Make this easy, old fashioned blackberry jam with or without pectin! The small batch recipe yields two jars of sweet, fresh, homemade jam!

1 lb. fresh blackberries
1 cup granulated sugar
¼ cup bottled lemon juice
Optional: 1 teaspoon powdered pectin tossed with 1 tablespoon sugar

Steps:

  • In a large saucepan or Dutch oven, combine blackberries and sugar. Let stand for 15 minutes.
  • Use a potato masher to mash the berries in the pot, releasing the juices.
  • Bring the mixture to a boil over medium heat. Once the mixture boils, add the lemon juice; cook, stirring frequently, until the mixture thickens and coats the back of a spoon, about 15-20 minutes.
  • For a thicker jam, whisk together pectin and 1 tablespoon of sugar. Sprinkle the pectin mixture over the jam and stir to combine. Cook for exactly 1 more minute, then remove from the heat.
  • Divide the jam between 2 sterilized 8-ounce glass jars, leaving ¼-inch of headspace at the top of each jar. Wipe the rims clean with a damp cloth, then secure the lids and bands.
  • Process in a water bath for 10 minutes. Carefully remove the jars to a towel on the counter. Let stand, undisturbed, for 12 hours at room temperature. Check the seals after 12 hours by pressing the center of the lids. If the lid gives or the center button remains popped up, store in the refrigerator for up to 1 month. Properly sealed jars will keep in a cool, dark place for up to 8 months. Refrigerate after opening.

2 1/2 cups fresh blackberries
2 1/2 cups fresh blueberries
1/2 cup sugar
1/2 cup blackberry jam
1 tablespoon honey
1 teaspoon lemon zest
1 teaspoon vanilla extract

Steps:

  • Put 1/2 cup each of the blackberries and blueberries in a saucepan and add the sugar, blackberry jam, honey, lemon zest, vanilla extract and 1/4 cup water. Bring to a boil and simmer for 5 minutes. Using a potato masher, mash the berries gently until they are good and broken up.
  • Add the remaining 2 cups each blackberries and blueberries to a mixing bowl. Pour the warm berry mixture over the fresh berries and fold everything together with a spatula until well coated. Allow everything to cool 10 minutes or so before serving. Serve atop your favorite dessert.

1 sheet frozen puff pastry, thawed
All-purpose flour, for dusting
2 tablespoons apricot jam
1 cup blueberries, plus more for garnish
1 cup blackberries, halved, plus more for garnish
1 cup quartered strawberries, plus more for garnish
1/4 cup sugar
2 tablespoons cornstarch
Juice of 1 lemon
2/3 cup granola
1/2 cup Greek yogurt
Fresh mint leaves, for garnish
2 tablespoons honey or maple syrup

Steps:

  • Preheat the oven to 425 degrees F.
  • Roll out the puff pastry to 1/4 inch thick on a floured surface. Transfer the pastry to a 9-inch cast-iron skillet and gently press it into the skillet, allowing the extra to hang over the edges. Brush the pastry with the apricot jam.
  • Place the blueberries, blackberries, strawberries, sugar, cornstarch and lemon juice in a bowl. Toss to combine, then transfer the mixture to the prepared skillet.
  • Bake until the pastry is golden and the fruit is bubbling, 30 to 35 minutes. If the edges begin to get too dark, lightly cover with foil.
  • Top with the granola and spoonfuls of yogurt. Garnish with mint and the extra berries. Drizzle with the honey, slice and enjoy.

1 large loaf of french bread, cut up
1 cup(s) blackberry jam
1 package(s) (8 oz) 1/3 fat cream cheese, cut into pieces
4 large eggs
2 cup(s) half and half
1 teaspoon(s) cinnamon
1 teaspoon(s) vanilla
1/2 cup(s) brown sugar

Steps:

  • Preheat oven to 325 degrees. Melt jam, medium heat 1 to 2 minutes until melted.
  • Place half of the pieces of cut up bread in a well greased 13x9 baking dish. Top with cream cheese. Drizzle jam on top and then top with the rest of the bread.
  • Whisk together the eggs and the next three ingredients, pour over the bread. Sprinkle the brown sugar on top. Cover lightly and chill 8 to 24 hours.
  • Bake at 325 degrees, covered for 20 minutes. Uncover and bake another 10 to 15 minutes or until golden brown and the mixture is set. Can be served with whipped cream or maple syrup.

1 (12 ounce) loaf French bread, cut into 1 1/2-inch cubes
2 cups half-and-half
1 (8 ounce) package whipped cream cheese
4 large eggs

½ cup firmly packed brown sugar

Steps:

  • Cook blackberry jam in a small saucepan over medium heat until melted and smooth, stirring once, 1 to 2 minutes.
  • Place 1/2 of the bread cubes into the bottom of a lightly greased 9x13-inch baking dish and drizzle with melted jam. Top with remaining bread cubes.
  • Mix half-and-half and whipped cream cheese together in a bowl; add eggs, cinnamon, and vanilla extract. Mix together well and pour over bread mixture. Sprinkle with brown sugar. Cover tightly with aluminum foil and chill in the refrigerator, 8 to 24 hours.

