BALSAMIC CHICKEN PIZZA WITH BLUE CHEESE AND SPINACH
Looking for a unique gourmet pizza? Balsamic chicken pizza with blue cheese and spinach on an olive oil and garlic base might be just the thing!

Steps:
- Combine marinade ingredients in a large ziploc bag with chicken breasts. Marinate for at least an hour or overnight if possible.
- Preheat oven to 425 degrees.
- Preheat skillet to medium high heat or indoor grill (like The Griddler) to high heat. Cook chicken breast 7 minutes per side. Let rest for 5 minutes and then dice into small bite-sized pieces.
- Combine honey and vinegar in a medium bowl and add diced chicken. Toss to coat.
- Brush flatbread or pizza crust with olive oil and minced garlic (make sure the garlic is evenly distributed). Top with slices of the mozzarella and the chicken.
- Bake pizza for 10 minutes. Remove from oven, add spinach, and bake for an additional 5 minutes.
- Top with blue cheese and drizzle liberally with balsamic reduction. Enjoy!

- Preheat oven to 450°. In a large skillet, heat butter and 1 tablespoon oil over medium heat. Add mushrooms and onion; cook and stir until tender, 4-6 minutes. Add garlic; cook 1 minute longer. Add spinach; cook and stir over medium-high heat until wilted, 1-2 minutes., Stir in chicken, salt and pepper. Unroll and press dough onto bottom of a greased 15x10x1-in. pan. Spoon chicken mixture over dough. Bake until crust is lightly browned, 14-16 minutes., Sprinkle with cheese and bacon; drizzle with remaining oil. Bake until heated through, 3-5 minutes. Freeze option: Prepare pizza as directed, decreasing bake time to 10 minutes. Top with cheese and bacon; drizzle with remaining oil. Cool. Securely wrap and freeze partially baked pizza. To use, unwrap pizza; bake until crust is lightly browned and toppings are heated through, 15-20 minutes.

- Heat oven to 200C/180C fan/gas 6 and place a baking sheet inside to get hot. Heat the oil in a large non-stick frying pan and cook the mushrooms and garlic, stirring frequently, until softened. Add the spinach, a handful at a time, and cook until just wilted but not soggy. Add the onion and stir it through, then turn off the heat.
- For the base, tip the flour and baking powder into a bowl, and stir in the yogurt mixture with the blade of a cutlery knife to make a ball of soft dough. Dust a sheet of baking parchment with flour, put the dough on top and press with floured hands to make a flat 20cm round. - Heat oven to 450°F.
- Place pizza crust on baking sheet. Combine ricotta, dressing, Parmesan and ground red pepper; spread onto pizza crust to within 1/2 inch of edge. Bake 5 min.

- Preheat oven to 350 degrees F (175 degrees C).
- Stir cream cheese and blue cheese together in a bowl. Beat egg in a separate bowl. Pour bread crumbs into a third shallow bowl.
- Spread cheese mixture over each chicken piece. Roll each piece of chicken around filling; dip into egg and press into bread crumbs until coated. Arrange chicken rolls on a baking sheet or baking pan.

- Help the pizza dough rise. Ideally, take your pizza dough out of the fridge a few hours before, or the morning of, making this chicken and spinach pizza. It will stretch really easily if it’s at room temperature. If you have a window with sun that shines in, place the bag of dough there to watch it rise very quickly. If you’re short on time, allowing at least 30-60 minutes for fresh ready made pizza dough to rise ahead of time is ideal. And if you’re reading this 5 minutes before making the pizza, know you can make the pizza from cold dough, it just won’t stretch as easily or be as large of a pizza.
- Cook the bacon. Preheat the oven to 400 degrees F. Line a rimmedbaking sheet with parchment paper, then add the bacon. Bake bacon in the ovenfor 10 minutes, then flip it over and bake for another 5-10 minutes to yourdesired level of crispness. Pat dry, let it cool, then dice into 1” chunks.
- Prep for baking the pizza. Preheat the oven to 450 degrees F. Set out a large rimmed baking sheet lined with parchment paper. Brush half of the olive oil on the parchment paper. Add half the flour to the center of a large butchers block or flat surface. Put the other half off to the side.
- Stretch the pizza dough. Roll the raw premade pizza dough in the flour in the center of your work surface. Coat it all over in a light dusting of the flour. Begin stretching the ready made pizza dough by pinching the outside in a circular motion to spread out the crust. Then you can alternate between pinching the center of the dough with your fingers, pressing it out on your work surface, and using your knuckles to pull the dough from underneath in an outward motion. You’ll want to pick up some extra flour as you stretch the dough - which will help it hold a larger size. I don’t aim for a perfect square or circle - the most beautiful pizzas are au natural. - Place a pizza stone on the bottom rack of your oven and preheat to 425. Sprinkle parchment paper with corn meal and roll out pizza dough to desired thickness. Transfer crust to pizza stone and bake for 5 minutes. Remove from oven.
