350g blackberries (fresh or frozen)
150g sugar
700ml bottle of gin

Steps:

  • Tip the blackberries and sugar into a 1.5-litre sterilised jar. Pour over the gin, seal the jar and swirl around to dissolve the sugar. Store in a cool, dark place and turn the jar once a day for the first week.
  • After two-three weeks, strain the gin through a sieve. Pour the gin into bottles, and label. The gin will keep its colour for a few months and will be drinkable for up to a year. Use the infused blackberries in a cocktail like a bramble, or in a trifle.

SIMPLE BLACKBERRY GIN RECIPE

The plump, ripe blackberries will provide a good body and level of sweetness to the gin which means you don't need to add as much sugar as with some other infused gins. It's good to drink after four weeks, but it gets even better with age. Just don't let it mature for more than 3 months.

250 g ripe Blackberries (about 2 cups)
70 cl Gin (about 3 cups / No need for a premium brand, but not one with complex botanicals)
110 g white Sugar (about 1/2 cup)

Steps:

  • Place the blackberries in a sterilised jar and cover with the sugar. Add the gin and give the jar a good shake. Place the jar in a dark place, like a kitchen cupboard.
  • Give the jar a shake every so often over the next few days until the sugar has dissolved.
  • Leave to mature. It's drinkable in 4 weeks but it can be left for 3 months.
  • Strain the gin through a muslin cloth, try not to break up the blackberries. Pour the liquid into a bottle. If you think it needs it, add a little more sugar and shake until it's dissolved. Tip: Though you won't need the actual blackberries after this stage you don't have to discard them. Pop them into a glass of Prosecco for a blackberry gin cocktail.
  • After 4 weeks, the gin is beautiful dark red in colour. It still holds a boozy strength but with a fruity tone of the blackberries. For the perfect, refreshing summer cocktail, serve a double measure chilled over ice and topped up with tonic.
  • If your leave the gin for 3 months, it mellows and the full fruitiness of the blackberries comes through and it's smooth enough to serve over ice as a liqueur. An excellent addition is a cinnamon stick which can be added to the gin at the same time as the sugar.

1 pint blackberries
2 tablespoons sugar
1 tablespoon water
1/2 cup roughly chopped mint leaves
8 ounces gin
1/4 cup fresh lime juice
Ice, for serving
24 ounces ginger ale
1 pint blackberry sorbet or vanilla ice cream

Steps:

  • Heat the blackberries, sugar, and water in a small pot over medium-high heat. While warming, smash with a potato masher, until a thick even consistency is reached, about 8 minutes.
  • Pour the blackberries through a sieve, into a bowl, pushing some flesh through with the juices, making sure to catch the seeds. Cool in the refrigerator for at least 10 minutes.
  • Fill a cocktail shaker with 2 tablespoons of blackberry puree, 2 tablespoons of the mint leaves, 2 ounces of gin, 1 tablespoon lime juice, and a handful of ice. Shake vigorously 5 to 6 times until the drink is ice cold. Strain the mixture into a tall glass. Top with 6 ounces of ginger ale and stir lightly. Repeat for the remaining 3 servings. Finish and serve with a scoop of sorbet or ice cream.

Steps:

  • Bring blackberries, sugar, and 1/2 cup water to a boil in a medium saucepan, stirring until sugar is dissolved. Reduce heat so that liquid is at a simmer and cook, stirring occasionally, until fruit is very soft, 20-25 minutes. Let blackberry syrup cool, then strain through a fine-mesh sieve into a large pitcher, pressing on fruit to extract as much liquid as you possibly can; discard solids.
  • Add gin and lemon juice to syrup in pitcher. Add ice to fill and stir until chilled, about 3 minutes.
  • Fill Collins glasses with ice cubes and divide cocktail among glasses. Top each with ¼ cup club soda and garnish with lemon wheels.

25ml lemon juice, plus lemon slices to serve
2 tsp sugar syrup
1 small egg white
ice
sparkling water
1 blackberry or thyme sprig, to garnish

Steps:

  • Tip the gin, lemon juice, sugar syrup and egg white into a cocktail shaker. Shake well until frothy, then add a large handful of ice and shake again until the outside of the shaker feels cold.
  • Double-strain into a tall glass filled with some more ice, then top up with the sparkling water. Thread a blackberry onto a cocktail stick to use as a garnish, or top with a thyme sprig.
