1 pound dried black-eyed peas (about 2½ cups)
5 slices thick-cut bacon
2 tablespoons extra-virgin olive oil
1 large diced onion
2 large diced carrots
2 ribs diced celery
1½ cups frozen chopped collard greens, thawed
3 cloves garlic, minced
4 cups low-sodium chicken broth
1 smoked ham hock
½ cup rice blend
Kosher salt and freshly ground black pepper

Steps:

  • Sort through the peas and pick out any pebbles or other debris. Rinse the peas under cold water. Put the peas in a 5-quart Dutch oven and cover with 5 cups cold water. Place over high heat and bring to a boil; boil for 1 minute. Remove from the heat, cover and let peas soak for 1 hour.
  • Cook the bacon in a large skillet over medium heat until crispy, 6 to 8 minutes. Transfer the bacon to a paper towel-lined plate to cool. When cool, crumble the bacon and set aside. Add the oil to the skillet with the bacon fat Add the onions, carrots and celery and cook, stirring frequently, until tender, about 10 minutes. Add the collard greens and garlic and cook until the garlic is fragrant, about 1 minute.
  • Add the vegetables to the Dutch oven along with the chicken broth, ham hock, crumbled bacon, rice and 4 cups water. Bring the mixture to a boil over medium-high heat. Reduce the heat to a simmer and cook, covered, until the peas and rice are tender, 45 minutes to 1 hour.
  • Remove the ham hock from the Dutch oven. Discard the skin and bone. Chop the meat into small pieces and return it to the Dutch oven. Season the soup with salt and pepper.

1 cup chopped onion
2 tablespoons chopped jalapeno pepper
1 clove garlic, minced
1 pinch salt
1 pinch ground black pepper
3 cups water
2 cubes beef bouillon
4 (15 ounce) cans black-eyed peas, rinsed and drained
2 cups grated Swiss cheese

Steps:

  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until lightly browned, 8 to 10 minutes. Drain bacon slices on paper towels and chop when cool enough to handle.
  • Add tomatoes, onion, jalapenos, garlic, salt, and pepper to bacon drippings. Saute over medium-high heat until vegetables are soft, about 5 minutes.
  • Add water and bouillon; stir until bouillon cubes dissolve. Stir in peas and cook until heated through, about 5 minutes. Add Swiss cheese and simmer gently until cheese is melted, 3 to 5 minutes.

1 pound bulk pork sausage
1 pound ground beef
1 large onion, diced
4 cups water
3 (15 ounce) cans black-eyed peas, drained
1 (28 ounce) can diced tomatoes
1 (10 ounce) can diced tomatoes with green chile peppers (such as RO*TEL®), undrained
1 teaspoon Worcestershire sauce
¾ teaspoon garlic salt
½ teaspoon salt
1 (4 ounce) can chopped green chilies
4 teaspoons molasses
4 beef bouillon cubes
¼ teaspoon ground black pepper
¼ teaspoon ground cumin

Steps:

  • In a large Dutch oven, cook and stir the pork sausage and ground beef with the onion over medium heat until the meat is no longer pink, 10 to 12 minutes; drain off excess fat. Pinquinto beans are a small pink bean that is very pouplar on the Central Coast of California, where I used to live. I have adapted my Pinquito bean recipe to work with Black Eyed Peas. The main reason I have posted so few recipes is because I cook by feel, rather than measuring and I rarely make the same thing exactly the same way, over and over. This recipe is VERY flexible. If you want it more like beans, use more Black Eyes, if you want it more like soup, use less. The cooking time includes 1-1/2 hours cook time for the Black Eyes.

1 lb ground beef
1 bell pepper, diced to 1/4 inch

1 (14 1/2 ounce) can diced tomatoes

  • Set cooked black eyed peas in their cooking liquid aside.
  • Sautee Beef, Bell Pepper, Onion, and Celery until veggis are crisp-tender.
  • ***Note, I prefer my veggis very well done and very tender, so I start the veggis and add the beef when they are about half-way done.
  • Add remaining ingredients and simmer for about 15 minutes. Adjust the salt and pepper to your taste.
  • *****Note: Your cooked Black Eyed Peas should have about 1-2 Cups of the cooking liquid left. Add more Beef Broth or Water if desired.

Black-eyed peas traveled from Africa to the Americas on the same Middle Passage as enslaved Africans in the 1600s, and continue to connect families with flavors and stories on both sides of the ocean. As a child of both continents, I honor the rich legacy of the ancestral foodways created from this magical bean. In these patties, black-eyed peas and amaranth create a creamy yet textured foundation on which to layer the umami-rich flavors of mushroom, miso, and tamari and the piquancy of parsley, onion, and Scotch bonnet chiles. Using flaxseed meal as a binding agent not only means this dish is easily vegan, it also grants the patty an earthy final note that resonates on a sunny summer day in the backyard. (If you'd like, you can also cook these in a skillet on the grill.) I serve these patties with an easy sweet-and-tangy barbecue-mayo sauce-which can also be used as a dipping sauce for sweet potato fries or a dressing for a grain bowl or salad-and chowchow.

3 Tbsp. tamari soy sauce
2 Tbsp. flaxseed meal

½ cup store-bought barbecue sauce
¼ cup vegan or regular mayonnaise
1 Tbsp. chili-garlic sauce (such as Huy Fong)

Steps:

  • Patties
  • Cook amaranth, according to package directions. Spread out on a rimmed baking sheet and let cool.
  • Combine scallions, mushrooms, chile, black-eyed peas, parsley, tamari, flaxseed meal, miso, and ½ tsp. salt in a food processor. Sprinkle 1-2 Tbsp. cooled amaranth over mixture and pulse until just combined. Repeat process until all of amaranth has been incorporated. Taste and season purée with pepper and more salt if needed. Scoop onto a parchment-lined baking sheet to make 6 portions (a cookie scoop works great if you've got one) and form into patties that match the size of your buns. Freeze 30 minutes.
  • Sauce and assembly
  • While the patties are chilling, make the sauce. Whisk barbecue sauce, mayonnaise, chili-garlic sauce, mustard, lemon juice, and vinegar in a small bowl to combine. Sauce should taste spicy, tart, and sweet.
  • Heat a large skillet, preferably cast-iron, over medium-low. Pour in oil just to thinly coat bottom of pan. Working in 3 batches to avoid crowding, cook patties, adjusting heat and adding more oil as needed, until browned (a crisp crust should form), about 5 minutes per side. (You can keep patties warm on a fresh parchment-lined baking sheet in a 250° oven if needed.)
  • Build burgers with patties, buns, sauce, and chowchow.

This thick and heartwarming soup is great on a cold rainy or wintery day. Serve with a side salad and a hunk of your favorite cornbread. The recipe is from the R.S.V.P. section of a December 1985 issue of Bon Appetit. It was requested from the Deer Valley Ski Resort in Park City, Utah. The recipe increases well and can be frozen.

1 lb black-eyed peas
1 1/2 quarts water
1 1/2 quarts chicken stock
1/2 cup dry sherry
1 small smoked ham hock
1 medium onion, finely diced
1/4 stalk celery, finely diced
1 bay leaf, crushed
1 garlic clove, minced
salt & freshly ground black pepper, to taste

Steps:

  • Soak peas in water overnight.
  • Combine stock,Sherry and ham hock in large saucepan and bring to boil.
  • Add onion,celery,bay leaf and garlic and boil until onion is soft, about 15 minutes.
  • Drain peas, add to soup and simmer until tender, about 1 hour.
  • If desired, remove ham hock, let cool, dice meat and add back to soup.
  • Season with salt and pepper to taste and serve.
