BLACK SESAME AND WALNUT BANANA BREAD

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease a loaf pan.
- Whisk flour, baking soda, baking powder, cinnamon, nutmeg, and salt together in a bowl. Mix banana, white sugar, brown sugar, egg white, milk, canola oil, and vanilla extract together in a separate bowl; stir into flour mixture just until batter is moistened. Fold sesame seeds and walnuts into batter; pour into prepared loaf pan.
- Bake in the preheated oven until a toothpick inserted in the center comes out clean, 35 to 40 minutes. Cool in pan before transferring to a wire rack to cool completely.

BLACK SESAME WALNUT BANANA BREAD

Steps:
- Add 2 cups of oats into a blender and blitz until fine grains/powder. Remove and set aside. (or alternatively 1 cup of oats + 1 cup of almond flour).
- Preheat oven to 350F.
- Mix together the wet ingredients. In a separate bowl, stir together the dry ingredients (except for black sesame seeds).
- Combine both mixtures. Stir in chopped walnuts and sesame seeds.
- Line a loaf pan with parchment paper and pour the batter in.
- Baked or 45-50 minutes until cooked. Allow it to cool completely before slicing.
- Optional Decoration: Slice a banana lengthwise and lay one half on top of the batter (cut side up). Sprinkle black sesame seeds on either side

BANANA WALNUT BREAD

Steps:
- Sift the flour, baking soda, and salt into a medium bowl, set aside. Whisk the eggs and vanilla together in a liquid measuring cup with a spout, set aside. Lightly brush a 9 by 5 by 3-inch loaf pan with butter. Preheat the oven to 350 degrees F.
- In a standing mixer fitted with the paddle attachment or with an electric hand-held mixer, cream the butter and sugar until light and fluffy. Gradually pour the egg mixture into the butter while mixing until incorporated. Add the bananas (the mixture will appear to be curdled, so don't worry), and remove the bowl from the mixer.
- With a rubber spatula, mix in the flour mixture until just incorporated. Fold in the nuts and transfer the batter to the prepared pan. Bake for 55 minutes or until a toothpick inserted into the center of the bread comes out clean. Cool the bread in the pan on a wire rack for 5 minutes. Turn the bread out of the pan and let cool completely on the rack. Wrap in plastic wrap. The banana bread is best if served the next day.
DON'T PEEL YOUR BANANA BREAD
This banana bread uses the peel and flesh of the fruit; freezing and thawing renders it tender enough to be pureed, giving the bread extra flavor and cutting down on waste.

- 1 Wash the bananas, cut off both ends and freeze them at least 8 hours, or overnight
- 2 Defrost at room temperature for at least 3 hours or in the refrigerator for at least 8 hours
- 3 As the bananas defrost, they will turn dark brown or black
- 4 Position a baking rack in the middle of the oven and preheat to 375 degrees
- 5 Grease an 8-by-4-inch loaf pan with butter or cooking oil spray, then line with parchment paper, leaving at least 1 inch of overhang on each of the long sides; grease or spray the parchment
- 6 Weigh the bananas; you want 11
- 7 2 ounces (320 grams)
- 8 Cut off any extra and refreeze for another use
- 9 In a food processor, puree the bananas and peels until smooth
- 10 (You may see tiny dark specks of the peel; that's okay
- 11 )
- 12 Transfer the puree to a large bowl
- 13 Add the granulated sugar, melted butter, eggs and vanilla and stir to mix well
- 14 In another large bowl, whisk together the flour, 4 tablespoons of black sesame seeds, the baking soda and salt until combined
- 15 Add the dry ingredients to the banana mixture and stir just enough to incorporate, scraping down the bowl and spoon with a rubber spatula and stirring in any streaks
- 16 Fold in the walnuts
- 17 Scrape the batter into the prepared loaf pan and smooth the top
- 18 Sprinkle the top with the remaining 2 tablespoons of black sesame seeds and the turbinado sugar
- 19 Bake for 1 hour 15 minutes, until a tester inserted into the center comes out clean and the top is deeply browned
- 20 Let the loaf cool in the pan for 10 minutes, then use the parchment paper to gently lift it out and transfer to a cooling rack
- 21 Serve the slices warm or at room temperature

BLACK WALNUT BANANA NUT BREAD
This is my favorite recipe for Banana Nut Bread. When it cools it has a pretty marbled center. I dust it with powdered sugar after it cools.
