12 (3 inch) unbaked tart shells
1 cup fresh blackberries, rinsed and patted dry
1 lemon, zested
¾ cup brown sugar
⅓ cup honey
1 egg
2 tablespoons melted butter
1 tablespoon vanilla extract
1 pinch salt

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Place tart shells on a baking sheet.
  • Mash blackberries and lemon zest together lightly in a small bowl. Divide blackberry mixture evenly into the bottom of tart shells.
  • Whisk brown sugar, honey, egg, butter, vanilla extract, and salt together in a bowl; spoon mixture evenly over blackberries in shells.
  • Bake in the preheated oven until filling is bubbly and shells are golden, 22 to 27 minutes.

Blackberry tart made completely from scratch! Fresh berries, homemade tart crust shell - you'll fall in love with this beautiful French style dessert.

1 Tart crust shell (9 inch)
5 cups blackberries (fresh, not frozen)
1 cup white sugar
1/2 cup all-purpose flour
2 tablespoons lemon juice (freshly squeezed)
1 tablespoon lemon zest
1 tablespoon butter (, cold, chopped thinly)
2 tablespoons white sugar

Steps:

  • Preheat oven to 400 Fahrenheit.
  • Prebake the 9 inch or 9.5 inch tart crust at 400 Fahrenheit for 20 or 30 minutes according to my super detailed tutorial how to make tart crust shell from scratch. Let the tart shell cool slightly.
  • In a bowl, toss 4 cups of blackberries, 1 cup sugar, 1/2 cup flour, 2 tablespoons lemon juice, and 1 tablespoon lemon zest. Combine thoroughly.
  • Spoon this mixture into the cooled tart shell. Top with the remaining 1 cup of blackberries. Sprinkle 1 or 2 tablespoons white sugar over the berries, and then sprinkle thinly chopped cold butter on top, too.
  • Place the tart on a rimmed baking sheet (to catch any juices) and bake for 30-40 minutes at 350 F until filling starts to bubble. If crust starts to brown too much, place a piece of aluminum foil over the tart.
  • Serve warm with vanilla ice cream!

Blackberry Tarts These mini blackberry tarts are a fun dessert to make. Kids love to create these mini tarts. Let them fill in their own preserves and berries for a summer dessert. I included links to two pie crust recipes that I love. What's great about having a good pie crust recipe is you can get creative and use any type of berry or fruit that's available. For this recipe I used an Italian pie crust (link below), fruit preserves, and blackberries with a touch of sugar. That's it!

1 Pie Crust: Italian Pie Crust Pasta Frolla or French Pie Crust Pate Sucree
1 Jar of fruit preserve ( you won't use the entire jar) I like 4 fruit combination from St. Dalfour
2 Containers of blackberries
1/4 cup powdered sugar to sprinkle on top
6 Mini pie tins

Steps:

  • pre-heat oven to 375 degrees
  • Butter the bottom and edges of the pie molds.
  • Take the dough out of the refrigerator and divide into 6 segments (or however many pie tins you have) and form them into a disk.
  • Flatten the disk of dough and spread into the tart pan making your edges even by pressing and shaping.
  • Spoon a shallow layer of preserve into the tiny pans and spread around the bottom.
  • Sprinkle with sugar and put them on a baking tray.
  • Once all tart pans are completed bake them in the oven at 375 degrees for about 20 minutes or until the crust turns a nice light golden color.
  • Let them cool before you serve about 20 minutes or serve slightly warm with ice cream.

1/2 cup sugar
10 tablespoons chilled unsalted butter, cut into pieces (1 1/4 sticks)
1 extra-large egg yolk
1 tablespoon whipping cream
3/4 cup unsalted butter (1 1/2 sticks)
3 extra-large eggs
1 cup sugar
5 tablespoons all-purpose flour
1 teaspoon vanilla extract
6 tablespoons red currant jelly
3 cups fresh blackberries
whipped cream, for garnish

