FOOD PROCESSOR FRENCH BREAD

Food Processor French Bread image

This is a very simple and quick French Bread. It has a finer texture and more of a chewy crust than what you get from the bakery. I found this in an Bon Appetite years and years ago. I sometimes make rolls rather than loaves. With this coming together so quickly you can easily make large batches; with two students helping to shape the rolls I've made 6 batches, start to finish in under two hours. Prep time doesn't include rising time.

Time 36m

Yield 2 loaves, 12 serving(s)

Number Of Ingredients 7

1/2 cup water, 110-115 degrees

  • Set loaves or rolls in a warm spot to rise, rise for 40 - 60 minurtes for loaves, 30- 40 minutes for rolls, depending how warm your room is.
  • As soon as you set you bread to rise, Preheat oven to 450 degrees, after 20 minutes place a shallow pan of warm water on the lower rack of you oven.
  • Bake for 10 minutes, lower temperature to 400 degrees bake 15 minutes more, check rolls at 10 minutes.
  • With the oven I have now, I have to remove the loaves from the pan turn them over and bake for 5 minutes more to get the bottom crusty, you may have to also.

HOMEMADE YEAST ROLLS

Homemade Yeast Rolls image

Provided by Valerie Bertinelli

Categories     side-dish

Time 2h45m

Yield 30 rolls

Number Of Ingredients 9

1 1/2 sticks (12 tablespoons) unsalted butter
1/4 cup sugar
3/4 cup whole milk, at room temperature
Three 1/4-ounce packets active dry yeast
5 cups all-purpose flour, plus extra for dusting
2 teaspoons kosher salt
3 large eggs
Olive oil, for greasing
Flaky sea salt, for sprinkling

Steps:

  • Preheat the oven to 400 degrees F.
  • Melt 1 stick of the butter in a small saucepan, then bring to a boil and cook until there are light brown specks in the butter, 3 to 4 minutes. Pour the browned butter into a small bowl and whisk in the sugar until dissolved. Whisk in the milk; the mixture should be lukewarm, around 110 degrees F. Next, whisk in the active dry yeast. Set aside until foamy, 5 minutes.
  • In a large bowl, mix together the flour and salt. Make a well in the center, add the eggs and whisk the eggs together with a fork. Pour the browned butter mixture into the well. Using a fork, gradually incorporate the flour into the liquids. Continue stirring just until a shaggy dough comes together. Transfer to a lightly floured work surface and knead with floured hands until the dough becomes very smooth, about 5 minutes.
  • Lightly grease a large bowl with olive oil. Add the dough, turning it once to coat. Cover with a clean kitchen towel and let rise until doubled in size, about 1 hour.
  • Punch down the dough. Melt the remaining 1/2 stick of butter and use half of that to grease the bottom and sides of a 9-by-13-inch baking dish. Divide the dough into thirds and divide each third into 10 balls. To create smooth tops: roll each ball between your palms, and then stretch the dough across the top of the ball, pinching the excess at the bottom.
  • Place the dough balls, seam-side down, in the prepared baking dish -- 5 to the short side, 6 to long side. Cover and let rise until slightly puffy, 30 minutes. Brush the tops with the remaining butter and sprinkle generously with flaky sea salt.
  • Bake until the tops are golden brown and the rolls sound hollow when lightly tapped, 15 to 17 minutes. Serve warm.

Categories     side-dish

Time 4h15m

Yield 24 rolls

Number Of Ingredients 9

1/2 cup sugar, plus a pinch
1/2 cup warm water (105 to 115 degrees F)
2 packages active dry yeast
2 teaspoons salt
1/3 cup solid vegetable shortening
1 cup cold water
1 egg, well beaten
4 1/2 cups all-purpose flour
2 tablespoons butter, melted

Steps:

  • In a large bowl, add a pinch of sugar to the warm water. Sprinkle the yeast over the top and let stand until foamy, about 5 minutes. Stir to dissolve yeast. Beat in the remaining sugar, salt, shortening, cold water, and egg until well blended. On low speed, beat in 2 cups of flour and beat for 2 minutes. Beat in enough of the remaining flour, 1/2 cup at a time, to make soft dough. Place the dough in a well-greased bowl and turn to coat the dough. Cover with a towel and let rise until doubled in bulk, about 1 1/2 hours.
  • Punch the dough down and refrigerate for 2 hours. The dough will almost double in bulk. Grease 2 (9-inch) cake pans. Turn the dough out onto a floured surface. Pull off pieces of the dough, about a 1/4 cup each and shape into 24 rolls. Place 12 rolls, sides touching in each of the 2 prepared pans. Brush with butter. Let rise in a warm place for 1 hour or until doubled.
  • Preheat oven to 425 degrees F. Bake the rolls until well browned on the top, about 15 minutes. Transfer the pan to wire racks to cool for 5 minutes.

