Easy creamy pepper sauce is the perfect accompaniment to a juicy grilled steak and takes only a few minutes to knock together.

2 tablespoons butter
1 red onion (finely chopped)
2 garlic cloves (finely chopped)
2 tablespoons fresh cracked black pepper
1 bay leaf
2 sprigs fresh thyme
2 cups whipping/heavy cream
juice of ½ lemon
salt (to taste)

Steps:

  • Melt the butter in a frying pan then add the onion and saute until soft.
  • Add the garlic and cook for another 30 seconds before adding the pepper and herbs.
  • Gently toast the pepper until fragrant then pour in the cream.
  • Season with lemon juice and salt and allow to simmer gently for 10-15 minutes until the sauce has reduced and thickened to your preference.
  • Serve.

4 (6 to 8-ounce) strip steaks, 3/4 to 1-inch thick
Kosher salt
2 teaspoons black peppercorns, coarsely crushed
2 tablespoons clarified, unsalted butter
3/4 cup beef stock or broth
3 tablespoons cognac
3/4 cup heavy cream
1 tablespoon green peppercorns in brine, drained and slightly crushed

Steps:

  • Preheat oven to 200 degrees F.
  • Sprinkle steaks with kosher salt and crushed black pepper. Heat butter in a 12-inch, heavy bottomed saute pan over medium heat. Once butter is hot, add steaks and cook until browned on both sides, about 2 minutes per side for medium-rare and 3 minutes per side for medium. Remove steaks from pan and place on a rack set on a sheet pan; place in oven to keep warm.
  • Add the stock to the saute pan and whisk until the crispy bits release from bottom of pan. Allow the liquid to reduce for 3 to 4 minutes over medium-high heat. Add cognac, heavy cream, and green peppercorns to the pan. Increase heat to high and cook, whisking continually, until sauce thickens slightly, just enough to coat the back of a spoon; this will take 5 to 7 minutes.
  • Season the sauce, to taste, with kosher salt. Place steaks on plates, top with sauce, and serve immediately.

Seared Zucchini With Crispy Parmesan and Black Pepper image

This summery side dish is inspired by the flavors of cacio e pepe, Rome's beloved pasta dish. Zucchini or summer squash is seared in a very hot pan until golden, and while it cooks, coarsely ground black pepper is separately toasted and butter is added to brown. (Be sure to salt your zucchini just before you add it to the hot pan - not sooner - as they can release water and become mushy if salted and left to sit.) If you can, take the time to grate your own Parmesan for a lighter, almost pillowy-like consistency that melts into the butter and forms chewy-like nuggets of cheese. (This will not be a smooth, emulsified sauce.) Like many good summer dishes, this one is finished with torn basil. Serve with a side of grilled sausages or pearled couscous tossed with pesto. A tumbler of rosé would make this dinner worthy of eating outside on the back porch, dish in lap.

3 tablespoons olive oil
Kosher salt
1 1/2 pounds baby zucchini or summer squash (or use regular zucchini on the smaller side), ends trimmed and halved lengthwise
2 teaspoons coarsely ground black pepper
4 tablespoons unsalted butter, cut into 4 pieces
2 ounces freshly grated Parmesan or Grana Padano cheese
1/4 cup torn basil or mint leaves, or a combination
Flaky sea salt (optional)

Steps:

  • Heat a 12-inch cast-iron skillet over medium-high for 2 minutes. (This will help you get a good sear.) Heat the oil, and when it shimmers, salt the zucchini and add it cut-side down in one layer (you will need to do this in two batches), and cook, undisturbed, until it begins to turn golden brown, about 2 to 3 minutes. Flip and cook 2 to 3 minutes more on the other side. Remove from the pan and set aside on a serving plate; repeat with remaining zucchini.
  • While the second batch cooks, add the pepper to a small saucepan and toast over medium heat until it becomes fragrant, about 2 minutes. Add the butter (it will quickly foam), and stir until the butter melts and the foam subsides. Remove from heat. Quickly add the grated cheese and stir vigorously to prevent the cheese from sticking to the bottom of the pan. It will melt in spots, it will crisp in spots and it will form frico-like clumps.These are all good things!
  • Spoon the butter over the seared zucchini, making sure to catch all the black pepper and fried cheese bits, and shower with the herbs. Season with flaky salt, if you please.

Here is an easy and delicious meal of a humble steak combined with freshly cracked black peppercorns sauce.

450 g beef top round steak
2 tablespoons black peppercorns, pounded using mortar and pestle
100 ml red wine
100 ml beef stock, from 1/2 cube
1/2 teaspoon Worcestershire sauce
1/2 teaspoon cornstarch, dissolved in 2 tsp water
2 tablespoons sour cream
2 tablespoons balsamic vinegar
2 tablespoons sunflower oil
1 tablespoon maple syrup or runny honey
2 garlic cloves, chopped
1 tablespoon peppercorn, pounded using mortar and pestle
fresh thyme leave

Steps:

  • For the marinade, mix well all ingredients. Place steaks in a resealable plastic bag, add marinade, close, shake to coat the steaks and leave to marinate for at least 2 hours.
  • Take the steaks out of the marinade and cook (without any oil) in a well-heated frying pan on medium high heat for about 2 minutes on each side. Place the cooked steaks on a plate and set aside.
  • Meanwhile, heat the saucepan used to cook the steaks. Add red wine and deglaze the pan. Simmer for a few seconds to allow the alcohol to evaporate.
  • Add remaining crushed black pepper, beef broth, liquid collected from the cooked steak, cream and Worcester sauce. Simmer for few minutes and thicken the sauce with cornstarch solution.
  • Arrange cooked steak on a plate with basmati rice. Ladle black pepper sauce over the steak and serve immediately.
  • Serve with plain Basmati rice and green salad.

