ŠUNKOFLEKY - CZECH HAM AND PASTA CASSEROLE
An authentic Czech recipe for an easy dish made from cooked pasta and smoked bacon.

Steps:
- Grease the baking dish thoroughly with butter. I used a 9x12 inches cast iron casserole dish.
- Heat the oven to 350 °F (180 °C) without hot air circulation.
- Cook the pasta in salt water al dente, following the manufacture's instructions.
- Meanwhile, dice the bacon into pieces about 1/2 inch in size and fry them in a pan with butter.
- Crack the eggs into a separate bowl, beat them gently with a fork, and flavor them with salt.
- Strain the pasta, put it into a larger bowl, and mix in butter, until it dissolves.
- Mix the still-hot pasta with fried bacon, flavor with salt and pepper, add eggs.
- Layer the pasta blend into the greased dish and bake for 30 minutes until the surface turns to gold.
- Let šunkofleky a bit cool down, cut in squares, and put it on the plate. Garnish with green parsley.
- Serve with pickles.

Steps:
- Beat eggs in one plate, sift flour in another one, and place breadcrumbs in a third plate.
- Take the square slices of Eidam cheese (they should be 1.5 to 2 cm or 3/4" thick) and put each slice into the flour, then immediately into the egg and then straight into the breadcrumbs.
- Once the cheese is coated, put cooking oil into a skillet and heat it. When the oil is hot and ready, place cheese into it and fry on both sides.
- Make sure that you don't leave the cheese in the oil for too long, as it could leak out of its coating. The frying is very quick.
- Serve with boiled potatoes and tartar sauce.

- To get a perfect result of your cheese you should slice the cheese into 1cm thick pieces. In case it will be slimmer it might get fried wrongly.
- Crack the eggs into a bowl, add a pinch of salt and whisk them gently. You should get a fluffy texture without any bigger egg yolk pieces.
- Place the cheese firstly into the flour so it gets covered from all the sides. Then transfer the cheese to the eggs and turn, then place into the breadcrumbs. Cover from all the sides pushing the cheese gently into the breadcrumbs. Thanks to this you will get a batter which will be super thick and crispy from outside. Also, the cheese inside will melt nicely :)

- Zabíjaèka (Pig Slaughter Feast) OK, this one sounds a bit jarring when you know what the word means, but it’s really a unique event to attend in Prague.
- Knedlíky (dumplings) The Knedlíky is a side dish in Czech cuisine, and is another delicious and flavorful food you definitely should try. They are basically boiled dumplings and are usually paired with a meaty dish such as the Guláš.
- Smažený Sýr (cheese) Deep fried cheese, ya’ll. That’s right, Smažený Sýr is just a fancy version of a mozzarella stick. ? OK, OK, it’s a little different – it’s typically in a square, triangle, or ball, and uses different types of cheese.
- Makový kolácek (pastry) Yep, another pastry to add to the list. Sometimes simply called kolach, this Czech pastry is a small round treat with a little bit of filling in the center.
