This is the part we like, almost better than the turkey itself! Homemade Turkey Soup! This is our recipe, and you can tweak it to suit your taste. We use old fashioned noodles in this or my Corn Dumplings posted on this site. Enjoy!

Number Of Ingredients 16

1 - leftover turkey carcass or leftover turkey meat (no skin)
5 - quarts of water, or 2 quarts of broth if using just turkey meat
1 - cup chopped onion
1 - cup chopped carrot
1 - cup chopped celery
1 - teaspoon minced garlic
3 - tablespoons dried parsley
1 - teaspoon poultry seasoning
1 - teaspoon marjoram
2 - teaspoons salt, or to taste
1/2 - teaspoon black pepper
1/2 - teaspoon red pepper flakes
2 - bay leaves
1 - cup frozen peas
2 - tablespoons white wine
1 - package grandma's frozen noodles, or 2 cups of wide egg noodles.

Steps:

  • MAKE THE SOUP STOCK FIRST: Add garlic, parsley, poultry seasoning, salt, pepper, red pepper, and bay leaves to the kettle with the turkey carcass. Slowly bring to a boil; skim foam. Reduce heat; cover and simmer for 2 hours. Leave broth in the kettle. Discard bay leaves. Remove carcass; set aside until cool enough to handle. Remove turkey from bones; discard bones. Cut turkey into bite-size pieces; set aside.
  • MAKE THE SOUP: Saute onion, carrot, celery in a large skillet until vegetables are tender, add the garlic. Add a splash of wine to the pan and transfer the veggies to the soup kettle into the stock. Bring the soup to a boil. Add the noodles and cook until almost tender, then add the reserved turkey and frozen peas. Simmer until noodles and peas are tender and serve.
  • COOK'S TIP: Grandma's noodles are our preference if they can be found. We get ours at Smith's or Walmart. Wide egg noodles are the second noodle choice. Corn dumplings may also be used instead of noodles. Enjoy!

HERB ROASTED TURKEY BREAST

Number Of Ingredients 10

One 3-pound boneless, skin-on turkey breast
4 tablespoons unsalted butter, at room temperature
1 tablespoon chopped fresh parsley
1 teaspoon lemon zest
1 teaspoon fresh thyme leaves, chopped
1/2 teaspoon onion powder
1 clove garlic, grated
Kosher salt and freshly ground black pepper
Extra-virgin olive oil, for drizzling
1 sweet onion, cut into 1/3-inch slices

Steps:

  • Preheat the oven to 350 degrees F.
  • Remove the turkey breast from the fridge 30 minutes before cooking to bring it to room temperature. Cut 3 pieces of kitchen twine and set aside.
  • Add the butter, parsley, lemon zest, thyme, onion powder, garlic, 1/4 teaspoon salt and 1/4 teaspoon pepper to a small bowl. Use a fork or a rubber spatula to incorporate all of the ingredients into the butter. Set aside.
  • Pat the turkey breast dry. Using clean hands, starting at one end of the breast, slide your fingers under the skin to create a pocket between the meat and the skin. Use your hands to transfer the butter into the pocket and smooth the butter into an even layer.
  • Use the kitchen twine to tie the turkey horizontally in 3 places. This will help the turkey breast cook evenly and remain juicy. Flip the turkey breast so that it is skin-side down. Drizzle it with 1 teaspoon olive oil and sprinkle with 1/2 teaspoon salt and 1/2 teaspoon pepper. Flip the turkey over and repeat the same seasoning process.
  • Arrange the onion slices on a small rimmed baking sheet. Pour 1/3 cup water into the baking sheet and place the turkey breast on top of the onions. Transfer to the oven and roast for 1 hour. Remove the turkey from the oven and baste it with the butter and juices from the baking sheet. Continue to roast until the internal temperature is 160 degrees F, another 20 to 25 minutes. Allow the turkey to cool for 15 minutes. (In this time the internal temperature will rise another 5 degrees.)
  • Slice the turkey and serve it with the roasted onions.

