2 cups diced cooked chicken (such as rotisserie chicken)
1 ½ cups cooked rice
2 cups diced cooked ham
2 tablespoons chopped onion
1 10.5 ounce can condensed cream of chicken soup (check label to make sure it's gluten free, if necessary)
½ cup mayonnaise
2 tablespoons melted butter
4 ounces about 1 cup shredded Swiss cheese

Steps:

  • Preheat oven to 350F (180C).
  • Spray a 2-quart casserole dish with cooking spray and set aside.
  • In a large bowl, combine first 7 ingredients.
  • Place chicken mixture in prepared casserole dish and top with shredded cheese.
  • Bake, uncovered, for 30 minutes (or until heated through and bubbly).

2 packages (6.2 ounces each) quick-cooking long-grain and wild rice
4 cups water
4 thin slices baked ham, cut into 1-inch strips
1 1/2 pounds chicken breast tenders (not breaded)
1 jar (16 ounces) Parmesan and mozzarella cheese pasta sauce
1/2 teaspoon paprika
1 cup finely shredded Swiss cheese (4 ounces)
1 tablespoon chopped fresh parsley

Steps:

  • Heat oven to 350°. Spray rectangular baking dish, 13x9x2 inches, with cooking spray. Mix rice, contents of seasoning packets and water in baking dish. Place ham over rice. Place chicken tenders over ham. Spoon pasta sauce over each chicken tender; sprinkle with paprika.
  • Cover with aluminum foil and bake 40 minutes. Uncover and bake about 20 minutes longer or until rice is tender and chicken is no longer pink in center. Sprinkle with cheese. Bake uncovered about 5 minutes or until cheese is melted. Sprinkle with parsley.

2 tablespoons 2% milk

Steps:

  • Flatten chicken to 1/2-in. thickness; set aside. In a shallow bowl, combine the flour, salt and pepper. In another shallow bowl, whisk egg and water. In a third bowl, combine bread crumbs and almonds. Coat chicken with flour mixture, then dip in egg mixture and coat with bread crumb mixture., In a large skillet, cook chicken in oil over medium heat for 5-6 minutes on each side or until a thermometer reads 170°. Top with ham and cheese; cover and cook 1-2 minutes longer or until cheese is melted., Meanwhile, in a small saucepan, combine the soup, sour cream, milk, pepper and salt. 3 cups Chicken Broth ((or 3 cups Water + 3 tsp Chicken Base))
1 teaspoon garlic powder
1/2 teaspoon salt
1 lb chicken breasts, skinless, boneless ((raised w/o antibiotics))
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon black pepper

4 slices Smoked deli ham
4 slices Swiss Cheese ((or gruyere))

Steps:

  • Preheat oven to 400 F degrees
  • Add all rice ingredients to casserole dish. Stir to combine, then tightly cover with a lid or aluminum foil. Bake in oven for 20 minutes.
  • While the rice cooks, slice chicken breasts from the side to create 2 thin breasts. Season with the salt, pepper, garlic powder, and oregano. Lay the chicken flat on a plate or cutting board. Layer 1 slice of ham folded on top of the chicken. Layer the swiss cheese slice folded on top of the ham.
  • Make the breadcrumb topping by mixing the ingredients together in a small bowl
  • After 20 minutes, take the rice out and add the chicken slices layered to the top in a line. Cover and bake for another 20 minutes.
  • Remove the cover and sprinkle the breadcrumb topping on top. Put it back in the oven with the broiler setting on low for 5 minutes to brown the topping. Watch to make sure it doesn't burn.
  • To serve, use a spatula to scoop out the rice, chicken and topping. Enjoy!

6 chicken thighs
1 ½ cups blue cheese dressing (such as Ken's®)
cooking spray (such as Pam®)
3 tablespoons extra-virgin olive oil, divided
2 stalks celery, chopped and leaves reserved
⅓ large onion, chopped
2 cloves garlic, chopped
2 cups white rice
2 (14.5 ounce) cans chicken broth
3 tablespoons red wine vinegar
½ teaspoon Cajun seasoning blend (such as Tony Chachere's®), or to taste
1 ½ cups panko bread crumbs
¼ cup Parmesan-Romano cheese blend

Steps:

  • Place chicken thighs in a large resealable bag; pour in blue cheese dressing. Coat chicken with dressing, squeeze out excess air, and seal the bag. Marinate in the refrigerator for 4 hours to overnight.
  • Preheat oven to 420 degrees F (216 degrees C). Spray a 9x13-inch baking dish with cooking spray.
  • Heat 2 tablespoons olive oil in a skillet over medium heat; cook and stir celery in the hot oil for 1 minute. Add onion; cook and stir until onion is glossy and softened, about 5 minutes. 1 cup Progresso™ chicken broth (from 32-oz carton)
1/2 cup milk

2 cups cooked rice
1 1/2 cups shredded Swiss cheese (6 oz)
3/4 cup Progresso™ Italian style bread crumbs
1 tablespoon melted butter
Chopped fresh parsley for garnish, if desired

Steps:

  • Heat oven to 400°F. Lightly grease 10-inch round baking dish with olive oil; set aside.
  • In 10-inch skillet, heat 2 tablespoons olive oil over medium-high heat. Add onion; cook until tender and translucent, stirring occasionally. Add flour; stir to make a roux. Cook roux 1 to 2 minutes or until lightly golden. Gradually beat in broth with whisk, followed by milk, and simmer until slightly thickened into a gravy.
