SUN-DRIED TOMATO DRESSING
This thick dressing doubles as a topping for burgers or as a dipping sauce for shrimp. Thin with a 1/2 cup water if you like a thinner dressing. Taken from Relish magazine.

Steps:
- Combine all ingredients except oil in a blender or food processor. Pulse until all tomatoes are finely chopped.
- Add oil, a little at a time. Pulse until thick and well blended.

Steps:
- Place tomatoes in small bowl. Add enough boiling water to completely cover tomatoes; let stand 30 min. or until tomatoes are soft and plumped. Drain tomatoes; chop into small pieces. Set aside.
- Beat cream cheese and blue cheese in small bowl with electric mixer on medium speed until well blended. Stir in tomatoes, mayo, pecans and basil; cover.
- Refrigerate several hours or until chilled. Serve as a spread for assorted crackers.

Steps:
- In a food processor or blender combine all ingredients except the 1 cup of the blue cheese and sun dried tomatoes.
- Blend until smooth and creamy.
- Place in a bowl and add the sun dried tomatoes and remaining blue cheese, mix well.
- Refrigerate until needed.

SLICED TOMATOES WITH BLUE-CHEESE DRESSING
Steps:
- Core the tomatoes, and cut into thick slices. Peel the onion, and slice.
- Combine the vinegar, oil, cheese, salt and pepper in a mixing bowl. Blend with a wire whisk (the dressing should be lumpy).
- Arrange the lettuce leaves, slices of tomatoes and onions on a cold serving plate, alternating them and slightly overlapping. Pour the dressing over all. Sprinkle with the basil, and serve.

- Char bell pepper over gas flame or in a broler until blackened all over.
- Enclose in a paper bag and let stand 10 minutes.
- Peel and seed; coarsely chop.
- Combine bell pepper and next 5 ingredients ina food processor.
- Blend until almost smooth.
- Transfer to a medium bowl.
- Mix sun dried tomatoes, 3/4 cup water, cream, vinegar and lemon juice in food processor.
- With machine running, add oil; blend until almost smooth.
- Whisk sun dried tomato mixture into bell pepper mixture.

Steps:
- With food processor running, drop shallots and garlic through feed tube and process until finely chopped.
- Stop machine; add sun-dried tomatoes, olives, vinegar, thyme, salt and pepper; process until finely minced.
- With machine running, slowly pour olive oil through feed tube and process until smooth.
- Adjust seasonings and use immediately or cover and refrigerate.

Stir in the additional cheese. The dressing keeps, covered and chilled, for about 1 week.
