Blue Cheese Spinach Dip with crispy bacon is the perfect warm and creamy appetizer served with a toasty baguette for parties or game day!

1 tbsp olive oil
1 cup onion (thinly sliced)
4 cloves garlic (minced)
4 cups baby spinach
2 cups sour cream
8 oz cream cheese
1 cup blue cheese crumbles
4 slices bacon (cooked and crumbled)
½ tsp ground black pepper
½ tsp salt
1 tbsp chives (chopped)

Steps:

  • Preheat oven to 375°F.
  • Add the olive oil to a large skillet over medium heat.
  • Once warm, add the onions and sauté 4-5 minutes.
  • Toss in the garlic and sauté for an additional minute.
  • Add the baby spinach and cook until wilted.
  • Add the sour cream, cream cheese, blue cheese crumbles, bacon, salt, pepper and chives to a large mixing bowl.
  • Mix well then add the sauteed onions, garlic and spinach.
  • Spoon the dip into an oven safe baking dish.
  • Place in the oven and bake for 15 minutes.

This is an amazing appetizer and very decadent. Serve with handmade style potato chips, kettle potato chips or crackers that are sturdy enough to scoop up the mixture without crumbling. Creamy dreamy Blue Cheese makes it yummy any way you dunk it!

Number Of Ingredients 9

1 tbsp (15 mL) GAY LEA - Salted Butter
1 1/4 cups (300 mL) onions, or shallots, thinly sliced
4 cups (1 L) spinach, coarsely chopped
3/4 cup (175 mL) blue cheese, Canadian, crumbled
3/4 cup (175 mL) GAY LEA - Original Sour Cream
1/2 cup (125 mL) light mayonnaise
1/4 tsp (1 mL) salt
1/4 tsp (1 mL) pepper
1 pkg (220 g) handmade style chips, or kettle

Steps:

  • In a large skillet, melt butter over medium heat; add onions and cook, stirring frequently for 5 minutes or until onions are tender.
  • Cover; reduce heat to low and cook, stirring occasionally, for 15 minutes or until golden brown.
  • Increase heat to medium; add spinach and stir 2 to 3 minutes; remove from heat.
  • In a medium bowl, combine Canadian Blue Cheese, sour cream and mayonnaise; mash with back of wooden spoon until cheese pieces are desired consistency.
  • Stir in onion mixture, salt and pepper.
  • Cover and refrigerate for 1 hour or up to 1 day.

SPINACH BLEU CHEESE DIP

This spinach dip is a bit different than most, because of the bleu cheese which I think gives it a wonderful flavor. Prep time does not include overnight chilling time.

8 ounces nonfat cottage cheese
8 tablespoons plain nonfat yogurt
4 tablespoons skim milk
1 (10 ounce) package frozen spinach, thawed and squeezed of excess moisture
3 ounces blue cheese, crumbled
1 teaspoon white wine worcestershire sauce
1 loaf round pumpernickel bread (for "bowl", and dipping)

Steps:

  • Combine cottage cheese, yogurt and skim milk in a blender or food processor.
  • Process until smooth.
  • Add the remaining ingredients (except bread) and process until thoroughly combined.
  • Taste, and adjust amount of bleu cheese and worcestershire sauce to your preference.
  • Pour into a bowl and chill in the refrigerator for several hours or overnight to allow dip to thicken and flavors to mellow.
  • Hollow out a round loaf of pumpernickel bread (making a"bowl"), leaving at least 1/2 inch thick on bottom and sides of loaf.
  • Cut up the bread"insides" that you removed from the loaf into cubes/chunks for dipping.
  • Fill the bread"bowl" with the chilled dip to serve.
  • *You can add more bleu cheese and/or worcestershire sauce to your taste.

1/4 teaspoon salt

10 ounces frozen spinach, drained well and chopped
2 ounces pimento peppers, drained
1 medium onion, chopped and sauteed
1 cup 2% milk
1/2 teaspoon garlic powder
1/8 teaspoon salt
1/2 teaspoon pepper
1 cup Daisy Brand Sour Cream

Steps:

  • 1.Mix all of the ingredients, except for the sour cream, in a large bowl.
  • 2.Microwave on low heat, stirring often, until the cheese melts and the mixture is smooth.
  • 3.7-10 minutes before serving, stir in the sour cream.

This recipe doesn't contain mayo or sour cream like most, so it's very cheesy and very delicious. I'm asked for the recipe every time I make it. For those who don't want a strong cheese like Cheddar, you can replace it with anything you like or even leave it out altogether. I like adding the Cheddar because it adds color and a little more flavor.

1 tablespoon olive oil, divided
1 small onion, finely chopped
2 cloves garlic, minced
2 (10 ounce) packages frozen spinach - thawed, drained, and chopped
½ cup milk
6 ounces cream cheese
½ cup shredded mozzarella cheese
¼ cup shredded Cheddar cheese
2 dashes Worcestershire sauce
salt and ground black pepper to taste
½ cup shredded mozzarella cheese

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Grease a 1 1/2-quart shallow baking dish with 1 teaspoon olive oil.
  • Heat 2 teaspoons olive oil in a large pot over medium heat. Cook and stir onion and garlic in hot oil until lightly browned, 4 to 7 minutes. Add spinach and simmer until spinach is hot, about 5 minutes. Drain any liquid from the mixture and transfer to a bowl.
  • Pour milk into pot and return pot to medium heat. Melt cream cheese into the milk; cook and stir together about 3 minutes. Return spinach mixture to pot with 1/2 cup mozzarella cheese and Cheddar cheese; stir to combine. Season the mixture with Worcestershire sauce, salt, and pepper. Pour the mixture into the prepared baking dish and top with 1/2 cup mozzarella cheese.
  • Bake in preheated oven until bubbly and golden brown on top, 20 to 25 minutes.
