------A medley of Thai flavorings livens up ordinary burgers and makes them extraordinary. Lovely and spicy and great topped with your choice of lettuce, tomato slices, basil leaves, cilantro, mint, Thai peanut sauce, mayonnaise, cucumber slices, and garlic or Chile paste.------

1 tablespoon minced garlic
1/2 teaspoon minced fresh ginger
1/2 tablespoon packed brown sugar
1/2 tablespoon green curry paste
1/2 teaspoon fish sauce
1 tablespoon unsweetened coconut milk (from 5.5-oz. Can)
1 1/4 lbs ground beef
2 carrots, grated (about 1 cup)
1 small white onion, finely diced
1 -2 jalapeno chile, veins and seeds removed, finely diced
1/2 red bell pepper, finely diced
1/2 teaspoon salt
1 egg
1/2 cup unseasoned dried breadcrumbs
2 tablespoons vegetable oil, divided
8 sandwich buns, split

Steps:

  • In small bowl, whisk together all spice mixture ingredients.
  • In large bowl, stir together ground beef, carrots, onion, Chiles, bell pepper and salt. Add spice mixture; stir until well-combined. Stir in egg and bread crumbs. Shape mixture into 8 (4-inch) patties.
  • To BBQ When the coals are at medium temperature place the burgers on the barbecue close to the coals and cook for about 3-4 minutes on each side.
  • Brush slices of crusty bread with a little oil and place on barbecue to toast.
  • Or, heat large nonstick skillet over medium-high heat until hot. Add 1 tablespoon of the oil; heat until hot. Add 4 of the patties; cover and cook 8 to 10 minutes or until browned and no longer pink in center, turning once. Repeat with remaining burgers, adding remaining 1 tablespoon oil. Serve in buns; top with favorite condiments.

FOR THE BURGERS:
1 1/2 pounds ground beef chuck (80% lean)
2 tablespoons finely chopped fresh cilantro
2 tablespoons finely chopped fresh mint leaves
1 tablespoon fresh lime juice
2 teaspoons Asian fish sauce
2 teaspoons minced jalapeño peppers, with seeds
2 teaspoons minced garlic
1 teaspoon grated lime zest
1 teaspoon grated fresh ginger
1/2 teaspoon freshly ground black pepper
FOR THE MUSHROOMS:
3 tablespoons unsalted butter
2 tablespoons peanut oil
2 teaspoons grated fresh ginger
8 ounces fresh Shiitake mushrooms, stems removed and cut into 1/4-inch slices
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
peanut oil
4 hamburger buns

Steps:

  • TO PREPARE THE BURGERS: In a large bowl gently mix together the burger ingredients with your hands. Shape the meat into four patties of equal size and thickness (about 3/4 inch thick).TO PREPARE THE MUSHROOMS: In a medium sauté pan over medium high heat, melt the butter with the peanut oil and add the ginger. Add the mushrooms and cook, stirring occasionally until tender, 4 to 6 minutes. Season with the salt and pepper. Set aside and keep warm.Brush both sides of the patties with oil and grill over Direct Medium heat until the internal temperature reaches 160°F for medium, 8 to 10 minutes, turning once halfway through grilling time. During the last 30 seconds, grill the buns over Direct Medium heat until lightly toasted.Serve the burgers hot on the toasted buns, topped with the mushrooms.From Weber's Big Book of Grilling. Number Of Ingredients 11

1/4 cup dried, stemless porcini mushrooms
2 cups cooked or drained canned black beans
1 teaspoon roughly chopped garlic
3/4 cup rolled oats, or more if needed
2 teaspoons smoked paprika or chili powder
1 teaspoon cumin
1 tablespoon soy sauce
Salt and black pepper
Bean-cooking liquid, porcini soaking liquid or water
1/4 cup chopped cilantro
2 tablespoons olive oil

Steps:

  • Soak the mushrooms in hot water for 5 to 10 minutes; roughly chop.
  • Put the mushrooms, beans, garlic, oats, spices and soy sauce in a food processor with a sprinkle of salt and pepper. Let the machine run until the mixture is combined, not puréed, about 30 seconds. (Or use a potato masher.) Add oats to thicken, or liquid to thin, as needed.
  • Stir in the cilantro, and let sit for 5 minutes.
  • Shape into 4 large or 8 small patties; let them sit for 5 minutes.
  • Put the oil in a large skillet over medium-low heat. Cook until crisp on one side, about 5 minutes. Flip and cook until the burgers are crisp on the other side, another 5 minutes or so. Serve with the usual fixings.

1/2 teaspoon fresh ground black pepper
3 tablespoons unsalted butter
2 tablespoons peanut oil
2 teaspoons grated fresh ginger
8 ounces fresh shiitake mushrooms, stems removed, caps cut into 1/4-inch slices
1/4 teaspoon kosher salt
1/4 teaspoon fresh ground black pepper
peanut oil
4 hamburger buns

Steps:

  • Make the burgers: in a big bowl, gently mix all the burger ingredients together; shape the meat into 4 patties of equal size and thickness (about ¾ inch thick).
  • Make the mushrooms: in a medium saute pan over med-high heat; melt the butter with the peanut oil; add in the ginger.
  • Add in the mushrooms and cook/stir 4-6 minutes, until tender; season with salt and pepper; set aside and keep warm.
  • Brush both sides of the patties with oil and grill over direct medium heat until internal temperature is 160° for medium, 8-10 minutes, turning once halfway through grilling time.
  • During the last 30 seconds , grill the buns over direct medium heat until lightly toasted.
  • Serve burgers hot on toasted buns, topped with mushrooms.
