Number Of Ingredients 9

2 cups all-purpose flour
4 teaspoons baking powder
1/2 teaspoon salt
1/3 cup maple sugar
2/3 cup dried blueberries
ADDITIONAL INGREDIENTS:
2 large eggs
1-1/3 cups 2% milk
1/4 cup butter, melted

Steps:

  • Whisk together flour, baking powder and salt. Transfer to a 1-pt. glass jar. Top with maple sugar; cover. Place dried blueberries in a small plastic bag; attach to jar. Store in a cool dry place or in a freezer up to 3 months., To prepare pancakes: Preheat lightly greased griddle over medium heat. In a small bowl, mix flour mixture and maple sugar. Whisk in eggs, milk and melted butter. Stir in blueberries., Pour batter by scant 1/4 cupfuls onto griddle; cook until bubbles on top begin to pop and bottoms are golden brown. Turn; cook until second side is golden brown.

Each serving is 2 pancakes each. I found this recipe in Family Circle magazine. I have not tried this recipe, but I'm posting it for safe keeping. I plan to use Splenda sugar blend in place of the sugar.

1 cup all-purpose flour
1/2 cup whole wheat flour
1/2 cup sugar
3 teaspoons baking powder
1/4 teaspoon salt
6 ounces plain low-fat yogurt
1/3 cup skim milk
1/2 cup orange juice
2 eggs
1 tablespoon canola oil
1 teaspoon grated orange zest
1 teaspoon vanilla extract
1 cup fresh blueberries
maple syrup

Steps:

  • Heat oven to 250. Place a large baking sheet in oven.
  • Blend botrh kinds of flour, the sugar, baking powder and salt in a large bowl. Combine yogurt, milk, juice, eggs, oil, orange zest and vanilla in a medium-sized bowl. Whisk until smooth. Add yogurt mixture to flour mixture and stir until a smooth batter forms.
  • Heat a large nonstick skillet over medium-high heat. Spoon batter by 1/4-cupfuls onto skillet, spreading to a diameter of 4-inches. Sprinkle 5 or 6 blueberries onto each pancake. Cook until bubbles appear on surface, about 2 minutes. Turn and cook until underside is lightly browned, about 1-2 minutes longer.
  • Transfer pancakes to baking sheet in oven keep warm. Repeat with batter and berries for a total of 16 pancakes. Serve with maple syrup.

3/4 cup all-purpose flour
1/2 cup cornmeal
3 tablespoons light brown sugar
1 teaspoon baking powder
1/4 teaspoon salt
1/8 teaspoon baking soda
1/8 teaspoon nutmeg, freshly grated
2 large eggs, separated and at room temp
1 cup buttermilk, room temp
1/2 cup milk, room temp
3 tablespoons unsalted butter, melted
1/2 teaspoon vanilla extract
1 cup blueberries
1/4 cup maple syrup
1 cinnamon stick
1 tablespoon unsalted butter
1 teaspoon lemon juice

Steps:

  • Preheat oven to 200 degrees.
  • Whisk flour, cornmeal, brown sugar, baking powder, salt, baking soda and nutmeg in a large bowl.
  • In another bowl, whisk egg yolks with buttermilk, milk, melted butter, and vanilla extract.
  • Combine the wet and dry ingredients to make a thick batter, be sure not to overmix.
  • Whip egg whites until they have soft peaks.
  • Fold the whipped egg whites into the batter.
  • Heat a large nonstick skillet over medium heat.
  • Lightly coat the surface with butter.
  • Pour about 1/4 cup of the batter into the skillet for each pancake.
  • Cook until bubbles break the surface of the pancakes and the undersides are golden brown.
  • Flip pancakes and cook for another minute or so on the other side.
  • Keep cooked pancakes warn on baking sheet in the oven while you cook the rest.
  • Serve pancakes with warm blueberry syrup.
  • For the syrup:.
  • toss the blueberries and maple syrup in a small saucepan.
  • Add cinnamon stick and cook over high heat until boiling and blueberries begin to pop, about 5 minutes.
  • Remove from heat, remove cinnamon stick, and whisk in butter and lemon juice.

