Southern Fried Quail are a delicacy straight out of my childhood. Simply seasoned, deep fried, and served with cheese grits on the side for an authentic southern dinner.

8 whole quail
Salt
Black pepper
1 cup All-purpose flour
2 cups Peanut oil (for frying)

Steps:

  • Rinse the quail and pat dry thoroughly with paper towels.
  • Generously season each bird with salt and pepper both inside and out.
  • Place quail in a pan and sprinkle over a generous amount of flour, turning the quail in the flour to thoroughly coat the birds.
  • Meanwhile, in a well-seasoned black iron skillet, add enough oil to cover the pan to a depth of about 1 inch.
  • Bring the oil to frying temperature (about 325) over medium-high heat.
  • Add prepared quail to the hot oil and fry 4 to 5 minutes on each side until golden brown all over.
  • Remove to a paper towel lined plate to drain.

ACHIOTE MARINATED QUAIL

3/4 cup or 5.5 ounces achiote paste
1 bottle or 8 ounces birch beer or root beer
1/4 cup cider or seasoned rice wine vinegar
1 teaspoon cumin seed, toasted and ground
1teaspoon coriander seed, toasted and ground
1 tablespoon Mexican oregano
1 teaspoon salt
Pepper
1/4 cup honey
1 teaspoon smoke oil or liquid smoke
1/4 cup olive oil
8 whole quail, Bobwhite preferred or European style, partially boned

Steps:

  • Whisk all marinade ingredients together and marinate quail for at least one hour or up to 12 hours. Grill over hot coals or in grill pan. May be browned and baked in a preheated 350 degree oven for 20 to 30 minutes. Pull thigh away from breast of bird to check doneness?.no red should be visible or pierce breast with fork or toothpick ?.juices should run clear. These are small birds and will dry out if overcooked.

BARBECUED TEXAS-STYLE QUAIL

6 quail, dressed
4 ounces (1 stick) butter, melted
1 cup spicy rub, recipe follows
6 whole jalepenos
6 strips bacon
Butter, for basting
1 cup Adams Steak Seasoning
1 pinch (go easy) chili powder
1 pinch (go real easy) red chile flakes
2 pinches garlic powder, or to taste

Steps:

  • Rub the quails with butter and apply a light coating of the seasoning to the bird. For a real Texas taste, place a jalapeno pepper in the center of the bird. Wrap a strip of bacon around the breast of the bird and secure with a toothpick. Cook over an open fire or hot coals. The more smoke, the better the bird! As the birds cook, they should be basted with butter to keep them from drying out.;
  • Mix the above in a small bowl.

4 cups buttermilk
1/4 cup hot sauce
2 teaspoons chopped garlic
2 teaspoons black peppercorns
1 teaspoon cayenne pepper
4 whole quails, boneless and butterflied
Oil, for frying
2 cups all-purpose flour
2 cups self-rising flour
1 1/2 tablespoons kosher salt
1 tablespoon black pepper
1 tablespoon white pepper

Steps:

  • For the brine: Combine the buttermilk, hot sauce, garlic, peppercorns and cayenne pepper in a large bowl. Submerge the quails in the brine and refrigerate for 12 hours.
  • Heat the oil to 300 degrees F in a deep pot.
  • Combine the flours, salt, black pepper, white pepper and cayenne pepper in a large bowl. Remove the quail from the brine and coat in the flour mixture. Fry the quail, 4 to 5 minutes.

6 shaved slices fresh truffle
6 medium sized shallots, peeled
6 whole quails
2 teaspoons kosher salt
1 teaspoon freshly ground pepper
2 tablespoons olive oil
Serving suggestion:
Toasted Quinoa with Prosciutto, recipe follows
Date and Fig Chutney, recipe follows
1 tablespoon unsalted butter
1 tablespoon olive oil
1/2 cup finely chopped white onion
1 shallot, finely chopped
1 clove garlic, finely chopped
1 cup quinoa, rinsed well, see Cook's Note*
1 teaspoon kosher salt
3 cups water
1/2 cup sliced prosciutto, julienned, see Cook's Note**
1 tablespoon chopped fresh thyme leaves
1 teaspoon lemon zest
3/4 cup apple cider
3/4 cup white wine vinegar
1/2 cup brown sugar
1 1/2 cups dried dates, chopped
1 Granny Smith apple, peeled, cored and cubed
3 cloves garlic, finely chopped
2 teaspoons grated fresh ginger
3 fresh figs, chopped
1 teaspoons paprika
1/2 teaspoon ground cardamom
1/2 teaspoon kosher salt

Steps:

  • Preheat the oven to 400 degrees F.
  • Place 1 truffle shaving and 1 shallot into the cavity of each quail. Season the quail with salt and pepper.
  • Heat the olive oil over high heat in a large heavy bottomed ovenproof skillet. Place the quail in the skillet breast side down and cook until the skin is golden brown in color. Turn the quail and cook for 3 more minutes. Place the skillet directly in the oven and roast for approximately 10 minutes. Let the quail rest for 5 minutes before serving.
  • Heat the butter and olive oil in a skillet over medium heat.
  • Add the onion, shallot and garlic and cook until translucent. Add the quinoa and toast until golden, stirring to brown evenly. Add the kosher salt. Add 1 cup of water and simmer the quinoa until all the water is absorbed. Add remaining 2 cups of water, 1 at a time, simmering until quinoa is tender.
  • Remove from the heat and stir in the prosciutto, thyme and lemon zest.
  • Yield: 6 servings
  • Preparation Time: 15 minutes
  • Cooking Time: 40 minutes
  • Place the cider, white wine vinegar and brown sugar together in a stainless steel pot.
  • Bring to a boil, stirring until the sugar has dissolved.
  • Reduce the heat to medium and add in the dried dates, Granny Smith apple, garlic and ginger. Cook for 15 minutes or until most of the liquid has been absorbed.
  • Stir in the fresh figs, paprika, cardamom and kosher salt. Cook for 5 minutes.
  • The chutney will keep for several weeks stored in the refrigerator in an airtight container.

GRANDMA'S QUAIL

8 quail
garlic powder to taste
salt and ground black pepper to taste
1 cup all-purpose flour
¼ cup shortening
¼ cup water
½ cup sour cream

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Heat the shortening in a large heavy-bottomed skillet over medium-high heat.
  • Season the quail with the garlic powder, salt, and pepper to taste. Place the flour in a shallow dish; roll the quail in the flour.
  • Working in batches, brown the quail on all sides in the preheated shortening. Place the browned quail in a large roasting pan or casserole dish; pour the water over the quail and cover with aluminum foil.
  • Bake in the preheated oven for 1 hour, or to an internal temperature of 165 degrees F (75 degrees C), taken in the thickest part of the thigh. Spoon the sour cream over the quails, allow the sour cream to melt before serving.

  • Prepare the dredge: In a medium bowl combine flour and seasonings together. In a separate bowl beat one egg, mix together with buttermilk and water.
  • Dredge each quail piece in the flour mixture, then coat in buttermilk mixture , then dredge once more in the flour mixture. Set the dredged quail pieces aside and allow to come to room temperature, about 25 minutes.
  • In a medium skillet add vegetable oil for frying. I added about 1/2″ of oil to my cast iron skillet. Heat the oil over medium heat until oil is hot for frying.
  • Add the quail pieces in batches to avoid over crowding the pan. Fry on each side about four minutes until golden brown. Remove cooked pieces and set on a paper towel lined pan or plate to allow excess oil to drain.