  • For pastry:.
  • Combine flour and sugar in processor.
  • Add butter and cut in using on/off turns until mixture resembles coarse meal; add yolk and cream and blend until dough just begins to come together.
  • Gather dough into ball;flatten to disc.
  • Wrap in plastic and refrigerate at least 30 minutes.
  • Preheat oven to 350 degrees.
  • Roll dough out on lightly floured surface to thickness of 1/8 inch.
  • Fit dough into 9-inch-diameter tart pan with removable bottom.
  • Trim edges and refrigerate shell while preparing filling.
  • For Filling:.
  • Cook butter in small saucepan over medium heat until melted and golden brown.
  • Blend eggs and sugar in large bowl.
  • Add flour and vanilla and whisk until just combined.
  • Whisk in butter.
  • Set tart shell on heavy baking sheet; pour filling into tart shell.
  • Bake until pastry and filling are golden brown, 30 to 35 minutes.
  • Transfer tart to rack and cool completely.
  • (Can be prepared 1 day ahead. Cover with plastic and store at room temperature.).
  • Melt jelly in small saucepan over low heat.
  • Brush 2 tablespoons jelly over filling.
  • Set berries atop tart, covering filling completely.
  • Brush remaining jelly jelly over berries; let stand until jelly sets.
  • Serve with whipped cream.

1/2 cup finely ground almonds
1 heaping tablespoon brown sugar
Pinch salt
1/2 pound cold unsalted butter, cut into small cubes
5 to 6 tablespoons ice water
Bag of dried beans
3 pints blackberries
1/2 cup all-purpose flour
Pinch salt
1 1/2 cups granulated sugar
6 tablespoons unsalted butter, small cubes
Juice 3 lemons
1 tablespoon finely chopped lemon zest
1 tablespoon brown sugar

Steps:

  • For Crust: In large mixing bowl, mix the flour, ground almonds, brown sugar and salt together. Rub the butter pieces into the flour mixture. Add the ice water and gently knead until dough comes together. Wrap in plastic and form in flat disc about 1-inch thick. Refrigerate dough for 1 hour.
  • Preheat oven to 400 degrees F.
  • Sprinkle flour on the countertop and roll out the dough to an even thickness, round shape. Place dough round in a 10-inch tart pan with removable bottom. Fold any edges inside, forming a thicker crust. Leave the dough a bit longer than the edges of the tart pan to allow for shrinking during cooking. Line the inside of the crust with parchment paper or foil. Pour in the beans, filling to the edges. Bake about 20 minutes, or until bottom begins to look cooked. Let cool. Remove the beans and foil.
  • For Tart: Toss the berries with the flour, salt, sugar, butter, and lemon juice and lemon zest. Stir in the brown sugar. Place the fruit in a saute pan over medium heat and cook just until a sauce is formed. Place the fruit in the baked crust and bake for about 40 minutes, or until the fruit bubbles and juice thickens.
  • Remove from oven and cool for 2 hours before slicing.

500g pack sweet shortcrust pastry
little flour , for dusting
good grating nutmeg
¼-½ tsp ground cinnamon
3 medium eggs
100g caster sugar
200ml double cream
200ml whole milk
1 ½ tsp vanilla extract
100g blackberry

Steps:

  • Roll out the pastry on a lightly floured surface to about 0.5cm thick. Grate over a dusting of nutmeg using a fine grater, then scatter over the cinnamon in pinches. Roll the pastry a few more rolls to press in the spices. Cut out circles to line 6 x 10cm round, deep-ish individual tart tins, with a little overhang. Sit them on a baking sheet and chill for 30 mins.
  • Heat oven to 200C/180C fan/gas 6. Line the tart cases with small pieces of scrunched-up baking parchment, fill with baking beans and blind-bake for 15-20 mins until pale golden and set. Remove the paper and beans, and bake for a further 10-15 mins until biscuity. Cool, then trim the edges with a small, sharp serrated knife.
  • Reduce oven to 150C/130C fan/gas 2. Whisk together the eggs and sugar in a large bowl. Put the cream, milk and vanilla into a saucepan and bring to the boil. Pour onto the egg mixture, whisking as you go, then sieve into a jug. Divide the blackberries between the tins, then pour over the custard to fill as much as you can. Grate over some more nutmeg and bake for 20-30 mins. They'll be ready when the top is set but the centres tremor slightly when the baking sheet is jiggled. Cool completely before eating.

1 egg, slightly beaten
1/2 cup corn syrup
1 teaspoon lemon juice (fresh)
3/4 teaspoon vanilla
1/3 cup brown sugar
1 tablespoon flour
3 tablespoons melted butter
1 1/2 cups blueberries
pastry dough

Steps:

  • Roll out pastry and cut to fit tart tins (I use mini tarts but you can use muffin tins-this will increase the cooking time) preheat oven to 375°F.
  • In large bowl, whisk egg, syrup, lemon juice and vanilla.
  • In medium bowl, mix sugar and flour.
  • Stir into egg mixture with butter.
  • Divide berries into uncooked pastry shells.
  • Pour egg mixture to top of shells.
  • Bake 18-23 minutes.
  • Remove tarts from tins immediately or the sugar will harden and they will stick tarts will firm up as they cool.

