TASTY SCALLOPED TOMATOES
Another favorite from the mid-Atlantic coastal area...from a local Church cookbook of family favorites. While the author, Ann Ellis, is no longer living, her great recipes live on! If using garden tomatoes, you will need 6 medium large ones.

Steps:
- Preheat oven to 350 degrees.
- Brown fresh bread crumbs and minced onion in butter.
- In a medium bowl, combine the browned onion and bread crumb mixture with the tomatoes, basil, and sugar. Add salt and pepper to taste. Mix well.
- Pour tomato mixture into a greased baking dish. Top with grated cheese and dry bread crumbs.
- Bake at 350 degrees for 30-40 minutes depending on your oven.

ANGEL FOOD TIRAMISU
A different twist on the classic tiramisu without all the hassle and wait. And it's beautiful too! For Zaar World Tour, a Mid Atlantic recipe as it's thought Angel Food Cake originated there in Pennsylvania Dutch country.

Steps:
- Line a 4 1/2 x 8 1/2" loaf pan with a sheet of plastic wrap (about 24" long).
- Beat together cream cheese, sugar, cream, and vanilla until smooth.
- Combine coffee and liquor (if desired).
- Slice cake horizontally into 4 layers using a serrated knife.
- Brush coffee mixture over both sides of each cake layer.
- Place one cake layer in the bottom of the prepared pan and spread evenly with 1/3 cup of cream cheese mixture.
- Sprinkle with 1/4 of the grated chocolate.
- Repeat with remaining layers, BUT reserve 1/2 cup of cream cheese mixture and 1/4 of the chocolate.
- Fold plastic wrap over the top and gently press to make cake level.
- Chill 30 minutes.
- Unwrap the top of the cake and invert onto a plate. Remove plastic wrap.
- Spread reserved cream cheese mixture over the top and sprinkle with remaining chocolate.
- Garnish with strawberries.

SHRIMP ATLANTICA
This spicy marinara sauce with shrimp is originally from Mid-Atlantic Magazine. It's a favorite in our family. You can omit that fancy pasta presentation with the olives, etc. for family dinners and it still tastes great.

Steps:
- Brown onion lightly in oil.
- Add garlic, stir for about 30 seconds.
- Add tomatoes.
- Add sugar, olive oil and all seasoning.
- Simmer for about an hour and a half.
- Cook pasta, toss with red sauce and garnish with olives and parsley.
- Sprinkle with cheese or pass it while serving.
