BERRY CRISP
This is the best dessert for summer BBQs when berries are in season, or anytime of year if you use frozen berries!

Steps:
- Preheat oven to 350°F. Coat a 9×13 baking dish with nonstick spray, set aside.
- In a large bowl mix together the oats, flour, sugar, and salt. Mix in the butter with your hands or a pastry cutter until mixture form crumbs when squeezed together.
- Place berries in another large bowl. Stir in the sugar, juice, and vanilla into the berries. Sprinkle the flour on top of the berries and toss to coat.
- Place the berry mixture into the prepared pan, and sprinkle with the oat mixture evenly.
- Bake for 45 minutes, until the top is golden and the berries are bubbly.

- Mix berries, flour and sugar.
- Scoop into 6 individual baking dishes, I used coffee cups. Then place on a big baking dish.
- Sprinkle with granola.
- Bake at 350 degrees for 45 minute.
- Serve warm or room temperature by itself or top with frozen or fresh yogurt!

SASSY'S SUMMER BERRY CRISP
This is a wonderful Summer Dessert. You can use whatever berries you can get your hands on. The combination of the apples and cherries are just awsome! In the summer I serve it with ice cream, as that is a big hit with the kids; both big and small! Don't be scared to mix and match whatever kind of fruit you need to use up. If you don't try, you will never know!!

Steps:
- Heat oven to 375 degrees F.
- Grease a large baking dish (2 quart).
- In large bowl combine apples,cherries,strawberries sugar, 2 TBS of the flour and cinnamon.
- Spoon into prepared baking dish.
- In a small bowl, combine rolled oats, brown sugar and 2/3 Cup of Flour.
- Cut in Butter or Margarine with pastry blender of fork until consistency of coarse meal.
- Sprinkle crumb mixture evenly oveer fruit.
- Bake at 375 degrees F for 30 to 40 minutes until golden brown and apples are tender.
- Serve with Whipped Cream or Ice Cream.

My husband is completely addicted to pies. Unfortunately, it's a little hard to have a whole pie hanging around the house with only two people to eat it. Here's a lighter alternative to a traditional fruit pie. Berries are the best choice for low-carb diets. On top of being low in sugar, they are rich in vitamins and antioxidants.

Steps:
- Preheat oven to 375 degrees.
- Toss the berries with the cornstarch to evenly coat. Put the berry mixture in a large greased ramekin or a small greased baking dish (I used a 16 oz. ramekin).
- In a small bowl, combine the butter, oats, brown sugar, flour, cinnamon and nutmeg. Mix lightly with a fork until the mixture is crumbly.
- Top the berries with the crisp mixture. Sprinkle the top of the crisp with water.
- Bake for 25 minutes or until the fruit is bubbling and the topping is slightly browned.
- Serve with ice cream, frozen yogurt or whipped cream.

- Slice the apples and place in greased 2.
- 5 quart baking dish.
- Add strawberries quartered add rhubarb cut in 1 inch length,s.
- Mix together sugar, flour and cinnamon and stir gently through fruit.
- Mix together topping of oats, flour, brown sugar, cinnamon and nutmeg and sprinkle over fruit mixture.
- Melt butter and pour over all.
- Bake at 350 for 1 hour.

- Beat honey and oil until blended.
- Stir in oats, flour, and nuts until blended; set aside.
- Combine cornstarch and ¼ cup apple juice concentrate in small bowl.
- Combine lemon juice and remaining apple juice concentrate in saucepan, gradually whisk in cornstarch mixture, and bring to a boil.
- Cook and stir juice mixture for 1-2 minutes or until thickened.