1 1/2 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon ground cinnamon
1 1/4 cups milk
1 large egg
1 tablespoon honey
1 tablespoon brown sugar
1/4 teaspoon salt
1 cup blueberries
1/4 cup brown sugar
1/2 teaspoon ground cinnamon
1/2 cup confectioners' sugar
3 tablespoons maple syrup
1/2 teaspoon vanilla extract

Steps:

  • Make the cinnamon sugar topping. In a small bowl, combine the brown sugar and cinnamon. Set aside until ready to use.
  • Make the maple glaze. In a medium bowl, whisk together the confectioners' sugar, maple syrup and vanilla extract. Set aside until ready to use.
  • Make the pancake batter. In a large bowl, sift together the flour, baking powder and cinnamon. In a separate large bowl, whisk together the milk, egg, honey, brown sugar and salt. Stir the wet ingredients in with the dry ingredients until well combined. Stir in the blueberries. Allow the batter to set for 15 minutes before using.
  • Heat a large skillet or griddle over medium heat. Spoon the batter on the preheated skillet, using about 1/4 c of the batter per pancake. Cook the pancakes on one side until golden brown. Sprinkle about 1/2 tsp of the cinnamon sugar topping on the uncooked side of the pancake, then flip the pancake over and cook until golden brown.
  • Drizzle the maple glaze over all.
  • Serve hot and enjoy!

3/4 cup milk

  • In a small bowl whisk together the egg, the zest, the milk, the brown sugar, and 2 tablespoons of the butter. Heat a griddle over moderately high heat until it is hot enough to make drops of water scatter over its surface and brush it with some of the additional melted butter. Pour the batter onto the griddle by 1/3 cup measures and cook the pancakes for 2 minutes on each side, or until they are golden. Transfer the pancakes as they are cooked to a plate and keep them warm. Serve the pancakes with the syrup.

1 cup maple syrup
1½ cups fresh blueberries, divided
1 tablespoon fresh lemon juice, from one lemon

Steps:

  • Combine the maple syrup, 1 cup of the blueberries and lemon juice in a medium sauce pan. Bring to a boil, then reduce heat to medium and boil for ten minutes. Let cool to lukewarm, then stir in the remaining ½ cup fresh blueberries. Store in the refrigerator.

At summer's end when I was growing up we all headed to the woods and fields surrounding our home, ice cream buckets held aloft, to pick the proliferation of wild blueberries that grew there in abundance. This was one of our favourite things to make with them.

2 cups flour
2 tablespoons caster sugar
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 pinch ground nutmeg
2 large eggs
2 cups buttermilk
8 tablespoons butter, melted
1 cup fresh blueberries (wild are best, but failing that, cultivated will do) or 1 cup frozen blueberries (wild are best, but failing that, cultivated will do)

Steps:

  • Sift flour, sugar, baking powder, baking soda, salt and nutmeg together into a large mixing bowl.
  • Put the eggs into a medium bowl and beat until frothy.
  • Beat in the buttermilk, mixing well.
  • Stir the buttermilk mixture into the dry mixture, mixing to combine.
  • Stir in half of the melted butter.
  • Heat a large cast iron skillet over medium heat. (if you are lucky enough to have one, if you don't a large non-stick one will do)
  • Treat the skillet with some of the remaining butter.
  • Make 2 to 3 pancakes at a time by ladling 1/3 cup of batter for each pancake into the skillet, keeping about ½ inch between the pancakes.
  • Scatter some blueberries on top of each.
  • Cook until bubbles form on the tops of the pancakes and bottoms turn golden brown. (about 2 to 3 minutes)
  • Flip over and continue to cook until the bottoms are golden and the centers are cooked through. (about 2 minutes more)
  • Repeat process, greasing skillet each time with more butter.
  • Keep pancakes warm in a slow oven until all are cooked.
  • Serve with pats of butter and Maple syrup.
  • Cooked bacon is heavenly with these!