2 quarts vegetable stock
1 turkey carcass
1 (10-ounce) box frozen mixed vegetables
1/2 cup rice
2 cups cooked turkey, cubed
1 teaspoon Old Bay seasoning
2 teaspoons dried thyme
Salt and pepper, to taste

Steps:

  • Combine the vegetable stock and the turkey carcass in a large soup pot over low heat and bring to a simmer. Cover and simmer for 1 hour.
  • Add the remaining ingredients to the stock. Cover and simmer for an additional 20 minutes.
  • Remove the bones before serving.

ROASTED TURKEY STOCK

When you're making a turkey, making stock with the bones is the logical next step. This recipe, from the Los Angeles chef Suzanne Goin, has the usual aromatics - carrots, celery, onions - plus a concentrated shot of white wine and a dried chile, which add a welcome breath of freshness. (Sometimes poultry stock can taste flat.) Roasting the bones and the vegetables in the same pan streamlines the process and adds depth of flavor. You can use this stock in virtually any recipe that calls for chicken stock (except for chicken soup).

1 leftover carcass from a 10- to 15-pound roasted turkey, preferably including neck, wing and leg bones
4 or 5 onions, quartered (no need to peel; just rub off any papery skins)
2 large or 3 small carrots, peeled and cut into chunks
4 large or 5 small celery ribs, cut into chunks
2 cups white wine
2 large or 3 small garlic cloves, smashed and peeled
4 sprigs fresh thyme
2 bay leaves
1 teaspoon black peppercorns
1 whole arbol (or another small dried red) chile
Kosher salt

Steps:

  • Heat oven to 450 degrees. Using a sturdy knife or your hands, cut or tear turkey carcass into large pieces. Arrange in a single layer in a roasting pan and roast until brown and sizzling, 20 to 25 minutes.
  • Remove from oven and transfer pieces to a stockpot.
  • Add onions, carrots and celery to the empty roasting pan and place over medium heat. Sauté briefly, just to loosen the crusty turkey bits from bottom of pan.
  • Return pan to oven and cook until vegetables are browned around the edges, 20 to 25 minutes.
  • Remove pan from oven and place it over medium heat. Add white wine and cook, stirring, until wine is reduced to a syrup, about 3 minutes.
  • Add wine-vegetable mixture to stockpot. Add garlic, thyme, bay leaves, black peppercorns and chile. Add 6 quarts water and place over medium-high heat just until mixture comes to a boil.
  • Immediately reduce heat to low, skim any foam floating on top and simmer, skimming as needed, for 3 hours. Add 1 teaspoon salt and taste. If stock tastes watery, keep simmering until stock is flavorful. Taste for salt again and add more if needed.
  • Strain stock through a sieve into a large container or containers. Discard solids. Let stock cool slightly, then refrigerate. Skim off any fat from the top of the stock. Use within 4 days or freeze.

1 cup onion, diced
2 stalks celery, diced
1 ½ cups chopped roasted turkey
1 head roasted garlic, chopped
1 cup fire roasted tomatoes
1 1/2 cups frozen tiny green beans, chopped (birdseye)
2 teaspoons kosher salt
1/2 teaspoon black pepper
2 bay leaves
1 teaspoon dry leaf marjoram
1 teaspoon dry leaf basil
¼ teaspoon thyme
1/2 cup chopped flat leaf parsley
6 cups good chicken or turkey broth (more if needed)
½ cup organic spaghetti noodles broken into 2-inch pieces.
2 tablespoons olive oil for saute

Steps:

  • 1. Get your ingredients together before you begin.
  • 2. Saute celery and onion in large Dutch oven with 2 tablespoons olive oil until almost tender.
  • 3. Add the green beans, parsley, marjoram, thyme, basil, salt, pepper, and bay leaves. Stir and cook for 5 minutes.
  • 4. Add the chopped turkey, chicken or turkey broth, spaghetti noodles, and fire roasted tomatoes. Bring to a simmer and cook for about 10 minutes until the noodles are just tender.
  • 5. Tip: Other vegetables may be added, spinach, peas, cabbage, carrots or corn if you desire.
