World's Best Peanut Butter Bars image

Perfectly thick, soft and chewy peanut butter bars with a peanut butter and chocolate glaze, and oats baked in the chewy cookie bars.

3/4 cup butter
1/2 cup granulated sugar
1 cup light brown sugar
2 large eggs
1/2 teaspoon vanilla extract
1/2 cup creamy peanut butter ((plus more for spreading over baked bars))
2 1/2 teaspoons baking soda
1/2 teaspoon salt
1 1/2 cups all-purpose flour
2 cups old-fashioned rolled oats
1/4 cup butter
1 Tablespoon unsweetened cocoa powder
1 1/2 Tablespoons milk
1 1/4 cups powdered sugar
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F. In a large mixing bowl, cream together the butter, sugar and brown sugar.
  • Add the eggs, vanilla, and peanut butter and mix well.
  • In a separate bowl mix together the dry ingredients. Add dry ingredients to creamy mixture.
  • Press firmly into a greased 9x13'' pan. Bake at 350 degrees for 17-21 minutes. Do not over-bake! They will look just barely set in the center, and they will harden as they cool. Allow to cool completely.
  • Once cooled, spread a thin layer of peanut butter over the bars.

This is an old recipe my mom found out of a magazine years ago and cut it out to keep. She wrote "good" on it, so I figure it was worth keeping around all these years!

Number Of Ingredients 8

1 cup peanut butter
6 tablespoons butter, softened
1 1/4 cups sugar
3 eggs
1 teaspoon vanilla
1 cup all-purpose flour
1/4 teaspoon salt
11 1/2 ounces chocolate chips, divided

Steps:

  • Preheat oven to 350 degrees.
  • Beat peanut butter & butter together until smooth, about 1 minute.
  • Add suar, eggs and vanilla, beat until creamy.
  • Blend in flour and salt.
  • Stir in 1 cup of chocolate chips.
  • Spread into ungreased 13x9" baking pan.
  • Bake 25-30 minutes until edges begin to brown.
  • Take out of oven and immediately sprinkle remaining chocolate chips over cookie layer, let stand 5 minutes.
  • Once chips are shiny and soft, spread evenly over whole cookie layer.
  • Cool completely & cut into 1 1/2 inch bars.

  • In a food processor, add the oreos and pulse until a fine crumble forms. Melt 4 tablespoons of butter in a microwave-safe dish, then add it to the oreo crumbles and pulse for several more seconds until combined. Press mixture into the bottom of the pan in an even layer.
  • In a large, microwave-safe dish, add 5 tablespoons of butter and the peanut butter. Melt in 30-second increments until melted and smooth. Stir in the brown sugar and powdered sugar, then press into the pan on top of the oreo base.
  • Wipe out the bowl, then add the remaining 5 tablespoons of butter and the chocolate chips and microwave for 1 minute, then stir carefully and continue microwaving in 30-second increments, if needed, until melted and smooth.