This sauce is so tasty and is great with chips or mash. I looked on zaar for a pepper steak recipe but only found stir-fry's with capsicum so I came up with my own. I have said that this recipe is for 2 servings because I have 1 steak and my fiance has 2. It also makes a lot of sauce which we like so you could easily cook another 1 or 2 steaks and still have enough sauce to cover them all as well as the chips.

3 scotch steak fillets
2 tablespoons butter
1 tablespoon oil
1 -2 tablespoon flour
1 1/2 cups beef stock
150 ml thickened cream
1 tablespoon mccormicks pepper steak seasoning
salt & freshly ground black pepper

Steps:

  • Season raw steaks with salt and freshly cracked pepper.
  • Melt butter with oil in pan, add steak and cook to you liking. Remove and set aside.
  • Turn heat to medium. Add flour to the pan to make a roux with the pan juices, let cook for 1 minute.(only add enough flour to thicken the mix, don't put so much that it makes the mixture "crumbly" because the flour can overtake the taste and you will end up needing more stock or water).
  • Begin adding the stock bit by bit, whisking constantly so it doesn't get lumpy. It will be quite thin once all the stock is added.
  • Add pepper steak seasoning to your taste and mix in to the gravy. Keep whisking.
  • Add cream and thicken to your liking on a low / medium heat.
  • Re-heat steaks in the micorwave for about 30 sec's if you haven't kept them warm.
  • Serve with chips or potato mash.

4 cube steaks
3 -4 tablespoons cracked black pepper (Please use McCormick's Cracked Black Pepper or equivalent, regular black pepper is NOT workable here)
1 tablespoon kosher salt
1 tablespoon olive oil
1 tablespoon soft butter
8 ounces cremini mushrooms, sliced (the Italian brown ones, or use small portabellas)
1 shallot, peeled and minced
2 garlic cloves, peeled and minced
1 tablespoon basil, chopped (fresh only or it won't taste the same)
1 cup heavy cream
2 tablespoons soft unsalted butter

Steps:

  • Season both sides of the cube steaks with kosher salt and cracked black pepper.
  • Heat the oil and 1 tablespoon of the butter in a large skillet over med-high heat.
  • Sauté the steaks for 4 minutes, then turn and finish cooking for 3 more minutes or until done to your liking. Move steaks to a plate and cover with foil.
  • Melt the remaining 2 tablespoons of butter in the skillet over med-high heat and loosen any stuck bits of meat with a spatula.
  • When hot, add the shallots and mushrooms with a loose attempt to keep them in a single layer as much as possible. Don't stir for the first 2 minutes to give them a chance to caramelize on one side, then stir periodically for another minute or two until mushrooms are deep golden brown.
  • Add the minced garlic and sauté until it becomes soft, about one minute.
  • Add the cream and the steak juice from the cube steak plate and reduce the mixture by one-third. Season with salt and pepper to taste.
  • Finally, add the basil, stir briefly, then plate the steaks with a generous portion of sauce on top.

PAN-SEARED ZUCCHINI

A zucchini and a steak may not have much in common, but, like steak, zucchini takes incredibly well to the method of quickly searing in a smoking hot pan. Zucchini has a high water content, so cooking it fast means it retains its structure and doesn't release too much water, and doing so over high heat yields a beautiful char. A quick baste with brown butter, rosemary and garlic adds even more steakhouselike flavor. The recipe calls for 1½ tablespoons butter, but feel free to use a bit more if you like. Finally, choose smaller zucchini if you can; they tend to be less watery, more flavorful, and contain smaller seeds than their larger counterparts. If you can only find larger zucchini (or if you only have a 10-inch skillet), use two zucchini instead of three to avoid crowding the pan.

3 small zucchini (6 to 8 inches each)
1 tablespoon grapeseed, safflower or other high-heat cooking oil

1 fresh rosemary sprig (or 1/4 teaspoon dried rosemary)

Steps:

  • Trim the zucchini lengthwise on two opposite sides to create flat edges. Discard or compost the scraps and cut the zucchini in half lengthwise into two planks that are about ½-inch thick. (If you're using larger zucchini, you may get three planks from each one). Pat them dry with a paper towel, pressing gently but firmly on both sides to absorb any moisture.
  • Heat a large (12-inch) cast iron or stainless steel skillet over medium high. Add the oil and heat until it's almost smoking. Add the zucchini, spacing them evenly in the pan and pressing lightly with a spatula so that the planks make contact with the pan. Sprinkle the tops with salt and pepper and cook for about 3 minutes, until the zucchini is nicely charred on the bottom. Lower the heat to medium, flip the zucchini, and season with salt and pepper again. Cook for 2 to 3 more minutes, until the bottom is charred.
  • Turn the heat to low and add the butter, garlic and rosemary. Carefully tilt the pan, letting the garlic and rosemary cook in the butter for 30 seconds to 1 minute, until the butter has begun to brown. Spoon the butter over the zucchini, and cook for another minute, flipping them a few times to coat both sides with the butter.
  • Transfer the zucchini to a serving platter, along with the garlic and rosemary, and spoon any butter that's left in the pan on top. Top with coarse sea salt, lemon zest and red-pepper flakes, and serve hot.
