Roasted rack of lamb is an elegant yet easy to prepare recipe. Tender lamb is served with a red wine mushroom sauce for a gourmet dinner made right at home.

2 pounds rack of lamb (frenched)
2 tablespoons olive oil
kosher salt (for seasoning)
black pepper (for seasoning)
1 tablespoon olive oil
4 cloves garlic (minced)
¼ cup minced yellow onion
8 ounces brown mushrooms (¼-inch thick slices)
1 cup Zinfandel red wine
½ cup unsalted chicken stock
1 tablespoon unsalted butter
1 teaspoon chopped thyme

Steps:

  • Adjust the oven rack to the center position and preheat to 350°F.
  • Remove any excess fat from the lamb, leaving a thin layer. Dry with paper towels. Season both sides generously with salt and pepper.
  • In a large 12-inch skillet heat oil over medium-high heat. Once the oil is hot add lamb fat-side down, cook until both sides are browned about 3 to 4 minutes per side. Sear the bottoms and sides for 30 to 60 seconds until browned, 8 to 10 minutes total for searing all sides.
  • Transfer skillet to the oven and roast lamb fat-side up, until the center of the meat reaches 120°F to 125°F for medium-rare about 10 to 20 minutes, and 130°F to 135°F for medium, about 20 to 30 minutes.
  • Allow meat to rest for 10 minutes before slicing. Meanwhile, make the red wine mushroom sauce.
  • In a medium skillet heat oil over medium heat. Add garlic and onions, saute for 30 seconds.
  • Add mushrooms to the pan, saute until softened, 6 minutes.
  • Add wine and chicken stock to the pan, turn heat to high. Simmer until liquid is reduced to ¾ cups.
  • Turn off heat, whisk in butter and thyme. Taste sauce and season with salt and pepper as desired.
  • Serve lamb with mushroom sauce and pair with Zinfandel red wine.

2 frenched racks of lamb (1-1/2 pounds each)
1 tablespoon steak seasoning
4-1/2 teaspoons olive oil
1 tablespoon Dijon mustard
1/3 cup panko bread crumbs
1 tablespoon minced fresh thyme or 1 teaspoon dried thyme
1 tablespoon minced fresh mint or 1 teaspoon dried mint
1 teaspoon Worcestershire sauce
1/2 teaspoon dried rosemary, crushed
MUSHROOM SAUCE:
3/4 pound sliced fresh mushrooms
2 tablespoons olive oil
1/4 cup butter, divided
4 garlic cloves, minced
1/2 cup dry red wine or beef broth
1/4 cup beef broth
1/2 teaspoon honey
2 tablespoons minced chives, optional

Steps:

  • Sprinkle lamb with steak seasoning. In a large skillet over medium-high heat, cook lamb in oil for 2 minutes on each side. Brush with mustard., In a small bowl, combine the panko, thyme, mint, Worcestershire sauce and rosemary; press onto lamb. Transfer to a greased 15x10-in. baking pan. Bake, uncovered, at 375° for 15-20 minutes or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°)., In a large skillet, saute mushrooms in oil and 2 tablespoons butter until tender. Add garlic; cook 1 minute longer. Stir in wine. Bring to a boil; cook until liquid is reduced by half. Remove from the heat. Stir in the broth, honey, remaining butter and chives if desired., Remove lamb from oven and loosely cover with foil. Let stand for 5 minutes before slicing. Serve with sauce.

This is a recipe that I have been working on/perfecting for some time. Inspired by the Rack of Lamb at Outback. I found a seasoning recipe online a few years ago that was similar to mine. The most laborious part is mixing the seasonings. The seasoning is incredible, great for any meat really. The Cabernet sauce is a variation the outback one and is great too. I served this recently with mashed red potatoes. Sometimes I'll do 1 teaspoon kosher salt and 1/2 teaspoon granulated salt, to make the saltiness more uniform.

