1/3 cup mayonnaise
1 garlic clove, minced
1/4 teaspoon grated lemon zest
1/4 cup all-purpose flour
3/4 cup fat-free milk
1 cup panko bread crumbs
2 medium yellow summer squash, cut into 1/4-inch slices
2 jalapeno peppers, seeds removed and cut into 1/4-inch slices
Cooking spray
8 pita pocket halves
8 romaine leaves
8 slices tomato
16 cooked bacon strips, halved

Steps:

  • In a small bowl, mix the mayonnaise, garlic and lemon zest. Cover and chill until serving., Place flour, milk and bread crumbs in three separate shallow bowls. Coat squash and jalapeno slices with flour, then dip in milk and coat with bread crumbs. Place on baking sheets coated with cooking spray. Spritz vegetables with additional cooking spray., Bake at 475° for 12-14 minutes or until golden brown, turning once., Spread mayonnaise mixture inside pita halves; fill with lettuce, tomatoes, bacon and breaded vegetables. Serve immediately.

6 cups torn romaine lettuce
12 slices OSCAR MAYER Center Cut Bacon, cut into 1-inch pieces, cooked and drained
8 cherry tomatoes, quartered
2 green onions, sliced
1 large carrot, shredded
1/2 of a medium cucumber, sliced
6 pita breads
6 Tbsp. KRAFT Peppercorn Ranch Dressing

Steps:

  • Toss all ingredients except pita breads and dressing until well blended.
  • Cut top 1/3 off each pita bread; discard top or reserve for another use.
  • Spread inside pocket of each pita bread with 1 Tbsp. of the dressing; fill evenly with the vegetable mixture.

This is a simple variation of a Weight Watcher recipe that is low fat, low cal, recipe the whole family can enjoy. You can use fat-free ingredients if you want but I find it more flavorful and less "diety" using low fat.

1 cup low-fat mayonnaise
16 ounces low-fat cream cheese, softened
1/2 red bell pepper, finely chopped
1 1/2 teaspoons black pepper
1 cup lettuce, shredded
3 slices turkey bacon, cooked crisp,crumbled
2 roma tomatoes, chopped
1/4 cup red onion, chopped
1/3 cup low-fat shredded cheddar cheese
6 4 inch pita bread

Steps:

  • Beat mayonnaise, cream cheese and pepper until smooth.
  • Fold in finely chopped red bell pepper.
  • Slice pita bread and spread cream cheese mixture inside.
  • Top with lettuce, bacon, tomatoes, onions and cheese.
  • Enjoy flavorful healthy eating.

  • Press the tofu for at least 20 minutes and then slice into pieces that are just a little smaller than 1/4 inch thick. Place in a shallow dish or Tupperware container and set aside.
  • In a medium sized bowl mix together the Tamari, water, maple syrup, smoked paprika, garlic powder, curry powder, onion powder, red pepper flakes and salt. Pour over the tofu slices and make sure that they are all covered with the marinade. Place in the refrigerator for at least 20 minutes, 1-2 hours is idea. If you want you can occasionally spoon the marinade over the tofu to make sure every part gets covered.
  • Heat a large pan over medium heat and coat with olive oil, about 2 teaspoons. Place the tofu slices in and let cook until one side is browned, about 5 minutes. Flip tofu over and cook another 5 or so minutes. I like to spoon some extra marinade onto the tofu while it’s cooking.
  • Let tofu cool for a few minutes, and then assemble your pitas. Spread with vegan mayo and then stuff with lettuce, tomato and a few tofu slices. Enjoy!
