I clipped this recipe out of a coupon flyer and made a couple of modifications. This is the recipe I use for our Christmas morning breakfast casserole.

Ingredients

1 lb roll pork sausage
2 slices bread, toasted, buttered and cut into 1/2 inch cubes (about 2 cups)
1/2 cup onion, diced
1/2-3/4 cup green and red pepper, diced
1 cup shredded sharp cheddar cheese
6 eggs
2 cups milk
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon dry mustard

Steps:

Preheat oven to 350 degrees F. Grease an 11X7 baking dish.
Crumble and cook sausage and onion in medium skillet over medium heat until browned. Drain off fat.
Spread bread cubes in dish; top with sausage, peppers, and cheese.
Whisk eggs, milk, salt, pepper, and mustard until well blended; pour over cheese.
Bake 30 to 40 minutes or until set. Let stand 5 minutes before cutting into squares; serve hot. Refrigerate leftovers.
Note: This may be made the day before and refrigerated overnight. Baking time should be increased to an hour.

My version of Bob Evans Sunrise Squares. Great for leftovers too.

Ingredients

1 lb bob evans zesty hot sausage
5 slice bread, cut or torn into 1/2-inch pieces
1 green pepper, diced
1 red pepper, diced
1 small onion, sliced
1 can(s) large sliced mushrooms
2 c sharp shredded cheddar cheese
6 eggs
3 c milk
1 tsp dry mustard
salt to taste

Steps:

1. Preheat oven to 350 degrees. Crumble and cook sausage in medium skillet over medium heat until browned. Drain off any drippings.
2. Spread bread cubes in greased 9 x 13 baking dish; mix sausage, peppers, mushrooms, onion, and spread on top of bread cubes. Layer cheese over all. Whisk eggs, milk, salt and mustard until well blended; pour over cheese evenly.
3. Bake 30-45 minutes or until toothpick comes out clean. Let stand 5 minutes before cutting into squares; serve hot. Refrigerate leftovers.
