I got this recipe from an internet search. It said it was exported from MasterCook from Kraft General Foods. It is very easy to make and is excellent jam. The recipe called for sour cherries, but I used sweet ones and it turned out wonderfully. Very nice blend of flavors.The cherry measurement is approx 3 cups pitted. You will need to chop the cherries and measure out the 1 & 1/2 cups after they have been chopped. It takes about 3 cups to get 1 & 1/2 cups chopped.

2 cups fully ripe blueberries
1 1/2 cups cherries, approx 3 cups pitted
4 cups sugar
1 box sure-jell powdered fruit pectin

Steps:

  • Measure berries, then crush.
  • Pit and finely chop cherries then measure.
  • Mix fruit into 8 qt pot.
  • Add pectin to fruit in pot.
  • Bring to a full boil over high heat.
  • Add sugar and stir.
  • Return to a boil and boil hard for 1 minute, stirring constantly.
  • Remove from heat, skim off any foam and ladle into hot jars.
  • Wipe jar rims and threads, top with two piece lids, tighten lids.
  • Process for 10 minutes in hot water bath.

This recipe is changed from Certo Pectin Crystals. Directions assume you know about canning. Times are estimates.

4 cups blueberries, whole
2 cups cherries, halved and pitted
2 1/2 tablespoons lemon juice
1 box Certo, pectin crystals
5 cups sugar

Steps:

  • Measure fruit whole, I used my processor and pulsed until finely chopped, measure 4 cups of finely chopped fruit.
  • In large saucepan stir together prepared fruit, lemon juice and Certo Pectin Crystals.
  • Bring to a boil over high heat.
  • Add all sugar.
  • Return to a hard boil for 1 minute.
  • Remove from heat. Stir and skim for 5 minutes, to prevent floating fruit. Pout into hot sterilized jars to 1/4 inch from rim, Cover with lids and screw rings on tightly.
  • Process in a boiling water bath for 10 minutes (adjust processing time for about sea level).
  • Note: I ended up with about 6 3/4 half pint jars of jam. I always so up an extra jar and a couple extra lids when preparing them.
  • Cooked jams may be stored on shelf unopened for up to 1 year.
  • It's important to use sterilized jars, lids and utensils when preparing cooked jams.
  • Jars can be sterilized in the oven at 225F for 10 minutes and should be kept warm until filling time.
  • Lids should be placed in boiled water and kept warm until ready to use.

I like to combine several types of fruit in jam. This summer jam uses sour cherries, raspberries, and blueberries.

24 ounces fresh sour cherries
1 pint fresh raspberries
10 ounces fresh blueberries
1 (1.75 ounce) package fruit pectin (such as Sure-Jell Premium Fruit Pectin®)
7 cups white sugar

Steps:

  • Inspect 8 half-pint jars for cracks and rings for rust, discarding any defective ones. Immerse in simmering water until jam is ready. Wash new, unused lids and rings in warm soapy water.
  • Prepare fruit and measure. Remove pits from cherries and measure 3 cups of pitted sour cherries. Crush raspberries and measure 1 cup crushed raspberries. Mash blueberries and measure 1 cup mashed blueberries.
  • Combine cherries, raspberries, and blueberries in a large pot. Stir in pectin. Slowly bring to a full rolling boil that does not stop bubbling when stirred. Stir in sugar sugar and stir to dissolve. Return to a full rolling boil on high heat and boil for exactly 1 minute, stirring constantly. Skim off any foam with a ladle or a large spoon.
  • Ladle cherry berry jam immediately into the prepared jars, filling to within 1/4 inch of the top. Run a clean knife or thin spatula around the insides of the jars to remove any air bubbles. Wipe rims with a moist paper towel to remove any spills. Top with lids and tightly screw on rings.
  • Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil and lower jars 2 inches apart into the boiling water using a holder. Pour in more boiling water to cover jars by at least 1 inch. Bring to a rolling boil, cover, and process for 10 minutes.
  • Remove the jars from the stockpot and place onto a cloth-covered or wood surface, several inches apart. Let rest for 24 hours without moving the jars. Gently press the center of each lid with a finger to ensure the lid does not move up or down. Remove the rings for storage and store in a cool, dark area.

