Have a surplus of blackberries? Why not make them into a delicious and beautiful tart? Make sure to adjust the amount of sugar in the filling according to how sweet your berries are--if they're a bit tart, try 2/3 cup sugar instead of a 1/2 cup.

21 ounces fresh blackberries
1 ¼ cups whole wheat flour
¾ cup whole raw almonds
¼ teaspoon salt
3 tablespoons unsalted butter, melted
2 tablespoons maple syrup
1 teaspoon vanilla extract
½ cup white sugar
2 tablespoons cornstarch
¼ teaspoon salt
3 eggs, lightly beaten
1 egg yolk, lightly beaten
1 tablespoon lemon juice
¼ teaspoon lemon zest
3 tablespoons unsalted butter, cut into 1/2-inch pieces
1 cup fresh blackberries

Steps:

  • Place blackberries in a large pot over medium heat. Cook until berries pop and release their juices, about 10 minutes. Using the back of a wooden spoon, press berries through a fine mesh sieve set over a large bowl to collect approximately 1 cup blackberry juice. Discard seeds and pulp. Allow juice to cool to room temperature, about 30 minutes.
  • Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 9-inch tart pan with a removable bottom.
  • Combine flour, almonds, and salt in the bowl of a food processor; pulse a few times until everything is combined and almonds are finely ground. Add in melted butter, maple syrup, and vanilla extract. Pulse several more times until mixture is crumbly and resembles wet sand. Pour mixture into the prepared tart pan, pressing it very firmly and evenly into the bottom and sides of the pan.
  • Bake in the preheated oven until edges of the crust are lightly browned, about 20 minutes. Cool on a wire rack while preparing the filling.
  • Whisk together sugar, cornstarch, and salt in a large heat-safe bowl for the filling. Mix in the cooled blackberry juice, eggs, egg yolk, lemon juice, and lemon zest until smooth. Bring a pot of water to a low simmer. Place bowl with blackberry mixture over the pot of simmering water, making sure bowl does not touch water. Cook, stirring constantly, until mixture thickens enough to coat the back of a spoon, about 10 minutes. Remove bowl from heat and stir in butter, 1 piece at a time, ensuring each piece melts before adding the next. Strain custard mixture through a fine-mesh sieve into the prepared crust.
  • Bake in the preheated oven until filling is just set, 20 to 25 minutes. Allow tart to cool completely before removing from pan. Top with additional fresh blackberries just before serving.

1 tablespoon cornstarch

Steps:

  • Preheat oven to 400°. On a lightly floured surface, roll dough to 1/8-in. thickness. Using a 4-in. round cookie cutter, cut 12 circles, rerolling scraps as necessary. Press circles onto bottoms and up sides of ungreased muffin cups., Mix sugar and cornstarch; toss with berries and lemon juice. Spoon 2 tablespoons filling into each cup. Bake on a lower oven rack until pastry is golden brown and filling is bubbly, 24-26 minutes. ½ cup butter, softened
¼ cup powdered sugar
½ teaspoon vanilla extract
1 egg
2 cups flour
1 teaspoon fresh thyme leaves
½ teaspoon salt
1 (6 ounce) container fresh blackberries, divided
½ tablespoon white sugar
1 teaspoon cornstarch
1 teaspoon cold water
1 (8 ounce) container mascarpone cheese
¾ cup powdered sugar
1 teaspoon vanilla extract
¾ cup heavy cream
1 tablespoon sugar
1 sprig mint leaves for garnish

Steps:

  • Beat butter in a large bowl with an electric mixer until creamy. Add 1/4 cup powdered sugar and 1/2 teaspoon vanilla extract; mix to combine. Add egg and mix until incorporated. Gradually beat in flour, thyme, and salt. Dough should come together and pull away from the sides of the bowl. Knead dough slightly and shape into a ball. Wrap in plastic wrap and refrigerate for 30 minutes.
  • Preheat the oven to 375 degrees F (190 degrees C). Grease a 9-inch round or 13x4-inch rectangular tart pan with a removable bottom.
  • Press dough evenly into the prepared tart pan.
  • Bake in the preheated oven until lightly browned, 12 to 14 minutes. Remove from oven and allow to cool completely before filling, about 30 minutes.
  • Combine 3 ounces of blackberries and 1/2 tablespoon sugar in a small saucepan over medium-low heat. Cook, stirring frequently and crushing the berries with a spoon, 4 to 5 minutes. Remove from heat and press mixture through a fine mesh sieve to remove all seeds and collect as much of the berry pulp as you can. Discard any seeds and solids left behind in the sieve and return crushed berries to the saucepan.
  • Mix together cornstarch and cold water in a small bowl. Add cornstarch mixture to the saucepan with the berry sauce; cook over medium heat until mixture comes to a boil and starts to thicken, 3 to 5 minutes. Remove from heat and let cool.
  • Combine mascarpone cheese, 3/4 cup powdered sugar, and 1 teaspoon vanilla extract in a bowl. Beat with an electric mixer until smooth.
  • Beat cream in a separate chilled glass or metal bowl with an electric mixer until frothy. Add sugar gradually, continuing to beat until stiff peaks form. Fold whipped cream into the mascarpone mixture and mix well. Spoon filling into the cooled tart crust and spread evenly. Using a teaspoon, drop spoonfuls of the smooth blackberry sauce on top of the filling. Using a knife, gently cut through sauce and filling to swirl. Garnish the top of the tart with the remaining 3 ounces blackberries and fresh mint.

