No one can resist these buttery muffins bursting with juicy blackberries. They make a nice addition to any breakfast table. -Julee Walberg, Carson City, Nevada

Yield 1-1/2 dozen.

Number Of Ingredients 8

1/2 cup butter, softened
1-1/4 cups plus 1 tablespoon sugar, divided
2 large eggs
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup milk
2 cups fresh or frozen blackberries

Steps:

  • In a large bowl, cream butter and 1-1/4 cups sugar. Add eggs, one at a time, beating well after each addition. Combine the flour, baking powder and salt; gradually stir into creamed mixture alternately with milk. beating well after each addition. Fold in blackberries., Fill greased or paper-lined muffins cups two-thirds full. Sprinkle with remaining sugar. Bake at 375° for 20-25 minutes or until a toothpick inserted in the center comes out clean. Cool for 5 minutes before removing from pans to wire racks. Serve warm.

2 cups all purpose flour
2 teaspoons baking powder
1/2 cup sugar
1 stick melted unsalted butter
1 slightly beaten egg
3/4 cup whole milk
1 1/2 cups fresh blueberries
1/2 cup brown or white granulated sugar

Steps:

  • Preheat the oven to 350 °F. Grease a 12-cup muffin tin.
  • In a bowl, combine the flour, baking powder and sugar. In another bowl, combine butter, egg, and milk and mix well. Pour the wet ingredients into the flour mixture and with a spatula, stir until just combined. Do not beat or over mix; it's okay if there are lumps in the batter. Gently fold the blueberries into the batter.
  • Spoon the batter into the muffin tray, filling each cup about 2/3 full. Bake for 10 minutes and remove from the oven. Sprinkle the tops of the muffins with the granulated brown or white sugar and return the muffins to the oven to bake for an additional 10 to 15 minutes, until the tops are golden brown and a toothpick inserted into the center of a muffin comes out clean. Cool for about 10 minutes in the pan before turning the muffins out.

1 cup all-purpose flour
1 tablespoon sugar, plus
1 1/2 cups sugar
1 teaspoon baking powder
1 pinch salt
1/2 cup butter, softened
1/4 cup milk
1 quart fresh blueberries
2 cups water
vanilla ice cream or fresh cream, for serving

Steps:

  • Stir flour, 1 tablespoon sugar, baking powder, and salt together into a medium bowl.
  • Cut butter into dry ingredients, using a pastry cutter or fork. Add milk to form dough. Set dumpling dough aside.
  • In a large saucepan, combine berries, 1 1/2 cups sugar, and water and bring to a boil. Drop dumplings into hot boiling berries by the tablespoonful.
  • Cover pot, reduce heat to low, and cook slowly for 20 to 30 minutes. Do not remove the lid before 20 minutes has passed, and do not stir dumplings.
  • Serve warm with vanilla ice cream or fresh cream.

1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
3/4 cup quick-cooking oats
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
3/4 cup whole milk
1 cup fresh blueberries

Steps:

  • Preheat oven to 400.
  • Line about 15 muffin cups with paper liners.
  • In a large bowl, beat butter and sugar at medium speed with a mixer until fluffy.
  • Add eggs, one at a time, beating until combined.
  • Beat in vanilla.
  • In a medium bowl, combine flour, oats, baking powder, baking soda, cinnamon, and salt.
  • Gradually add to butter mixture alternately with milk, beginning and ending with flour mixture. Do not overmix.
  • Gently stir in blueberries.

1 pinch salt
2 cups berries

Steps:

  • Preheat oven to 350 and spray a 9"x 9" baking pan with PAM.
  • Mix together all ingredients except berries just until blended and pour into pan.
  • Pour berries on top of batter (they'll sink in).
  • You can sweeten the berries with a little Splenda if they are very tart.
  • If you are using frozen berries, let them semi defrost.
  • Bake 40-50 minutes, or until golden brown.

Steps:

  • Preheat oven to 350 degrees F.
  • Grease and flour 12 muffin cups.
  • In first bowl, combine the flour, baking powder and the 1/2 cup sugar.
  • In second bowl, combine the butter, egg and milk.blend well.
  • Pour the wet ingredients into the flour mixture and stir until combined (batter will be lumpy).
  • Gently fold the blueberries into the batter.
  • Spoon the batter into the muffin cups. Each one should be about two-thirds full.
  • Bake 10 minutes and remove from the oven. Sprinkle the muffins with the granulated white or brown sugar.
  • Return muffins to the oven and bake an additional 10 to 20 minutes until the tops are golden brown.

Steps:

  • Preheat oven to 450 degrees F (230 degrees C). Line a muffin tin with paper liners.