SMALL BATCH BLACKBERRY JAM

I had picked a small bowl full of blackberries and wanted to make jam with them. This only makes 1 pint and uses 3 cups of berries. Remember jam is softer than jelly. From Linda Ziedrich's The Joy of Jams, Jellies and other Sweet Preserves.

1 lb blackberry (around 3 cups)
1 1/4 cups sugar

Steps:

  • In a non-reactive pan, mash the blackberries with a potato masher. Add the sugar and heat the contents over medium heat, stirring gently, until the sugar is dissolved. Raise the heat to medium-high and boil the mixture until a drop mounds in a chilled dish (this took around 10 minutes for me).
  • Pour the jam into a jar and cap the jar tightly. Store in refrigerator. This jam should keep for several weeks.

1/3 cup finely chopped onion

2 cups heavy whipping cream

1/4 teaspoon sugar

Steps:

  • Combine flour and salt; cut in butter until crumbly. Gradually add 3-5 tablespoons ice water, tossing with a fork until dough holds together when pressed. Wrap and refrigerate 1 hour., Preheat oven to 450°. On a lightly floured surface, roll dough to an 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim crust to 1/2 in. beyond rim of plate; flute edge. Line unpricked crust with a double thickness of heavy-duty foil. Bake 5 minutes; remove foil. Bake 5 minutes longer; remove from oven and cool on a wire rack. Reduce heat to 375°., Sprinkle bacon, cheeses and onion over crust. Beat remaining ingredients until blended; pour over top. Bake until a knife inserted in center comes out clean, 30-35 minutes. Let stand 10 minutes before cutting.

This recipe is very moist and dense and reminds me of a good fruit cake. Even though the directions call for a tube pan, I usually use a 9 x 13 cake pan. And to my personal taste, the nuts can be omitted and never missed.

1 cup butter, room temperature
2 cups white sugar
1/3 cup cooking oil
6 eggs
6 tablespoons sour cream
2 cups blackberry jam
3 cups flour, sifted
2 teaspoons baking soda
2 teaspoons nutmeg
2 teaspoons cinnamon
1 teaspoon clove, ground
1 teaspoon allspice, ground
1 cup dates, chopped
1 cup raisins
1 1/2 cups pecans or 1 1/2 cups walnuts, chopped

Steps:

  • Preheat oven to 325.
  • Grease and flour cake pan. Original recipe calls for tube pan, but I've always used 9 x 13.
  • In large mixing bowl, cream together butter, sugar and oil until light and fluffy.
  • Beat in eggs, one at a time, beating well after each addition.
  • Beat in sour cream and jam.
  • Sift or stir together flour, soda and spices. Reserve a small amount to coat the dates, raisins and nuts. Stir remaining dry ingredients into jam mixture.
  • Stir in flour-coated fruits and nuts.
  • Pour batter into prepared cake pan and bake for approximately 1 to 1 1/2 hours (will depend on which type of pan you use) or until it tests done.

BLACKBERRY JAM

Make this easy blackberry jam with your glut of summer fruit - perfect with fresh white bread. Use jam sugar (with added pectin) to make sure it sets properly

1.8kg blackberries
1 ½kg jam sugar (the one with added pectin)
juice and pips of 1 lemon
finger-tip size knob of butter (optional)

Steps:

  • The night before you make your jam, layer the blackberries and sugar together in a very large bowl, then cover and set aside at room temperature. This helps the sugar to start dissolving so you don't run the risk of over-cooking the fruit when you actually begin to make the jam. The next morning, give everything a quick stir, then set aside again until you are ready to start cooking.
  • Before you start, put a small saucer in the freezer. Take a preserving pan or a large, wide-based pan (the wider and more open the pan, the faster the jam will be ready, so a preserving pan is really ideal) and tip the berries in, scraping out all the juices and any undissolved sugar. Stir in the lemon juice, then collect all the pips and secure them inside a tea-leaf strainer or piece of muslin before adding them to the pan (cooking the pips along with the fruit extracts the pectin they contain, helping your jam to set).
  • Start the blackberries over a low heat until all the sugar is completely dissolved, then bring to the boil and simmer for 5 mins. Turn off the heat and spoon a little hot syrupy jam onto the chilled saucer. Once it's cool, push it with your finger. If it wrinkles a little, it's ready and has reached setting point. If it's too runny to wrinkle, return the pan to the heat and boil in 2 or 3-minute stages, removing the pan from the heat each time you do the saucer check, until the jam wrinkles.
  • Skim off any excess scum, then stir in the knob of butter, if you want - this will help to dissolve any remaining scum. Leave the jam for 15 mins before ladling into sterilised jars - this allows the fruit to settle so it doesn't sink to the bottom. The jam will keep in a cool, dark place for at least 6 months. Refrigerate jars once opened.
