I'm posting this so I'll have it available whenever I need it. I figure I'm not the only one to lose the directions that come in the pectin box, so I thought I'd make it public. This makes a nice sweet/tart jam with a beautiful rich pink/red color. If you use a food processor to chop your strawberries, don't puree them, just chop them. To prepare jars--wash them in hot soapy water and rinse with warm water. To prepare flat lids, bring a small amount of water to a boil and remove from the heat. Place the lids in the boiling water and let sit until you are ready to use them. I use the inversion method to seal my jars (place them upside down for 10 minutes once the lids are on instead of canning) but that method is NOT RECOMMENDED by the USDA.

2 pints strawberries
1 lb rhubarb
6 1/2 cups sugar
1 (3 ounce) envelope liquid Certo
1/2 cup water
1/2 teaspoon butter (optional)

Steps:

  • Prepare your jars and lids for canning. This recipe makes approximately 8 cups.
  • Remove the stems from the strawberries, and crush to 2 1/4 cups. You can crush with a potato masher, food processer, or my favorite way, by hand.
  • Chop rhubarb (you'll need it to measure 1 3/4 cups), place in saucepan with 1/2 cup water, bring to boil and boil about 2 minutes, or until rhubarb is soft.
  • In a large (6- or 8-quart) pot, combine the strawberries, drained rhubarb, sugar, and butter if using and bring to a full rolling boil over high heat.
  • Add the pectin and bring back to a boil. Boil for one minute and then remove from the heat.
  • Skim off any foam (if you used the butter, there may not be any foam) and pour into your prepared jars leaving 1/8 inch headspace.
  • Wipe jar rims and threads, cover with two piece lids, screw bands on and boil in a canner for 10 minutes.
  • Remove jars from canner and allow to sit overnight. Check the seal, if any jars did not seal, place in the fridge and use immediately. Store properly sealed jars up to one year in a cool dry place.

2 tablespoons lemon juice
1 (3 ounce) envelope 100% fruit pectin (Ball brand recommended)
5 1/4 cups sugar

Steps:

  • Thaw and drain blueberries.
  • Crush blueberries one layer at a time.
  • Combine 3 cups crushed blueberries and lemon juice in a large saucepot.
  • Stir in Fruit Jell pectin.
  • Bring mixture to a boil, stirring constantly.
  • Add sugar, stirring to dissolve.
  • Return mixture to a rolling boil.
  • Boil hard 1 minute, stirring constantly.
  • Remove from heat.
  • Skim foam if necessary.
  • Preserve It-.
  • Ladle hot jam into hot "Ball" 8-oz jelly jar to 1/4 inch below rim.
  • Wipe jar rim clean.
  • Place lid on jar and tighten band, just until a point of resistance is met.
  • Process 10 minutes in a boiling-water canner.
  • Cool for 12 to 24 hours.
  • Remove bands.
  • Lids should be concave in middle.
  • Yield: About 6 half pints.

Steps:

  • Rinse five 1-cup plastic or freezer-safe containers and lids with boiling water. Dry thoroughly. Mash blueberries; transfer to a Dutch oven. Add lemon juice; stir in pectin. Bring to a full rolling boil over high heat, stirring constantly., Stir in sugar; return to a full rolling boil. Boil for 1 minute, stirring constantly. Remove from the heat; skim off foam. 800g blueberries , washed
500g granulated sugar
1 vanilla pod , split lengthways
1 large lemon , juiced

Steps:

  • Put a plate in the freezer for you to test your jam is set later. Sterilise two 500ml jam jars so they are ready to use.
  • Put the blueberries, sugar, vanilla and lemon in a large heavy-based saucepan over a medium heat. Crush the blueberries a little with a potato masher. Bring to the boil, then reduce to a simmer and cook for 30 mins. Skim off any skum that has formed on the top with a spoon and discard.
  • Test the jam is set by spooning a mound on to your cooled plate. Put in to the fridge for 3 mins. If the jam forms a skin and ripples when you push it with your finger, it's ready. If not, return to the heat for 5 more mins then repeat the test. Do this until you reach setting point.
  • Leave the jam to sit for 10 mins off the heat. Ladle into your warm, sterilised jars and seal the lids on top. Leave to cool completely. Will keep for six months unopened in a cool, dry place, or two weeks once opened in the fridge.

1 pouch CERTO Fruit Pectin

  • Rinse clean plastic containers and lids with boiling water. Dry thoroughly.
  • Stem and crush blueberries thoroughly, one layer at a time. Measure exactly 2 cups prepared fruit into large bowl. Stir in sugar. Let stand 10 min., stirring occasionally.

1/2 pint raspberries, crushed
1 pint blueberries, crushed
1/2 pint blackberry, crushed
1 pint strawberry, crushed
3 1/4 cups sugar
1 tablespoon lemon juice
1 (49 g) box Certo (Certo Light Crystals, not regular Certo)

Steps:

  • In a mixing bowl, stir together prepared fruit (total of 4 cups, crushed), and lemon juice. Combine Certo Light crystals with 1/4 cup of the sugar. Add certo/sugar mixture to fruit and stir. Let stand 30 minutes, stirring occasionally.
  • Add remainder of sugar (3 cups) and stir for 3 minutes.
  • Pour into clean containers, filling up to 1/4" from rim. Cover with lids. Leave at room temparature until set (max of 24 hours.) Freeze.
  • No cook freezer jam can be stored in the freezer for 6-8 months, and in the fridge for up to 3 weeks.

DELICIOUS BLUEBERRY JAM RECIPE - LOW SUGAR OPTIONS



Delicious Blueberry Jam Recipe - Low Sugar Options image

4 cups frozen or fresh blueberries, picked over for stems
1 box of pectin (no/low sugar pectin if using less sugar)
4 cups sugar (3/4 cup for lower sugar)
zest of one lemon
dash nutmeg, freshly grated

Steps:

  • Clean your jars in warm, soapy water, dry, and set aside.
  • Measure out six cups of fresh or frozen berries. Rinse them and shake them dry. Pick through the fresh berries to find any stems or other impurities.
  • Add the berries to the large stock or soup pot, and mash the berries thoroughly. You could use an immersion blender if you wanted, but it's not necessary. As the berries cook, they will soften and dissolve.
  • Following the instructions on your pectin box, add the pectin, zest of one lemon, and the dash of freshly grated nutmeg. Bring the berries to a rolling boil, a boil that doesn't stop even when stirred. Be sure to stir constantly, so the berries don't burn.
  • When the berries have come to a full rolling boil, add the sugar and stir.
  • Once the fruit has returned to the boil, set the timer for one minute. Stir constantly, and when the timer goes off, remove the pot from the heat.
  • Test the jam by pouring a small bit on a frozen spoon and see if it sets properly. If it does not, return the pot to the stove and boil for another minute. Remember, it often takes an entire day to fully set, so if it's a little runny, that's okay.
  • While the jam is still liquid, transfer it to the hot jars and containers you want to store it in, and prepare it for canning in a hot water bath or freezer storage. Don't forget to wipe jar rims before you finish preserving them!
