4 pears, peeled
10 fluid ounces red wine, or more to taste
½ cup dark brown sugar, packed
1 vanilla bean, split and seeds scraped out and reserved
1 orange, peeled and juiced (peel reserved)
7 ounces shelled walnuts, divided
½ cup heavy whipping cream
½ cup sour cream
1 orange, zested and juiced
2 teaspoons dark brown sugar, or as needed

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Arrange pears in an oven-proof pan with a tight-fitting lid; add red wine, 1/2 cup brown sugar, vanilla bean and seeds, and the peel and juice of 1 orange. Bring pear mixture to a boil; sprinkle with half the walnuts.
  • Bake the pear mixture in the preheated oven until pears are tender, 20 to 30 minutes, basting pears with red wine syrup every 10 minutes. Remove from oven and cool; remove the vanilla bean and orange peel from the red wine syrup.
  • Arrange the remaining walnuts on a baking sheet and bake in the preheated oven until toasted and fragrant, 5 minutes.
  • Place the toasted walnuts in a food processor and pour in the red wine syrup; pulse until paste-like consistency. Transfer to a bowl. Whisk cream, sour cream, zest and juice of 1 orange, and 2 teaspoons brown sugar into walnut-red wine paste until smooth.
  • Serve walnut-cream sauce over baked pears.

2 tablespoons butter, divided
2 tablespoons white sugar, divided
2 Bosc pears, halved and cored
½ cup heavy whipping cream

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease a 9-inch baking dish with 1 tablespoon butter. Sprinkle 1 tablespoon sugar into buttered dish.
  • Rub remaining 1 tablespoon butter over pear halves; arrange pears cut sides down in prepared baking dish and sprinkle with remaining 1 tablespoon sugar.
  • Bake in preheated oven for 10 minutes. Pour cream over pears and continue baking until tender, about 20 minutes more.

4 Bosc pears or eight small Anjou pears
1 bottle dry red wine
1/2 cup honey
Whipped cream flavored with sugar and Cognac, for serving, if desired

Steps:

  • Preheat the oven to 250 degrees F. Peel the pears from top to bottom, leaving the stem intact, and lay them in a lidded oven-proof dish just large enough to hold them. Bring the wine and honey to a boil, cover the pears with the liquid, and transfer to the oven. Bake until very tender, 4 to 5 hours, turning now and again. Gently remove the pears to a serving bowl with a slotted spoon. Boil the liquid rapidly until reduced to syrup, about 20 minutes. Pour the syrup over the pears and reserve at room temperature for several hours, or cover and refrigerate until about an hour before serving. Serve with whipped cream which you've sweetened with a little sugar and flavored with Cognac.

2 tablespoons light-bodied red wine, like Beaujolais
1/2 teaspoon cinnamon
6 medium pears, ripe but firm, peeled, quartered, and seeded
3/4 cup sliced almonds
1/4 cup sugar
1 large egg white

Steps:

  • Preheat the oven to 400 degrees F.
  • Combine the honey, sugar, wine, and cinnamon in a 9-inch baking dish. Add the fruit and toss to coat. Roast until tender, 20 to 30 minutes. When the fruit is cooked, remove it from the pan, and reduce the oven temperature to 350 degrees F.
  • Meanwhile, toss the almonds and sugar together, then add the egg white, and mix well to coat. Lightly grease a baking sheet and spread the almond mixture on it. Bake the almonds, turning them with a spatula every 5 minutes, until golden brown and caramelized, about 10 to 12 minutes.
  • Serve the fruit warm or at room temperature, with the almonds sprinkled on top.

4 pears, halved and cored
extra virgin olive oil
1/4 bunch fresh thyme
salt & freshly ground black pepper
1/4 cup crumbled good-quality blue cheese
1/4 cup walnut pieces

Steps:

  • Preheat oven to 375 degrees F.
  • Arrange the pears, cut side up, on a baking sheet.
  • Drizzle with olive oil and sprinkle with salt and pepper.
  • Strip the leaves from the thyme branches and sprinkle over the pears.
  • Bake 20 minutes, then remove from oven and spoon a generous teaspoon of crumbled cheese in the center of each pear half.
  • Return to oven and roast until they are tender and cheese is soft, about 10 minutes.
  • Meanwhile, put the walnuts on another baking sheet and toast in the oven until golden brown and fragrant, about 5 minutes; chop.
  • When the pears are cooked, transfer them to a serving plate and sprinkle with toasted walnuts.
  • Serve hot.