1 1/2 teaspoons kosher salt
1 teaspoon black pepper
1 teaspoon paprika
1/2 teaspoon garlic powder

Steps:

  • Heat oven to 425.
  • Mix together seasoning ingredients in a bowl.
  • Heat Olive Oil in large skillet to medium.
  • If you like you can trim some fat from the racks. You also can slice them in half for smaller racks.(I usually do whole 8 bone racks) Sprinkle seasoning on each rack.
  • Sear each rack on all sides until browned(2-4 minutes tops) Put racks into roasting pan and bake for 15 minutes to 130 degrees (for medium).Or 20 mins for a light pink med well. When lamb is done take it out of the oven and cover pan with foil and let lamb sit for 10 minutes.
  • While lamb is cooking, make cabernet sauce by melting butter in the searing skillet ( Do NOT wash out skillet -- you want the cooked bits of lamb or "fond" in there for flavor ). When melted add flour and cook for a minute or so. Stir in other ingriedents starting with the Wine and Beef Broth, then simmer for a bit to reduce the liquid. You can add a bit of cornstarch if you want it thicker(My wife likes it to be more like gravy).
  • When everything is ready you can cut the racks into 2 bone chops or leave it whole depending on your presention. Serve with Cab sauce on the side. The Cab Sauce is also great on mashed pototoes. Enjoy!

2 (8 bone) racks of lamb, fully trimmed
salt and ground black pepper to taste
1 tablespoon vegetable oil
2 teaspoons Dijon mustard
1 teaspoon minced fresh rosemary
⅛ teaspoon ground cinnamon
⅛ teaspoon ground cumin
⅓ cup sliced shallot
1 pinch salt
1 cup fresh blueberries
1 cup dry red wine
1 pinch ground black pepper
1 tablespoon balsamic vinegar
1 tablespoon butter, or more as needed

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Season lamb generously with salt and black pepper. Heat oil over medium-high heat in an oven-proof skillet. Sear lamb on all sides until well browned, 3 to 5 minutes per side. Turn off heat. Remove lamb to a platter.
  • Mix together Dijon mustard, rosemary, cinnamon, and cumin in a small bowl. Spread a thin layer of the mustard mixture on each rack of lamb.
  • Place chopped shallots and pinch of salt into the same skillet. Cook and stir over medium-heat until shallots begin to lose moisture and become browned and soft, about 5 minutes. Add blueberries and continue cooking for about 2 minutes. Stir in red wine, turn off heat, and stir mixture to deglaze the pan.
  • Place the racks of lamb into the skillet and interlace the rib bones together to push the lamb racks close together, leaving a lamb bone "zipper" in the center. Place the lamb racks into the center of the skillet. Season with a pinch of black pepper.
  • Place skillet in pre-heated oven and roast lamb until internal temperature reaches 125 degrees F (52 degrees C) for medium-rare, about 20 minutes.
  • Remove lamb to a cutting board to rest about 5 minutes.
  • Drizzle balsamic vinegar into the blueberry sauce; add a pinch of salt. Turn heat to medium-high and bring to a simmer to reduce sauce by half, about 4 minutes. Turn off heat and stir in butter. When butter is melted, check seasonings and add more salt if needed.
  • Slice racks into pieces of 2 ribs each. Serve topped with a spoonful of the blueberry sauce.

2 garlic cloves
2 teaspoons chopped thyme
1 teaspoon chopped rosemary
3 tablespoons olive oil, divided
2 medium tomatoes, halved
1 (1-pound) frenched rack of lamb (4 to 8 chops, depending on size), cut in half
2 medium shallots, thinly sliced (1/3 cup)
2 medium boiling potatoes, peeled and sliced crosswise 1/4 inch thick
2 tablespoons water

Steps:

  • Preheat oven to 400°F with rack in middle.
  • Mince and mash garlic to a paste with 1/2 teaspoon salt and 1/2 teaspoon pepper. Stir together with herbs and 1 tablespoon oil.
  • Put tomatoes cut sides up in an oiled small baking dish and drizzle with a third of garlic mixture. Roast until tender, 30 to 40 minutes.
  • Meanwhile, pat lamb dry and season with 1/4 teaspoon salt and 1/4 teaspoon pepper.
  • Heat 1 tablespoon oil in a 10-inch ovenproof skillet over medium-high heat until it shimmers. Brown lamb on all sides, 4 to 6 minutes total. Transfer lamb to a cutting board and discard oil from skillet.
  • Heat remaining tablespoon oil in skillet over medium heat and cook shallots and potatoes, stirring occasionally, until edges are browned, 3 to 5 minutes. Stir in water and half of remaining garlic mixture and remove from heat.
  • Rub remaining garlic mixture on fat side of lamb racks. Arrange lamb over potatoes and roast in oven until an instant-read thermometer inserted into center of meat (do not touch bone) registers 130°F for medium-rare, 20 to 25 minutes.
  • Let stand, loosely covered, 5 to 10 minutes. Serve with tomatoes.