QUINCY'S YEAST ROLLS

Quincy's Yeast Rolls image

I've finally tried this recipe and tweaked it enough to get it reasonably close. These are the closest I've seen to my favorite rolls in places like Quincy's, Grandy's, etc. It's a nice soft squishy yeast roll, perfect with any meal. To clarify the directions since one reviewer mentioned that they had a problem with their first batch: Make sure that your machine's dough cycle includes the rising time! I thought everyone's did, but apparently not. (My own personal machine mixes up the ingredients and then there's a total rise time of a little over an hour (closer to 1.5 hours). So, if you think your ABM just mixes things up but doesn't allow for rising time, add a 2 hour (approx) rise time between steps 1 and 2. If your machine's dough cycle DOES have a built in rising time, then you're all set, and you can follow the instructions exactly, no need for extra rising time.

  • After dough cycle completes, remove and shape as rolls, placing them in a pan lined with parchment paper.

  • Brush tops with butter prior to baking (I use about 2 tbl spoon melted margarine).
  • Bake 20 to 25 minutes at 350 degrees until golden brown, on the highest rack possible in your oven.

FOOLPROOF WHOLE-WHEAT BREAD WITH YOUR VITAMIX BLENDER

Foolproof Whole-Wheat Bread With Your Vitamix Blender image

The VitaMix is great for making whole-wheat flour. Forget about buying the "dry blade" container -- the "wet blade" container works just fine, as long as you keep the quantity of wheat berries down to about a cup. This recipe comes from a friend in Texas, who used to be a professional baker. It is marvelous, and oh-so simple. Nothing beats the smell or taste of hot, whole-wheat bread!

Provided by hdjacobsen

Categories     Yeast Breads

Time 1h5m

Yield 2 Loaves

Number Of Ingredients 6

2 1/2 cups water
1/2 cup honey-molasses (adjust mix to taste)
2 tablespoons active dry yeast
5 cups whole wheat flour
1/2 cup wheat gluten
1 teaspoon salt

Steps:

  • Mix thoroughly water and honey-molasses, raise temperature to 108-112 degrees. Temperature is VERY important for proper yeast action.
  • Stir in yeast and set aside for 10-15 minutes for yeast to work. When ready, there should be at least a 1" topping of foam on the mixture.
  • While yeast is working, put a cup of whole wheat grain (i.e., the whole kernels or berries) in the VitaMix blender and grind for ONE MINUTE. Make sure the blender container is completely dry when this is begun. Put the wheat flour in a large mixing bowl. Repeat this process three more times. Note: I only have the "wet-blade" container, and is seems to do a marvelous job of making flour from grain but works best with smaller quantities of grain. This is why I grind one cup at a time. I have found that 4+ cups of whole wheat berries yields about five cups of whole-wheat flour.
  • Add gluten and salt to the whole-wheat flour and stir briefly to blend the dry ingredients.
  • Add yeast mixture and stir with a wooden spoon or spatula. When ingredients are lightly mixed, dump everything out onto the kitchen counter, in a spot that has been cleaned and lightly oiled. Note: I hand-knead dough, so I use rubber or light plastic gloves to keep the dough off my hands -- and out of my rings!. If you have a mixer with dough hooks, so much the better.
  • Knead the dough for five minutes, adding small amounts of water to keep the dough just barely on the sticky/gooey side. Put the dough back in the mixing bowl. It's hard to explain exactly what the consistency should be, but I try to keep the mixture sticky and quite moist. To add water, I make a depression in the dough and put in the water, then fold the dough over on itself. Kneading is fun! At least I think so. I flatten the dough with the heals of my hands, fold it end-for-end, repeat.
  • Put about two inches of hot water (110-120°F, decidedly warm to the touch, but not uncomfortably warm) in the sink and "float" the mixing bowl with dough in the sink. (It won't float with that little water, but you get the idea.) Cover the dough with a light cloth. The warm water will keep the dough warm and moist while it raises. Let dough raise about 30 minutes, or until it doubles in size.
  • Dump the dough back onto the counter top and knead again for two or three minutes. This will reduce the size of the dough as the air pockets are pressed out. Divide dough into two equal lumps, and form into the shape of loaves to fit bread pans. (Note: If you want to freeze half the dough for later use, now is the time to do it.) Oil and lightly flour the pans if they do not have a non-stick surface. Place each lump into a warmed bread pan, put these on the counter, and cover with a dry cloth. Note: I generally warm the pans by floating them in the sink, after I've removed the bowl in step 7. Allow the dough to rise a second time, which usually takes about a half-hour. The bread is ready when it has raised to about a half-inch above the height of the bread pan.
  • Cook at 360°F for about 35 to 40 minutes. When done, remove the bread from the bread pans and let cool (if you can stand the wait!) for about 10 to fifteen minutes before cutting and eating. Nothing is better smelling and tasting than fresh, hot, whole-wheat bread!
  • One final note: We live at an altitude of 4000 feet. The lower air pressure makes yeast work a little more quickly, and generally more liquid and a higher cooking temperature is required. However, this recipe was originally used in Texas, so it's probable no modifications are necessary.

