BLUE CHEESE DRESSING
I tasted this tangy blue cheese dressing for the first time at a friend's house. She gave me the recipe, and now I make it every week. I always keep some in my refrigerator. Steps:
- In a bowl, combine the first seven ingredients. Stir in the blue cheese. Cover and chill at least 2 hours. Store in the refrigerator.

TOSSED SALAD WITH BLUE FOX DRESSING
This is the house salad from Machus Red Fox restaurant (now closed) in Bloomfield Township, Michigan--better known as the restaurant where Jimmy Hoffa was last seen. Recipe from "Itadakimasu" cookbook put together by The Women's Group of the Tokyo American Club.

Steps:
- Fry bacon until very crisp and crumble.
- Tear lettuce into bite-sized pieces.
- Slice onion tissue-paper thin.
- Chill all items while you make the dressing.
- Mix together the oil, vinegar, sugar, salt and pepper.
- Make sure the salad and dressing are well-chilled.
- To serve, mix together the dressing and lettuce, and toss lightly.
- Garnish with bacon, blue cheese, tomato and onion.
- Serve immediately.

Steps:
- With an electric mixer on low speed, beat together first 6 ingredients for 2 minutes.
- Add mayonnaise and beat an additional 30 seconds.
- Increase speed to medium and beat for 2 minutes.
- Fold in bleu cheese.
- Refrigerate for at least 24 hours before serving.
- Note: Sometimes I will add 1/2 the bleu cheese, when adding the mayo. This gives the dressing a smoother consistency when serving to younger taste buds. Cooking time is 24hr. refrigeration.

Steps:
- In a mixer bowl, blend sour cream, mustard, pepper, salt, garlic powder, and Worcestershire for 2 minutes at low speed.
- Add mayonnaise. Blend 1/2 minute at low speed and 2 minutes at medium speed.
- By hand, crumble cheese into mixture. Blend at low speed no more than 4 minutes.
- Refrigerate 24 hours before serving.

Oh this is so good! Not your usual bleu cheese dressing at all--this one contains NO mayo or sour cream. An excellent, elegant dressing for your salad greens, served along with a steak and baked potato.
