablespoons black pepper
1 teaspoon fresh minced gingerroot (or use 1/2 teaspoon dry ginger powder)

Steps:

  • In a bowl whisk together the marinade ingredients; place in a large zip-loc plastic bag.
  • Add in the pork chops or 2 pork tenderloins; seal the bag.
  • Turn to coat with the marinade.
  • Refrigerate for a minimum of 12 hours.
  • Set grill to high heat (about 400°F).
  • Remove the pork and discard the marinade.
  • Place on grill.
  • For pork chops cook for about 15 minutes on each side, depending on how thick your chops are.
  • For pork tenderloins, cook for about 25 minutes turning occasionally or until the pork is cooked; tent with foil and let sit for about 10 minutes before slicing.

1 quart warm water
3 Tbsp kosher salt
2 sprigs fresh rosemary ((optional))
1 1/2 Tbsp vegetable oil
4 boneless pork chops ((thick cut, around 1 1/2 inches thick))
1/2 tsp kosher salt
1/2 tsp black pepper
1/2 tsp smoked paprika
1/2 tsp dried thyme
1/3 cup bourbon
3 Tbsp soy sauce (reduced sodium)
3 - 4 Tbsp light brown sugar (packed)
2 Tbsp apple cider vinegar
4 cloves garlic (minced or grated)
1 tsp fresh ginger (grated)
pinch of cayenne pepper
1/2 Tbsp cornstarch
1 Tbsp water

Steps:

  • Combine all brine ingredients in a large resealable plastic bag (I used a gallon size), or large airtight container. Whisk until combined well. Add pork chops to brine, seal bag or container and refrigerate for at least 15 minutes, or up to 8 hours.
  • When using a bag, I like to place the bag inside a baking dish, so in case the bag leaks, you won't have a giant mess in your refrigerator, it'll be contained in the dish.
  • Add all bourbon glaze ingredients to a small saucepan and bring to a boil over MED heat, stirring occasionally. Once boiling, reduce heat to LOW and simmer for around 10 minutes, stirring occasionally.
  • Mix slurry ingredients (cornstarch and water) in a small bowl, then add to bourbon glaze and cook another 1-2 minutes, until thickened.
  • Preheat oven to 375 F degrees. Remove pork from brine, rinse with cold water, and pat very dry. Discard brine.
  • Season with 1/2 tsp EACH salt, pepper, smoked paprika and dried thyme.
  • Add vegetable oil to large oven-safe skillet and heat over MED-HIGH heat. Once pan is hot, add seasoned pork chops and cook, without flipping or moving, for 2-3 minutes.
  • Using tongs, flip pork chops over, and transfer skillet to the preheated oven.
  • Bake 5 minutes, then flip pork chops back over, return to the oven and bake another 4 minutes, until pork is cooked to 145 F degrees (internal temperature).
  • Remove pork chops to a plate, and cover loosely with foil. Leave to rest for 5 minutes.
  • Brush or spoon a bit of sauce over the top of each pork chops, then serve with remaining sauce on the side.

4 8-to-10-ounce bone-in pork loin chops, trimmed of excess fat
1/2 cup bourbon or apple cider
1/4 cup apple cider vinegar
2 teaspoons Worcestershire sauce
3 cloves garlic, minced
1 tablespoon minced peeled ginger
1 medium onion, cut into 1/2-inch-thick rounds
2 medium beefsteak tomatoes, halved crosswise

Steps:

  • Prepare a grill for indirect heat: For gas, preheat to medium high, then turn off the burners on one side and turn the other burners to medium low. For charcoal, once the coals ash over, push them to one side.
  • Whisk 1/4 cup salt, 1/4 cup brown sugar and 3 cups warm water in a large bowl. Add the pork and soak 10 minutes. Meanwhile, mix the bourbon, vinegar, Worcestershire sauce, the remaining 1/4 cup brown sugar, the garlic and ginger in an ovenproof saucepan. Put on the grill over direct heat; bring to a boil, then remove from the grill.
  • Grill the onion and tomatoes over direct heat until charred, about 3 minutes per side for the tomato and 4 to 5 minutes per side for the onion. Add to the saucepan, then return the pan to the grill and cook until the sauce is thickened, about 15 more minutes.
  • Remove the chops from the brine; pat dry. Brush with the vegetable oil and grill over direct heat, 2 to 3 minutes per side. Transfer to the cooler side of the grill and cook 3 to 4 more minutes per side, brushing with the sauce. Serve with the remaining sauce and vegetables.

BOURBON-AND-VANILLA-BRINED PORK CHOPS

  • In a large mixing bowl, combine 2 cups warm water with the brine ingredients; stir until dissolved. Add 1 cup ice to the bowl and stir to quickly cool the brine to at least 45°F.
  • Put the chops in a 9×9-inch (or similar size) baking dish and pour the brine over the chops. They should be submerged. Cover with plastic wrap and put on a tray (in case of spills); refrigerate for 3 to 4 hours (3 hours for thinner chops, 4 hours for thicker ones). Remove the chops from the brine (discard the brine), and pat them dry.
  • Combine all of the spice rub ingredients in a small bowl or jar.
  • Prepare a gas or charcoal grill fire for indirect cooking over medium-high heat (400°F to 450°F).
  • Sprinkle 2 to 3 Tbs. total of the spice rub generously over all sides of the chops. Grill the chops over direct heat, flipping once, until dark brown grill marks form on both sides, about 2 minutes per side (move them to indirect heat if any flare-ups occur). Once the chops are well marked, move them to the cooler side of the grill, cover, and cook until their internal temperature registers 140°F to 145°F on an instant-read thermometer, 4 to 6 minutes more per side. Transfer the chops to a serving platter, tent loosely with foil, and let rest for 5 minutes before serving.

  • Prepare glaze first. Add all ingredients to a medium saucepan and simmer over medium high for 1 minute, stirring often. Reduce heat to low and simmer for 3 more minutes. Remove from heat and reserve 1/3 of the mixture for glazed apples. The remaining baste will be used on the pork chops.
  • Thread apples onto skewers: about 5 pieces per skewer. Brush lightly with oil on both sides. You can chop apples ahead of time and place them into a bowl with cold water and lemon juice to keep them from turning brown.
  • Combine rub ingredients and season both sides of pork chops. Place onto the grill and cook for 5-7 minutes, turn and baste cooked side with apple butter sauce. Cook for another 5 minutes, turn and baste again. Repeat process a few times until chops have reached an internal temperature between 155-160 degrees F. Watch for flare-ups and adjust temperature accordingly. Move chops to cooler part of grill and finish them up over indirect heat if needed.
