½ cup sugar
½ cup water
blackberry
9 sprigs fresh thyme
¼ oz blackberry thyme simple syrup
1 oz NOLET'S Gin
½ oz lemon juice, freshly squeezed
1 oz tonic water
3 blackberries, separated
½ oz sparkling wine
1 sprig fresh thyme, for garnish

Steps:

  • Thyme simple syrup: In a small pot, combine sugar, water, blackberries, and thyme sprigs. Whisk well and bring to a simmer. Let simmer for about 5 minutes and lightly crush the blackberries with a fork. Strain through a sieve and cool.
  • Cocktail: Fill a cocktail shaker with ice. Add prepared simple syrup, NOLET'S Gin, lemon juice, tonic water, and one blackberry. Shake vigorously for 30 seconds.
  • Strain into a coupe glass and top with sparkling wine.
  • Garnish with a thyme sprig and remaining two blackberries.
  • Enjoy!

1 cup mixed berries, fresh or frozen and thawed
2 tablespoons lemon juice
2 teaspoons sugar
4 oz gin
Stella Rosa® Black Lux Sparkling Wine, chilled
ice, for shaking
2 lemon twists

Steps:

  • Add the berries, lemon juice, and sugar to a large pint glass and muddle until the berries are smashed and have released their juices. Strain the liquid into a cocktail shaker, then add the gin and fill the shaker with ice. Shake until well chilled, about 15 seconds.
  • Strain the cocktail between two champagne flutes. Fill each glass with Stella Rosa® Black Lux.
  • Garnish with the lemon twists and serve immediately.

This is a sweeter berry version of the "black and tan". Goes great after a nice meal. You can put more or less frambois in depending on your preference.

6 ounces guinness irish stout beer
6 ounces bavarian raspberry beer (Lindeman's Raspberry Frambois)

Steps:

  • Pour all of your 6oz frambois into a pint glass.
  • Using a spoon to defuse, slowly pour guinness over back of spoon. Let settle a few minutes.
  • It takes a few tries and a steady hand to get a perfect pour, but it tastes great whether you've got the layering effect down or not.
  • You can substitute Lindman's other flavors such as Pomme (apple), Cassis (black currant)(my second favorite), Kriek (cherry), or Peche (Peach).
  • Also try with double chocolate stout instead of guinness.
  • I like to use large wine glasses and layer for dinner parties. A very nice presentation for after dinner as a sort of dessert.

1 cup low fat cottage cheese

Steps:

  • Place strawberries in small bowl and add 1 tsp of Splenda. mix well.
  • In separate bowl, place blueberries and mix with 1 tsp of Splenda.
  • In a mixing bowl, combine cottage cheese, yogurt, vanilla and almond extracts. mix well.
  • In 2 large dessert glasses, layer in order: 1/2 of the blueberries, 1/4 of the yogurt mixture, 1/2 of the strawberries, 1/4 of the yogurt mixture. Reserve a couple of each berry to top each glass.