2 racks of lamb, about 2 1/2 pounds each, boned
2 large cloves garlic, peeled and thinly sliced
3 tablespoons olive oil
Salt to taste if desired
Freshly ground pepper to taste
1 small carrot, trimmed and scraped and cut into inch lengths
1 small onion, peeled and cut into eighths
2 sprigs fresh thyme or 1/2 teaspoon dried
1 shallot, peeled and cut in half
2 tablespoons pureed shallots and onions (see recipe)
1/3 cup dry white wine
1/3 cup water
1 tablespoon butter
3 large tomatoes, about 1/2 pound each or slightly larger, for garnish
6 sprigs watercress
Woodland sauce (see recipe)
Zucchini cake mousse (see recipe)

Steps:

  • Preheat oven to 500 degrees.
  • Open up boned racks, fat side down. Arrange slices of garlic along base of the main meat portion. Roll flap around the main meat portion to enclose garlic neatly. Tie each rolled-up rack with string in several places.
  • Heat heavy oval baking dish large enough to hold tied racks plus chopped bones. Add oil and rolled racks. Scatter bones all around. Brown meat on all sides over high heat. Transfer dish to oven and bake 12 minutes.
  • Scatter carrot, onion, thyme and shallot around lamb and continue cooking 5 minutes. Remove racks and cover with foil to keep warm.
  • Carefully pour fat from pan. Place pan atop stove. Add pureed shallots and onions and cook briefly, stirring. Add wine and water and bring to boil over high heat, stirring occasionally. Cook 5 minutes. Strain sauce into saucepan and bring to boil. Swirl in butter.
  • Meanwhile, prepare tomatoes for garnish. Drop tomatoes into boiling water and let stand 12 seconds. Drain and peel. Cut each tomato into 6 wedges of equal size. Cut away pulp and seeds of each wedge, leaving only outer shell. Warm these shells briefly without cooking in microwave or regular oven.
  • To serve, cut meat into inch thick slices.
  • Spoon equal portions of woodland sauce onto each of 6 warmed plates. Unmold zucchini cake in center of sauce. Surround zucchini cake with slices of lamb. Spoon hot pan sauce over lamb. Garnish each serving with 3 warmed tomato wedges and 2 sprigs of watercress.

Steps:

  • Preheat oven to 450 degrees F.
  • Mix garlic, herbs, salt, pepper and bread crumbs together in a small bowl. Rub mixture into rack of lamb. Cover bones with foil and roast lamb in the oven for 15 to 20 minutes for medium rare meat, or longer if desired. Let meat rest for 10 minutes before carving. Serve with Rosemary sauce.
  • Bring vegetable stock to a boil over medium high heat. Add rosemary. Reduce heat and simmer reducing liquid to 1/4 cup. Add demi-glace and simmer for 2 minutes. Dissolve the cornstarch in the port. Add to the simmering sauce, stirring until thickened. Serve under and on the side of lamb.

3 scallions, thinly sliced

  • Marinate for 6 hours turning a couple of times.
  • Meanwhile make cream sauce.
  • In a food processor or blender mix all sauce ingredients till blended and chill till ready to use. I've also used cream cheese in place of the ricotta.
  • Grill about 6 minutes each side brushing with the left over marinate.
  • Serve with sauce.

two 1/2-inch-thick lamb shoulder chops (about 1 pound total), patted dry
2 large garlic cloves, minced
1/2 small onion, chopped fine (about 1/4 cup)
1/4 pound mushrooms, sliced
1 tablespoon soy sauce
1 tablespoon red-wine vinegar
1/2 cup dry red wine
1/4 teaspoon dried thyme, crumbled
1 teaspoon cornstarch dissolved in 1/2 cup water
1 tablespoon minced fresh parsley leaves

Steps:

  • In a skillet heat the oil over moderately high heat until it is hot but not smoking and in it sauté the chops, seasoned with salt and pepper, flattening them occasionally with a metal spatula, for 4 minutes on each side for medium meat. Transfer the chops with a slotted spatula to a small platter and keep them warm, covered loosely with foil.
  • Pour off all but 1 tablespoon of the fat and in the remaining fat cook the garlic over moderate heat, stirring, until it is pale golden. Add the onion and cook the mixture, stirring, for 1 minute. Add the mushrooms and the soy sauce and cook the mixture over moderately high heat, stirring, until the liquid the mushrooms give off is evaporated. Add the vinegar and boil the mixture until the liquid is evaporated. Add the wine and the thyme and boil the mixture until almost all the liquid is evaporated. Stir the cornstarch mixture, add it to the skillet, and bring the sauce to a boil, stirring. Season the sauce with salt and pepper, spoon it over the chops, and sprinkle the chops with the parsley.