With scalloped pastry edges and a fruit-streaked, creamy filling, these tarts are almost too pretty to eat, but they're too delicious not to. The filling is similar to a British spoon dessert called fool, which consists of a fruit sauce (in this case, blackberry) folded into whipped cream; more sauce and fruit is spooned on top. Elderflower cordial, another English specialty, flavors the whipped cream; you can omit the liqueur from the recipe if you want. You could also use it to flavor homemade ice cream to serve alongside.

All-purpose flour, for dusting
Pâte Brisée (page 322)
1 pound (about 3 cups) fresh blackberries
1/4 cup sugar
1 teaspoon finely grated lemon zest
1 cup heavy cream
2 tablespoons elderflower cordial, such as St. Germain

Steps:

  • On a lightly floured surface, roll out dough 1/8 inch thick; cut out eight 5-inch rounds, and fit into eight 3 1/2-inch fluted tartlet pans. Trim excess dough flush with rims. Pierce bottoms of shells all over with a fork. Refrigerate or freeze until firm, about 30 minutes.
  • Preheat oven to 375°F. Line shells with parchment; fill with pie weights or dried beans. Bake until golden brown, 15 to 20 minutes. Remove weights and parchment; bake until bottoms of shells are fully browned, about 5 minutes more. Transfer to a wire rack to cool completely.
  • Prepare an ice-water bath. Combine berries, 2 tablespoons sugar, and the zest in a saucepan over medium heat. Cook until berries release their juices, sugar dissolves, and mixture begins to bubble, about 8 minutes. Remove from heat, and set pan in the ice bath to cool.
  • Place cream, remaining 2 tablespoons sugar, and the elderflower cordial in a large chilled bowl; whip until soft peaks form. Gently fold 1/2 cup berry mixture with juices into whipped cream (leave some streaks). Fill tartlet shells with mixture; top with remaining berries and juice, and serve.

1 (8 ounce) package cream cheese, at room temperature

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Lightly grease a cookie sheet.
  • Mix the cream cheese, sugar, and cinnamon together in a bowl until thoroughly blended. Set aside.
  • Place the puff pastry shells on the prepared cookies sheet. Brush each shell with milk and sprinkle with turbinado sugar.
  • Bake in preheated oven until shells expand and turn golden brown, 10 to 15 minutes. Watch closely to make sure shells bake thoroughly, but do not overbake. Remove shells from oven, and use a fork to remove the cap from each shell. Set the caps aside.

  • Return filled pastry shells to oven, and bake until pastry tops are golden brown and the filling is warm, about 5 minutes more.

500g pack sweet shortcrust pastry
little flour , for dusting
good grating nutmeg
¼-½ tsp ground cinnamon
3 medium eggs
100g caster sugar
200ml double cream
200ml whole milk
1 ½ tsp vanilla extract
100g blackberry

Steps:

  • Roll out the pastry on a lightly floured surface to about 0.5cm thick. Grate over a dusting of nutmeg using a fine grater, then scatter over the cinnamon in pinches. Roll the pastry a few more rolls to press in the spices. Cut out circles to line 6 x 10cm round, deep-ish individual tart tins, with a little overhang. Sit them on a baking sheet and chill for 30 mins.
  • Heat oven to 200C/180C fan/gas 6. Line the tart cases with small pieces of scrunched-up baking parchment, fill with baking beans and blind-bake for 15-20 mins until pale golden and set. Remove the paper and beans, and bake for a further 10-15 mins until biscuity. Cool, then trim the edges with a small, sharp serrated knife.
  • Reduce oven to 150C/130C fan/gas 2. Whisk together the eggs and sugar in a large bowl. Put the cream, milk and vanilla into a saucepan and bring to the boil. Pour onto the egg mixture, whisking as you go, then sieve into a jug. Divide the blackberries between the tins, then pour over the custard to fill as much as you can. Grate over some more nutmeg and bake for 20-30 mins. They'll be ready when the top is set but the centres tremor slightly when the baking sheet is jiggled. Cool completely before eating.

If you have enough tartlet pans, use a second one over each to line the dough during baking to keep the crust from shrinking down the sides. You can also line the tartlet shells with parchment paper and dried beans; the shells will take a few minutes longer to bake.

Yield Makes eight 3 1/2-inch tartlets

Martha's Perfect Pâte Brisée (page 647)
All-purpose flour, for the work surface
2 half-pint containers blackberries (2 1/2 cups)
4 tablespoons sugar
1 teaspoon lemon zest
1 cup heavy cream
8 fresh pansies for garnish (optional)

Steps:

  • Roll the dough 1/8 inch thick on a lightly floured surface; fit into 8 fluted tartlet pans (3 1/2 inches in diameter, 1 1/2 inches deep). Chill at least 30 minutes, or overnight.
  • Preheat the oven to 375°F. Line the tart shells with a second pan or parchment paper and dry beans. Place in the oven; bake until golden brown, 20 to 25 minutes. Remove the top pans or parchment lining; return to the oven if the bottoms of the shells are not fully browned. Set on a cooling rack until fully cool.
  • Fill a bowl with ice and water; set aside. Place the berries, 2 tablespoons sugar, and the lemon zest in a medium saucepan over medium heat. Cook until the berries let off juices, the sugar dissolves, and the mixture begins to bubble, about 5 minutes. Remove from heat, and set the pan in the ice-water bath to cool.
  • Chill a bowl and large whisk. Place the cream and remaining 2 tablespoons sugar in the bowl; whip until soft peaks form. Fold 1/2 cup berry mixture into the whipped cream. Fill the tartlet shells with the mixture; top with the remaining berries and garnish with fresh pansies.
