PEACHY TURKEY BURGER OVER GREENS WITH ENDIVE, BACON, AVOCADO, AND GORGONZOLA
A delicious bun-less grilled turkey burger infused with summer peaches, jalapeno, and onions and served over mixed greens with endive, bacon, avocado, gorgonzola, and some more peaches. I created this recipe for my blog, Celiac and Allergy Friendly Epicurean by Jackie Ourman, however, it is a fantastic meal for all and does not need to be made gluten free. You can just use regular soy and teriyaki sauces. Toss salad with mustard vinaigrette if you like.

Steps:
- Heat canola oil in a skillet over medium heat; add onion, jalapeno, and garlic. Cook until onions are translucent, 10 to 12 minutes. Cool to room temperature, about 15 minutes.
- Mix the onion mixture, ground turkey, teriyaki sauce, and soy sauce together in a bowl using a fork. Chop half the peach and mix gently into the bowl with the turkey mixture. Season with salt and pepper. Form into 4 patties.
- Preheat grill for medium heat and lightly oil the grate.
- Cook turkey burgers on the preheated grill until no longer pink in the center and the juices run clear, about 4 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
- Combine endive and spring mix in a bowl. Top with avocado, Gorgonzola cheese, and bacon. Serve alongside turkey burgers.

FOODIE FRIDAY'S: PEACHY TURKEY BURGER OVER MIXED GREENS, ENDIVE, BACON AND GORGONZOLA SALAD
Steps:
- Turkey Burgers
- Sauté onion, jalapeno and garlic over medium to low heat in canola oil (or reserved pan from bacon below) until onions are translucent (about 10-12 minutes), let cool to room temperature (about 15 minutes)
- In a bowl, use fork to mix ground turkey with soy sauce, teriyaki sauce and onion mixture and then add in chopped peach. Mix it gently so as not to damage the peaches too much
- Form patties and grill until cooked through
- Salad
- Mix rinsed lettuces with chopped endive
- Top with avocado, bacon bits, gorgonzola and sliced peaches and serve alongside turkey burgers. You can toss it with a mustard vinaigrette, if you like.
MAKEOVER TURKEY BURGERS WITH PEACH MAYO

- In a skillet, heat oil over medium-high heat. Add peaches and ginger; cook and stir until peaches are tender. Stir in 1 teaspoon teriyaki sauce; cook 1 minute longer. Transfer to a small bowl; cool slightly., In a large bowl, combine onion, pepper, salt and remaining teriyaki sauce. Add turkey; mix lightly but thoroughly. Shape into six 1/2-in.-thick patties., Moisten a paper towel with cooking oil; using long-handled tongs, rub on grill rack to coat lightly. Grill burgers, covered, over medium heat or broil 4 in. from heat 5-6 minutes on each side or until a thermometer reads 165°., Stir mayonnaise into peach mixture. Serve burgers on buns with peach mayo and toppings as desired.

TURKEY BURGERS WITH AVOCADO SAUCE
This is from Taste of Home Magazine. I forgot to pick up corn so admitted that and also red peppers were too expensive so I used a green Italian pepper. These are so tasty and and super easy. The sauce is so good that you can use it for a dip or topping for tacos, etc.

Steps:
- In a large skillet, saute the corn, onion and pepper in oil until crisp tender. Stir in the lime juice, garlic, salt, cumin, chili powder and oregano, cook 1 minute longer. Transfer to a large bowl and cool slightly. Crumble turkey over mixture and mix well. Shape into four burgers. Refrigerate for at least 30 minutes.
- For sauce. In a small bowl, mash avacado with sour cream, cilantro, lime juice, garlic and salt. Refrigerate until service.
- If grilling the burgers, coat grill rack with cooking spray before starting the grill. Grill the burgers 4 in from the heat for 5-7 minutes or until thermometer reads 165°F.
- Place on buns top with about 1/4 sauce. Serve with lettuce, cheese, tomato and onion if desired.

Periodically I buy her magazine and this recipe was in the burger issue. I did modify it a bit to suit preferences. If you prefer a more chunky texture for the dressing, you can just mix it by hand.

- first 5 ingredients.
- Form into 4 patties.
- In food processor, place next 8 ingredients.

- Partially freeze the bacon and pulse in small batches in the food processor until ground or tiny.
- Mix in bowl with other ingredients until well mixed.
- Shape into four patties.
- Preheat the oven to 350 degrees.
