Borscht is a beet-based soup that I grew up eating throughout the year, but especially on Ukrainian Christmas Eve. This Homemade Borscht Recipe is the easiest and quickest ever - ready in under 15 minutes! 4 cups low or no-sodium vegetable or chicken broth
2 Tbsp. neutral oil (like vegetable or grape seed)
1 medium potato
1 cup carrot matchsticks
1 small onion
½ tsp. salt
¼ tsp. coarse black pepper
1 cup frozen green peas
1 cup frozen cut green beans
2 big handfuls of fresh dill
2 (15 oz.) cans "original cut" beets
2 tsp. white vinegar
6 Tbsp. whipping cream or sour cream to serve

Steps:

  • Measure the broth into a large microwave-safe bowl and microwave it for 5 minutes.
  • Meanwhile, heat the oil in a large pot or Dutch oven over medium heat.
  • Chop the potato into a small (¼ inch) dice. Add it to the pot. Increase the heat to medium-high. Stir and then cover the pot.
  • Roughly chop the carrot matchsticks. Add them to the pot. Stir and cover.
  • Chop the onion. Add it to the pot. Stir and cover.
  • When the broth is done heating, add it to the pot along with the salt and pepper.
  • Increase heat to high, cover and let it come to a simmer. Reduce heat to a moderate simmer.
  • While the broth is simmering in the pot, put the frozen peas and beans in the microwave-safe bowl and heat until defrosted and warm, about 2 minutes.
  • While the peas and beans heat, chop the dill. Add half of it to the pot of soup. Put the rest aside for now.
  • Put a colander over a bowl and pour in the cans of beets. You need the liquid so do not discard it.
  • Put the drained beets into a food processor and process until they're in small pieces.
  • When the potatoes in the pot are tender add the vinegar, the beets, and the beet liquid and the heated peas and beans. Heat on high until simmering.
  • Stir in the remaining dill. Taste and add more vinegar and black pepper as needed.
  • Serve with either whipping cream or sour cream on the side for people to add to their bowls of soup.

CHERRY-LEMON CREAM JELL-O MOLD

This jiggly, layered mold holds a base of clear crimson (sweet cherry) and a topping of ivory white (tangy lemon mixed with sour cream). If you have extra time, you could make it into four layers, producing red and ivory stripes. Garnished with shiny green leaves like bay or holly, it looks especially festive, and is also quite delicious. Swapping out some of the water in the Jell-O formula for ingredients like sour cream and cherry juice gives this dessert its bright taste.

1 large (6-ounce) package lemon Jell-O
4 cups boiling water
1 (16-ounce) container sour cream
Neutral cooking spray
2 large (6-ounce) packages black cherry Jell-O, or use plain cherry or cranberry Jell-O
1 quart sweet or tart cherry juice, or use cranberry juice (opt for less cloudy varieties)
Fresh holly sprigs, bay leaves or edible flowers, for garnish

Steps:

  • Pour lemon mix into a medium bowl and add 2 cups boiling water. Stir until dissolved, then let cool until warm but not steaming hot, about 10 minutes. Gradually whisk in sour cream until smooth.
  • Spray a 10- or 12-cup mold or Bundt pan, preferably nonstick, very lightly with neutral cooking spray. Blot any extra oil with paper towels. Pour in lemon-sour cream mixture and refrigerate until set, about 1 hour.
  • About 15 minutes before lemon-sour cream mixture has set, pour cherry mix into a large bowl and add 2 cups boiling water. Stir until dissolved, then stir in cherry or cranberry juice. Make sure mixture has cooled to lukewarm at most before proceeding.
  • When lemon-sour cream mixture is set, gently ladle the cherry mixture over it. Don't pour it on top, as the mixture breaks easily. Refrigerate again until completely set, at least 3 hours or overnight. (If you want to create multiple thinner layers of Jell-O, as seen in the picture here, instead of just one layer of each flavor, see Note.)
  • When ready to unmold, run the tip of a sharp knife around the edge of the pan to break the seal. Dip the bottom half of the mold in warm (not hot) water for 15 seconds. Place a serving plate over the top and flip to unmold. (If the mold doesn't come out immediately, don't shake it; try the warm water treatment again, 15 seconds at a time, until it comes out. If you leave the mold in the water for a longer time, it may start to melt.)
  • Just before serving, garnish, then slice, using a sharp knife and wiping the blade between slices.

Make a warming bowl of borsch (also known as borscht or borshch) with this simple and comforting recipe. Serve this hearty soup with a dollop of soured cream and a chunk of crusty bread

1kg fatty beef shin, (left in large chunks)
1 onion, peeled and left whole
1 bay leaf
2.2kg potatoes, peeled and chopped
2 tbsp sunflower oil
1 onion, finely diced
1 carrot, roughly grated
200g beetroot, peeled and chopped into matchsticks
1 red pepper, chopped (optional)
½ x 400g can chopped tomatoes
6 prunes, pitted (we used French Agen prunes)
½ white cabbage, shredded
400g can red kidney beans, drained and rinsed
100ml soured cream or crème fraîche, to serve
½ bunch dill, chopped
crusty bread, to serve

Steps:

  • To make the stock, put the meat, whole onion, bay leaf and 2 litres of lightly salted cold water in a large saucepan. Cook over a very low heat for 1 hr 30 mins or until the beef shin is soft and falls apart easily - this can take up to 3 hrs. Skim off the scum with a spoon from time to time. Break up any larger pieces of beef into the broth, remove the whole onion and discard.
  • Add the potatoes to the borscht, season well with salt and pepper and cook for 10-15 mins until tender. Meanwhile, heat the sunflower oil in a large, deep frying pan. Add the diced onion and carrot, and cook over a medium heat, stirring, until the carrot is soft and is about to start caramelising.
  • Add the beetroot and cook for around 5 mins, stirring occasionally. Add the red pepper, if using, and cook for another 2 mins, then add the tomatoes and prunes, stir, then increase the heat and boil to reduce slightly, before adding everything to the borscht.
  • Add the shredded cabbage and the kidney beans, and cook for 7-10 mins or until tender. Serve with a dollop of sour cream or crème fraîche, lots of chopped dill and some crusty bread.

This uses prepared store bought borscht. I'm not a borscht fan but I have relatives who are! I took this from a 1963 ORT cookbook but haven't tried it yet.

1 (32 ounce) jar borscht
1 (3 ounce) box Jello gelatin, any red flavor
3 tablespoons sour cream

Steps:

  • Drain borscht through a strainer and reserve the solids and the liquids.
  • Heat 2 cups of the liquid and dissolve the jello in it.
  • Chill this for 2 hours until slightly thickened.
  • Beat in the sour cream and add the solids (shredded beets).
  • Put into a jello mold and chill until hardened and ready to serve.