EASY YEAST ROLLS RECIPE

Easy Yeast Rolls Recipe image

An easy recipe for the best, fluffy, homemade yeast rolls, with simple ingredients like all-purpose flour and sweetened with honey!

Provided by Kelly Anthony

Categories     Appetizer

Time 2h48m

Number Of Ingredients 9

two 9" cake pans
pastry brush
2 1/2 teaspoons (or 1 package) active dry yeast
3 large eggs (room temperature, separated)
1 cup whole milk, room temperature
1/2 cup unsalted butter, room temperature - cut into tablespoons
1/3 cup + 1 tablespoon honey
5 1/2 cups all-purpose flour (separated)
2 teaspoons fine sea salt

Steps:

  • Add a 1/4 cup warm water to a large bowl or the bowl of a stand mixer fitted with the dough hook attachment. Sprinkle in yeast, gently stir and allow to sit for 5 minutes or until foamy.
  • In a small bowl, beat 2 large eggs and set aside. Also, have 1 cup of flour set aside in a small bowl.
  • Once the yeast is ready, add the room-temperature milk, butter, and honey, 4 1/2 cups of flour, salt, and the beaten eggs to the bowl. Mix on low speed until the dough comes together.
  • Increase the speed to medium-low/medium (speed 3 or 4 on a Kitchen Aid stand mixer), and knead for 5-7 minutes. Add the extra flour as needed, a tablespoon at a time to prevent the dough from sticking to the sides of the bowl. Otherwise, knead by hand adding flour as needed. Note, you may not need all of the extra flour. The dough is ready once it is soft to the touch and no longer super sticky.
  • Have ready a large, greased bowl. Form the dough into a ball and place it in the greased bowl. Loosely cover with plastic wrap and allow to rise in a warm area for 1 1/2-2 hours, until doubled in size.
  • Have ready a large floured work surface and two greased 9" cake pans. Punch down the dough and transfer to work surface. Using a knife or a bench scraper, cut the dough in half. Divide each half into 8 equal pieces and roll into a ball.
  • Place dough balls in pans, spacing evenly apart. Cover loosely with plastic wrap and allow to proof in a warm area once more, for another 45 minutes.
  • Preheat the oven to 375°.
  • To make the egg wash, whisk together the remaining egg and 1 tablespoon of water in a small bowl. Lightly brush the top of the rolls with the egg wash, and sprinkle with salt (preferably Kosher, if you have it).
  • Bake for 22 minutes, or until the rolls are cooked through and golden in color. Do not over bake. Place on a cooling rack for 10 minutes. Serve and enjoy.

  • Use some of the oil to grease the inside of a bowl. Place your ball of dough into the oil, then turn it so the oiled side is upwards (this helps the dough from drying out.) Cover the bowl with plastic wrap, waxed paper or a clean kitchen towel and place in a warm spot (80 degrees or so) to rise.