This is a recipe that my grandmother and I stumbled upon in and Irish cookbook. It is a wonderful, decadent and somewhat fancy type of first course

4 ounces cream cheese
3 ounces cashel blue cheese
2 -3 tablespoons light cream
1 cup walnuts, roughly chopped
6 ripe pears
1 tablespoon lemon juice
mixed salad green
6 cherry tomatoes
sea salt & fresh ground pepper
walnut halves, to garnish
2 -3 sprigs fresh flat leaf parsley, to garnish
1 lemon, juice of
finely grated lemon rind
1 pinch caster sugar (superfine)
4 tablespoons olive oil

Steps:

  • Mash the cream cheese and Cashel Blue cheese together in a bowl with a good grinding of black pepper, then blend in the cream to make a smooth mixture. Add 1/4 cup chopped walnuts and mix to distribute evenly. Cover and chill until required.
  • Peel and halve the pears and scoop out the core. Put them into a bowl of water with the 1 tbsp lemon juice to prevent them from browning. To make the dressing: whisk the lemon juice, lemon rind, caster sugar and olive oil together and season to taste.
  • Arrange a bed of salad leaves on six plates add a tomato to each and sprinkle over the remaining chopped walnuts.
  • Drain the pears well and pat dry with kitchen paper, then turn them in the prepared dressing and arrange, hollow side up, on the salad leaves. Divide the Cashel Blue mixture between the six halved pears, and spoon the dressing over the top. Garnish each ear with a walnut half and a sprig of flat leaf parsley before serving.

An easy cake to make, this is lovely topped with spice-scented sautéed pears and sweetened cinnamon-spiced whipped cream.

1 1/4 cups unbleached all-purpose flour
1 teaspoon baking powder
pinch of salt
1/2 cup (1 stick) unsalted butter, at room temperature, cut into pieces
1 cup sugar
2 large eggs, at room temperature, separated
1/2 cup milk
1 cup chopped walnuts
1 teaspoon pure vanilla extract
2 tablespoons unsalted butter
6 small Bosc pears, cored, peeled and cut into 1/4-inch pieces
2 tablespoons brown sugar
1 tablespoon ground cinnamon
1 teaspoon ground nutmeg
2 tablespoons fresh lemon juice
1 cup heavy cream
1 tablespoon sugar
1 teaspoon ground cinnamon

Steps:

  • Preheat the oven to 350°F. Lightly butter and flour a 9-inch round cake pan and tap out the excess flour.
  • To prepare the cake, in a bowl, combine the flour, baking powder and salt and whisk 8 to 10 times until well mixed.
  • Using an electric mixer set on medium-high speed, cream the butter and sugar. Add the egg yolks and beat until smooth. Add the dry ingredients in 3 or 4 batches, alternating with the milk and ending with the dry ingredients. Stir well and fold in the nuts and vanilla.
  • Using an electric mixer set on medium-high speed, beat the egg whites until they hold stiff peaks. Fold the whites into the batter just until mixed. Spread the batter in the cake pan. Bake in the center oven rack for 35 to 40 minutes or until a toothpick inserted in the center comes out clean. Turn out onto a wire rack to cool.
  • To prepare the pears, in a sauté pan or skillet, melt the butter over medium-high heat and cook the pears, stirring, for about 5 minutes, or just until softened. Sprinkle with the sugar. Add the cinnamon, nutmeg and lemon juice and mix well. Cover to keep warm.
  • To make the cream, using an electric mixer set on medium-high speed, whip the cream and sugar until the cream is thick but not dry. Add the cinnamon and continue whipping until the cream is the desired consistency. Serve the cake topped with the pears and cream.

Put the pears into a tight-fitting ovenproof pot or pan, add the 125g of sugar, wine, vanilla pod and seeds, and the peel and juice of 1 orange and bring to the boil. Sprinkle over half the walnuts and then put in the oven to bake. Every so often, baste the pears with the syrup they are cooking in, as this will give them a nice glaze. Cook for around 20 to 30 minutes, depending on the ripeness, until the pears are tender but still holding their shape, then remove from the oven and allow to cool while you roast the remaining walnuts on a baking tray in the oven for 5 minutes – make sure you keep an eye on them as they can quickly go from golden to black and you don’t want burnt walnuts!
  • Remove the vanilla pod from the syrup. When the walnuts are done, either whizz them in a Magimix or bash them up with a pestle and mortar until you have a paste. Whip up the mascarpone with the walnut paste, the zest and juice of the other orange and enough sugar to sweeten, and serve this cream with the baked pears, the nuts, some orange peel and some of the cooking syrup.
