2 tablespoons butter
¼ cup white sugar
2 ¾ cups all-purpose flour
1 teaspoon baking powder
½ teaspoon salt
1 cup butter
2 cups white sugar
4 eggs
1 teaspoon vanilla extract
2 cups fresh blueberries
¼ cup all-purpose flour

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease a 10-inch tube pan with 2 tablespoons butter. Sprinkle pan with 1/4 cup sugar.
  • Mix together 2 3/4 cups flour, baking powder and salt. Set aside.
  • In a large bowl, cream together 1 cup butter and 2 cups sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla. Gradually beat in the flour mixture. Dredge blueberries with remaining 1/4 cup flour, then fold into batter.
  • Pour batter into the prepared pan.
  • Bake in the preheated oven for 70 to 80 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.

Blueberry Swirl Pound Cake is the perfect spring treat. Dense, yet tender & oh so delicious, you'll have everyone asking for this easy pound cake recipe loaded with blueberries.

Number Of Ingredients 12

1 cup granulated sugar
½ cup butter (room temperature)
3 eggs
2 tbsp lemon juice
1 tsp vanilla extract
1-1/2 cups all-purpose flour
¼ tsp baking powder
¼ tsp baking soda
½ tsp table salt
½ cup sour cream
1 cup fresh blueberries
1/4 cup Blueberry Jam (divided)

Steps:

  • Preheat oven to 325 degrees.
  • Spray 2 - 9" loaf pans with Bakers Joy (I highly recommend this product for all cakes)
  • In mixer- cream together your sugar & butter. Beat until fluffy.
  • Add eggs - one at a time & beating in-between each addition
  • Scrape bowl down. Add lemon juice & vanilla
  • Add in flour, baking powder, baking soda & salt.
  • Top with sour cream & then beat to combine - do not over mix.
  • Gently fold in blueberries by hand with large spatula
  • Pour into prepared pans.
  • Top each with jam & then run a knife through a couple times to swirl it throughout.
  • Bake 60- 75 minutes or until toothpick test is clean.
  • Cool on wire rack at least 10 minutes before removing from pan & then continue to cool on wire rack until room temperature before cutting.

2 sticks salted butter, at room temperature, plus more for the pan
1 3/4 cups all-purpose flour, plus more for the pan
1 6-ounce container fresh raspberries
2 tablespoons seedless raspberry jam
1 cup plus 2 tablespoons organic cane sugar
3 large eggs, plus 1 egg yolk, at room temperature
1/4 cup plus 2 to 3 tablespoons heavy cream
1 1/8 teaspoons pure vanilla extract
3/4 teaspoon plus 1/8 teaspoon pure almond extract
4 drops red gel food coloring
1/2 cup confectioners' sugar
Crushed freeze-dried raspberries, for topping

Steps:

  • Make the pound cake: Preheat the oven to 350˚. Butter the bottom and sides of a 9-by-5-inch loaf pan, then line with parchment paper in two overlapping strips, leaving an overhang. Butter the parchment and lightly dust with flour, tapping out the excess.
  • Combine the fresh raspberries, jam, 2 tablespoons cane sugar and 1/4 cup water in a medium saucepan over medium heat. Cook, stirring and smashing the berries with a wooden spoon, until thickened, 10 to 15 minutes. Remove from the heat and strain through a fine-mesh sieve into a medium bowl, pressing with a rubber spatula. Let cool.
  • Whisk the eggs, egg yolk, 1/4 cup heavy cream, 1 teaspoon vanilla and 3/4 teaspoon almond extract in a medium bowl until slightly foamy; set aside. Beat the butter and remaining 1 cup cane sugar in a large bowl with a mixer on medium speed until well combined, 1 to 2 minutes. Scrape down the bowl and increase the mixer speed to medium high. Beat until pale and fluffy, 6 to 7 more minutes. Reduce the mixer speed to low and beat in the flour until just combined. Gradually add the egg mixture and beat until combined. Scrape down the bowl, increase the speed to medium and beat until smooth and fluffy, 15 to 30 seconds.
  • Scoop 1 cup batter into the bowl with the raspberry sauce and stir in the red food coloring. Transfer half of the remaining plain batter to the prepared pan and top with half of the raspberry batter; swirl together with a knife. Repeat and swirl the batters together again. Bake until the top springs back when gently pressed and a toothpick inserted into the center comes out clean, 1 hour 10 minutes to 1 hour 20 minutes. Transfer to a rack and let cool 15 minutes in the pan. Lift the cake from the pan and remove the parchment; return to the rack to cool completely.
  • Make the glaze: Combine the confectioners' sugar, 2 tablespoons heavy cream and the remaining 1/8 teaspoon each vanilla and almond extracts in a medium bowl and whisk until smooth; thin with the remaining 1 tablespoon heavy cream, if needed. Spoon the glaze over the cooled cake and sprinkle with freeze-dried raspberries. Let set at least 20 minutes.

1 cup sour cream
3 cups blueberries
1 cup sugar
1/4 cup cornstarch
1/2 cup cranberry juice concentrate
6 cups blueberries

Steps:

  • In lg bowl, mix butter and sugar. Beat in extracts. Add eggs, one at a time, beating well after each addition. Combine flour and baking soda, add to creamed mixture alternatvely with sour cream. Fold in blueberries.
  • Spoon into two greased and waxed 9x5" loaf pans and bake at 350 for 60-65 mins or until toothpick inserted near center comes out clean. Cool for 10 mins before removing from pans to wire racks. Sprinkle with powdered sugar.
  • In a saucepan, combine sugar, cornstarch, and cranberry juice until smooth. Add blueberries. Bring to a boil over med. heat, cook and stir 2 mins or until thickened. Server warm or cold with the pound cake.
  • Note: If using frozen blueberries, don't thaw before adding to batter.

6 ounces blackberries (1 1/3 cups)
1 1/4 cups plus 2 tablespoons sugar
1 1/2 cups all-purpose flour
1/2 teaspoon coarse salt
1/4 teaspoon baking powder
2 large eggs, lightly beaten
1/2 teaspoon pure vanilla extract
1/2 cup sour cream, room temperature

Steps:

  • Preheat oven to 350 degrees. Lightly butter a 5-by-9-inch loaf pan and line with parchment, leaving a 2-inch overhang on all sides; butter parchment. In a food processor, puree blackberries with 2 tablespoons sugar. In a medium bowl, whisk together flour, salt, and baking powder.
  • In a large bowl, using an electric mixer, beat together butter and 1 1/4 cups sugar until light and fluffy, 5 minutes. Add eggs and vanilla and beat to combine, scraping down bowl as needed. With mixer on low, add flour mixture in 3 additions, alternating with sour cream, beginning and ending with flour mixture.
  • Transfer half the batter to pan and dot with 1/2 cup blackberry puree. Repeat with remaining batter and puree. With a skewer or thin-bladed knife, swirl batter and puree together. Bake until golden brown and a toothpick inserted in center of cake comes out clean, about 1 1/4 hours. Let cool in pan on a wire rack, 30 minutes. Lift cake out of pan and place on a serving plate; let cool completely before slicing.