800g blueberries , washed
500g granulated sugar
1 vanilla pod , split lengthways
1 large lemon , juiced

Steps:

  • Put a plate in the freezer for you to test your jam is set later. Sterilise two 500ml jam jars so they are ready to use.
  • Put the blueberries, sugar, vanilla and lemon in a large heavy-based saucepan over a medium heat. Crush the blueberries a little with a potato masher. Bring to the boil, then reduce to a simmer and cook for 30 mins. Skim off any skum that has formed on the top with a spoon and discard.
  • Test the jam is set by spooning a mound on to your cooled plate. Put in to the fridge for 3 mins. If the jam forms a skin and ripples when you push it with your finger, it's ready. If not, return to the heat for 5 more mins then repeat the test. Do this until you reach setting point.
  • Leave the jam to sit for 10 mins off the heat. Ladle into your warm, sterilised jars and seal the lids on top. Leave to cool completely. Will keep for six months unopened in a cool, dry place, or two weeks once opened in the fridge.

2-1/2 cups finely chopped or ground sour cherries (about 1-1/2 pounds)
2 cups red raspberries
1 package (1-3/4 ounces) powdered fruit pectin
5 cups sugar

Steps:

  • In a Dutch oven, combine cherries and raspberries; stir in pectin. Bring to a full rolling boil over high heat, stirring constantly. Stir in sugar; return to a full rolling boil. Boil and stir 1 minute. , Remove from heat; skim off foam. Ladle hot mixture into eight hot sterilized half-pint jars, leaving 1/4-in. headspace. Wipe rims. Center lids on jars; screw on bands until fingertip tight., Place jars into canner with simmering water, ensuring that they are completely covered with water. Bring to a boil; process for 5 minutes. Tart-sweet blueberries, as it turns out, are the perfect complement to gooseberries. And because gooseberries are naturally high in pectin, you can leave your box of the stuff in the cupboard. It thickens up beautifully on its own.

1 pint 2 cups red gooseberries
1 pint 2 cups blueberries
2 cups sugar
1 tablespoon lemon juice
3 tablespoons water
1/8 teaspoon ground nutmeg (optional)

Steps:

  • Pick through and rinse gooseberries and blueberries, removing stems and leaves and discarding any bad berries.
  • Add the lemon juice and water to a medium saucepan.
  • Over medium heat, slowly add the sugar to the lemon and water, whisking as you go, until the sugar-water mixture is smooth. If necessary, you can add a bit more water.
  • Heat on medium until the sugar dissolves and the mixture is clear. Just don't keep heating it, because you'll end up with caramel - in this case, not good! And yes, I've done it.
  • Add the gooseberries, and cook (keeping the heat at medium) for about 3 minutes.
  • Stir in the blueberries (and the nutmeg, if using).
  • Bring the mixture to a boil, and allow to boil for about 5 - 10 minutes until thickened.Tip: How do you tell it's the right consistency? Do the spoon text. Dip a cold metal spoon into the mixture, and pull it out sideways. If the mixture drips off in one stream, it's not ready. When the mixture drips off in two drips, it's close. Then the two drips begin to form a sheet, it's ready! Keep in mind it'll keep thickening up after it cools.
  • Allow to cool a bit, then pour into jars. Store in an airtight container in the refrigerator.

2 cups blueberries, rinsed and drained
1 ¼ cups white sugar
¼ cup all-purpose flour
1 tablespoon ground cinnamon
½ teaspoon lemon juice
1 tablespoon butter
1 recipe pastry for a 9 inch double crust pie

Steps:

  • Mix sugar, flour, and cinnamon in large bowl. Add fruit. Add lemon juice, and stir well.
  • Pour into a 9 inch unbaked pie shell. Dot with the butter or margarine. Cover with top crust and flute edges. Cut small slits in the top.
  • Bake at 375 degrees F (190 degrees C) for 1 hour. I put a baking sheet under mine to catch any liquid that might bubble over.

Number Of Ingredients 4

2 cups prepared fruit (buy about 1 pt. fully ripe blueberries and 1 pt. fully ripe sour cherries)
3-3/4 cups sugar, measured into separate bowl
1 pouch CERTO Fruit Pectin
2 Tbsp. fresh lemon juice

Steps:

  • Rinse clean plastic containers and lids with boiling water. Dry thoroughly.
  • Crush blueberries thoroughly, one layer at a time. Measure exactly 1 cup prepared blueberries into large bowl. Finely chop or grind pitted cherries. Measure exactly 1 cup prepared cherries into bowl with blueberries. Stir in sugar. Let stand 10 min., stirring occasionally.
  • Mix pectin and lemon juice. Add to fruit mixture; stir 3 min. or until sugar is dissolved and no longer grainy. (A few sugar crystals may remain.)
  • Fill all containers immediately to within 1/2 inch of tops. Wipe off top edges of containers; immediately cover with lids. Let stand at room temperature 24 hours. Jam is now ready to use. Store in refrigerator up to 3 weeks or freeze extra containers up to 1 year. Thaw in refrigerator before using.
