BLUE DEVILED EGGS

Steps:
- Place 6 eggs in a pot and cover with cold water by 1 inch. Bring to a boil, then reduce the heat and simmer 10 minutes. Drain and run under cold water. Peel the eggs and halve lengthwise; scoop out the yolks. Put the whites in a bowl and toss with 1/2 cup hot sauce (such as Frank's) and 1/4 cup water; refrigerate 1 hour. Mash the yolks with 1/3 cup mayonnaise and 1/4 cup crumbled blue cheese; season with salt and pepper. Drain the whites, pat dry and fill with the yolk mixture. Top with more blue cheese, sliced celery and more hot sauce.
FRIED EGG, PROSCIUTTO, FRISEE AND BLUE CHEESE ON CIABATTA
Steps:
- Whisk together vinegar, mustard, 1/4 teaspoon salt, and 1/4 teaspoon pepper in a medium bowl. Whisk in the olive oil until combined. Fold in the crumbled blue cheese. Add the frisee and toss well to coat the frisee with the dressing. Season with more black pepper, to taste.
- Heat a little of the butter in a small nonstick skillet over medium heat. Gently crack an egg into a small dish, and then add to the pan with the butter and cook until the white is set and the yellow is slightly firm, about 2 minutes. Season with salt and pepper and then gently turn the egg over and continue cooking for 1 minute. The yolk should still be slightly runny. Repeat with remaining butter and eggs.
- Place the bread on a flat surface and top each with 1/4 of the frisee mixture, followed by 2 slices of prosciutto, and then an egg. Place a thin slice of blue cheese on top of the egg and garnish with ground black pepper. Place another piece of bread on top. Repeat to make a total of 4 sandwiches.

- Melt butter in frying pan over medium heat. Add bacon and heat until sizzling. Meanwhile, whisk eggs and cream together in a small bowl. Pour over bacon.
- Allow to cook until firm enough to flip. Cook until the underside is firm.
- Sprinkle 1 1/2 Tbls. of blue cheese over half the omelette and fold the other half of the omelette over the top. Sprinkle remaining blue cheese over the top and sprinkle with salt and pepper.

Steps:
- Preheat oven to 375°F.
- Cut each slice of bread into four triangles and then dip into melted butter.
- Arrange dipped slices of bread in a greased 13" x 9" oven-proof casserole dish.
- Scatter over with crumbled blue cheese and strips of ham.
- In a bowl, whisk eggs together with milk, salt and pepper and pour over the bread, ham and cheese.
- Bake in preheated 375 F oven for 30 to 35 minutes or until risen and top is golden brown.
- Serve while still hot.

- Heat 1 1/2 teaspoons butter in 10-inch nonstick skillet over medium heat. Add 3 slices Canadian bacon. Sauté 1 minute and turn. Break one egg over each piece of bacon. Sprinkle with 1/4 teaspoon curry powder. Sprinkle half of the cheese and half of the onions over eggs. Season with salt and pepper and cover. Reduce heat to low. Cook until white is just set, about 4 minutes. Using spatula, transfer to plate and keep warm. Repeat process with remaining ingredients.

- Crack eggs into a medium mixing bowl. Add milk, salt, and pepper. Whisk till combined and pale yellow. There should be a few air bubbles formed on the surface from whisking.

- Heat the olive oil in a pan, peel and mince shallots, sauté them for 5 minutes until a bit caramelized.
- Bake in the oven for 8 to 10 minutes at 180 °C / 350°F. Often check if cocottes are cooked, ovens are very different from one to the other. As soon as the egg white is set, the egg yolk still soft, take out of the oven and serve immediately.
