SOUTHWESTERN BAKED CHICKEN

This Southwestern Baked Chicken is a delicious and wholesome dinner recipe. It is easy to make-ahead so that dinner is ready to pop in the oven at the end of a busy day.

1 teaspoon onion powder
1 teaspoon chili powder
1 teaspoon smoked paprika
1 teaspoon sea salt
2 pounds boneless skinless chicken breast
1/2 tablespoon olive oil
3 ounces shredded cheddar cheese
2 tomatoes (sliced thin)
1 cup thinly sliced red onion
6 cloves garlic (sliced thin)
1 jalapeño (sliced thin)
1 lime (juiced)
Cilantro (for garnish)

Steps:

  • Preheat oven to 400 degrees F
  • In a small bowl, mix together onion powder, chili powder, smoked paprika and sea salt.
  • Place chicken in a baking dish and brush with olive oil. Sprinkled evenly with spice mixture.
  • Sprinkle with cheese and top with tomatoes, onion, garlic and jalapeño.
  • Bake for 25 minutes, until cooked through.
  • Squeeze lime juice over chicken and garnish with chopped cilantro and green onions.

I made this the other day over the open fire in my Dutch oven. It is very easy to make and has great flavor. Got this out of my Cow Boys Cookbook.

Number Of Ingredients 10

1/2 cup(s) chopped onions
1/4 cup(s) chopped green peppers.
1/2 cup(s) sliced button mushrooms
1/2 stick(s) butter
1/4 cup(s) olive oil, light
6-8 - chicken breast halves, skinless and boneless
1 cup(s) white wine, medium
1 8oz can(s) tomato sauce, italian seasoned
4 tablespoon(s) soy sauce, light
- salt and pepper, totaste.

Steps:

  • In a large cast iron skillet. add 1/4 of buttes and 2/4 of olive oil. Saute onions, sell peppers, and mushroom for 3-4 minutes. Remove and place on a plate. In the skillet add remaning butter and oil. salt and pepper chicken breast.. Brown in skillet on all sides.. Add wine tomato sauce soy sauce onions, peppers, and mushrooms.. Simmer for 1-1 1/2 hours... Serve over hot cooked rice or noodles

10 large chicken - roasting pieces
2 can(s) cream of mushroom soup
4 tablespoon(s) butter
3 1/2 teaspoon(s) curry powder
1 - whole apple - chopped fine
1 - large onion - chopped fine
1 1/2 cup(s) cream
- salt to taste
1 tablespoon(s) paprika
1 teaspoon(s) red pepper flakes

Steps:

  • In sauce pan, melt butter, saute curry powder, apples, and onions until onions are transparent. In a separate bowl, combine soup and cream and mix together. Combine the Curry,Apple,and Onion mixture and stir and blend with the soup and cream, blend well...
  • While sauteing the mixture, rinse and pat dry the chicken pieces Salt and Paprika the chicken and place in large Dutch Oven. Pour the sauce mixture over chicken covering all the chicken.
  • Cook in Dutch Oven at 200 degrees for 3 1/2 to 4 hours. I use Kingsford Charcoal, it cooks great and stays hotter longer. I cover the top of the Dutch Oven with one layer of coals and under the Dutch Oven, I place one layer also... You will become familiar with the " heat " of the coals and will be able to keep the temperature where it needs to be... Enjoy!

This recipe came from a friend and is super delicious. It's easy and healthy. I love beans and chicken so this is one of my favorite meals.

1 cup low sodium chicken broth
1 (15 ounce) can black beans, rinsed and drained
1 (15 ounce) can red kidney beans, rinsed and drained
3/4 cup mild salsa
2 garlic cloves, minced
1 lb boneless skinless chicken breast, cut into bite-sized pieces

Steps:

  • In a 13 x 9 inch baking pan, combined the broth, beans, salsa, and garlic.
  • Add the chicken and mix everything together.
  • Bake at 350F for 45 minutes, stirring after the first 20 minutes.

This is some thing I make alot. I love to do this for our church camp outs. Some times I have to make 3 at one time.

1 - stewing chicken,3-5 lbs. cut up
2 large onions,sliced
2-4 stick(s) celery ribs,cut up
8 ounce(s) mushrooms,your choise sliced
5 - carrot, sliced
2 - bay leaves
1 teaspoon(s) each,thyme and orerano
- salt and pepper to taste
3-4 can(s) beer,i use dark beer.

Steps:

  • You will need a 14"deep cast iron dutch oven... Install meat trivet in bottom of dutch oven Arrange chicken in dutch oven Add celery,carrots,onoin,and mushrooms around and on chicken.Add thyme,bay leaves,And oregano.
  • Cover with beer,( I add one shot of whisky to pot).. Put lid on oven.set in hot coals. Rake coals around the sides of oven... cook for 3-3 1/2 hours. Wile cooking keep an eye to make shure there is enough beer in pot when cooking. Remove from coals. Lift lid discared bay leaves.Serve hot.

I don't remember where I got this recipe, but I've had for at least 10 years and it's still one of our favorites. The boys actually request this chicken. Cooking time includes marinade time.

1 lb chicken breast
1/4 cup fresh lemon juice
1 garlic clove, minced
1 teaspoon chili powder
1 teaspoon salt
1/2 teaspoon cumin
pepper
3 tablespoons flour
1/4 cup cornmeal
1/2 teaspoon paprika
2 tablespoons butter

Steps:

  • In a large sized zip lock bag, combine marinade ingredients, shake to mix well. Add the chicken and turn to coat on all sides. Refrigerate for at least one hour (the longer the better.).
  • Preheat oven to 375. Lightly oil a shallow baking dish large enough to hold the chicken in a single layer.
  • On a piece of waxed paper, combine the flour, cornmeal and paprika.
  • Remove the chicken from the marinade and pat dry with paper towels. Roll in the cornmeal mixture, coating on all sides. Place in the prepared baking dish and dot with bits of butter.
  • Bake for 30-40 minutes or until juices run clear.