Here I'm taking the confusion and fear out of making a pastry crust and baking a tart. Make this your go-to dessert, whether you're serving it at home to guests or taking it to a party. Everyone will love it.

2 3/4 cups all-purpose flour
1/2 cup sugar
2 sticks unsalted butter, cold and cut into ½-inch pieces
2 large egg yolks
1/4 cup heavy cream, plus more as needed
3 large eggs
1 1/4 cups sugar
1/2 cup all-purpose flour, scant and sifted
1 1/2 sticks unsalted butter
1 vanilla bean
2 cups blueberries
2 cups simple syrup, heat equal parts sugar and water until sugar is fully dissolved
Confectioners sugar

Steps:

  • Dough: Combine flour, sugar, and butter in the bowl of a stand mixer fitted with the paddle attachment. Mix on medium speed until the butter and dry ingredients form a coarse cornmeal consistency, about 2 minutes. Alternatively, combine the flour, sugar, and butter in a large bowl and, with your fingertips or pastry cutter, crumble into a coarse cornmeal consistency.
  • Whisk the egg yolks and cream together in a small bowl and add to the flour mixture; mix on low until large chunks form. Turn the dough onto a flat, clean work surface dusted with flour. Press the dough with the heel of your hand and gather the pieces together to bring the dough into a ball. Knead the dough a few more minutes, form it into a disc, wrap tightly with plastic wrap, and chill for at least 1 hour and up to 3 days. This dough makes enough for two 10-inch tarts. (Note: The dough can also be frozen for up to 2 months. Before using, defrost overnight in the refrigerator.)
  • Line a baking sheet with parchment paper or silicon baking mat and butter the inside of the tart ring. Take the dough out of the refrigerator and cut it in half; reserve one half for later use. Cut the dough into large chunks. Pound the dough with a rolling pin and then knead it a few times to temper the dough to the consistency of Play-Doh. Dust your work surface and rolling pin with flour and pound the dough into a large disc, about ¼-inch thick. Roll the dough out to at least 2 inches larger than the ring to a thickness of 1/8 inch. Place the tart ring on top and trim the dough so that 2 inches remain around it. (Discard or reuse the excess dough scraps as cookie dough, etc.) Brush off the extra flour from the dough. Wrap the dough around the rolling pin and ease it into the tart ring. Dip the knuckle of your index finger in flour and press the dough into the crease with your knuckle so you have a straight edge, not sloping sides. Don''t stretch the dough to fit, because it will shrink during baking. Roll your rolling pin over the top of the tart ring to neatly cut off the excess dough; pull off the trimmed dough and discard. Place the tart shell in the refrigerator to chill for at least 30 minutes and up to one day.
  • Custard: Whisk the eggs and sugar in a large bowl until smooth; then add the flour and whisk until thoroughly combined. Using a small, sharp knife, split the vanilla bean lengthwise; scrape out the pulp and seeds and smear them on the butter. Add the butter, vanilla pulp and seeds, and vanilla bean to a small, heavy-bottomed saucepan and heat over high heat until the butter is brown and foamy. Continue cooking the butter until it is dark brown and gives off a nutty aroma. Pour the butter in a slow, steady stream into the bowl with the egg yolks, whisking constantly. Remove vanilla bean. (Note: The filling can be prepared up to 10 days in advance and refrigerated in an airtight container. Just before using, bring it to room temperature until it is a spreadable consistency.)
  • Adjust the oven rack to the middle position and preheat to 350 F. Remove the prepared tart shell from the refrigerator. Spoon the filling about halfway up the tart and spread evenly. Sprinkle ½ cup berries on top of the custard. Bake the tart until the top is golden brown, about 30-40 minutes if you are using an 8-inch ring or 45 minutes if you are using a 10-inch ring. Remove the tart from the oven and allow it to cool completely, or for at least 2 hours.
  • To make the topping, set a colander inside a bowl; place 1½ cups blueberries into a second bowl. Bring sugar syrup to a boil, then pour over berries. Toss gently with a spoon to coat the berries, then immediately drain into the colander. To remove the tart from the baking sheet, slip a cardboard round under the crust and carefully slide the tart onto it, leaving the ring in place. Slide the tart onto a serving plate and remove the cardboard and the ring. Pile the blueberries on top of the tart. Immediately before serving, dust with confectioners sugar.
