- Preheat oven to 300 degrees F (150 degrees C). Grease and flour a tube pan.
- Whisk together flour, salt, cinnamon, cloves, and soda. Set aside.
- Cream together 1/2 cup butter and 2 cups brown sugar, beating until light and fluffy. Mix in eggs. Add flour mixture into creamed mixture alternately with applesauce, beginning and ending with flour mixture. Stir in the raisins, dates, and walnuts. Pour batter into prepared pan.
- Bake in preheated oven until a tester inserted in the center of the cake comes out clean, about 1 1/2 hours. Cool on wire rack.

APPLE COFFEE CAKE WITH CRUMBLE TOPPING AND BROWN SUGAR GLAZE

- Preheat the oven to 350 degrees F. Lightly grease a 13 by 9-inch glass baking dish with 2 teaspoons of the butter.
- In a large bowl, cream together the remaining stick of butter and sugar until light and fluffy. Add the eggs 1 at a time, beating after the addition of each. In a separate bowl or on a piece of parchment, sift together the flour, baking soda, cinnamon, and salt. Add to the wet ingredients, alternating with the sour cream and vanilla. Fold in the apples. Pour into the prepared baking dish, spreading out to the edges.
- To make the topping, in a bowl, combine the sugar, flour, cinnamon, and butter, and mix until it resembles coarse crumbs. Sprinkle the topping over the cake and bake until golden brown and set, 35 to 40 minutes. Remove from the oven and let cool on a wire rack for at least 10 minutes.
- To make the glaze, in a bowl, combine the sugar, vanilla, and water and mix until smooth. Drizzle the cake with the glaze and let harden slightly. Serve warm.

- Preheat oven to 350 degrees. Coat a 10-inch angel-food-cake pan with cooking spray; set aside. Make crumb topping: Stir together 4 tablespoons butter, the dark-brown sugar, oats, 3/4 teaspoon cinnamon, and 1/4 teaspoon salt until smooth. Stir in 1/2 cup pecans; set aside.
- Make batter: Sift flour, baking soda, nutmeg, cloves, and remaining 2 teaspoons cinnamon and 3/4 teaspoon salt; set aside. Put remaining 8 tablespoons (1 stick) butter, the granulated sugar, and light-brown sugar in the bowl of an electric mixer fitted with the paddle attachment. Cream on medium speed until smooth, about 3 minutes. Mix in the eggs, one at a time. Reduce speed to low; mix in applesauce and then flour mixture. Stir in remaining cup nuts by hand.
- Pour batter into oiled pan; sprinkle reserved crumb topping over batter. Lay apples on top, tucking some into batter.
- Bake until a cake tester inserted near center comes out clean, about 1 hour and 10 minutes. Let cool in pan on a wire rack.
APPLESAUCE CRUMB CAKE
Steps:
- Heat the oven to 350 F and generously coat a 13x9-inch pan with cooking spray. Set aside.
- To make the crumb topping: In a small bowl, combine 1/2 cup flour, 1/2 cup sugar, 1/2 cup packed light brown sugar, 1 teaspoon cinnamon , melted butter, and nuts, if using. Set aside.
- To make the cake batter: In a medium bowl, whisk together 2 cups flour, baking powder, baking soda, 3/4 teaspoon cinnamon and salt, and set aside.
- In a large bowl, beat together 3 ounces butter and 1 1/4 cups sugar until well combined but not light and fluffy. Add the eggs, one at a time, beating until combined and scraping the bowl as needed.
- Add 1/3 of the flour mixture, mixing until combined. Then add all of the applesauce, mixing until combined. Mix in another 1/3 of the flour mixture, then the sour cream and then the final 1/3 of flour, mixing well after each addition. Don't overmix.
- Transfer the batter to the prepared pan, spreading evenly. Scatter the crumb topping evenly over the top of the batter and bake 35 to 45 minutes or until a toothpick inserted in the center comes out with a few crumbs attached. Don't overbake. Cool slightly on a wire rack, but serve warm, cut into squares. Garnish with caramel sauce and sweetened whipped cream sprinkled with cinnamon sugar if desired.

APPLESAUCE CAKE
We hope it doesn't hurt anyone's feelings to state the fact that sweets like pumpkin bread and banana bread are really nothing other than cakes made in loaf pans. The ratios of sugar and butter to flour is far similar to the sweet layers of a tiered cake than to any legitimate loaf of bread. With that said, we love a variety of sliceable cakes and we thought we'd pass along a recipe for one of our favorite cake loaves out there (we just thought we'd call it what it really is): Applesauce Cake. This recipe is incredibly easy to make, taking only 20 minutes of hands-on time. As its name suggests, Applesauce Cake uses a significant amount of applesauce to lend sweetness, flavor, and soft moistness to the crumb of this cake. A bite is similar in texture to pumpkin bread, but the flavor is unmistakably a mix of cinnamon, ginger, and molasses. The warmth of the cinnamon and ginger complement the syrupy sweetness of the apple, molasses, and brown sugar, making for a loaf cake that will convince you a piece of dessert is perfectly acceptable with your morning cup of coffee.

- Preheat oven to 350°F. Grease a 9- x 5-inch loaf pan and line bottom with parchment paper.
- Using a mixer, cream together butter and sugar until lightened, about 3 minutes. Add eggs one at a time, waiting until the first is fully incorporated before adding the second. Increase speed to medium-high and beat for 2 minutes.

DANISH APPLESAUCE CAKE

- Dry the bread in a low oven, when sufficiently dry crush into crumbs.
- Melt 1/4 pound of the butter in a skillet, and add the bread crumbs. Stir to brown over medium heat. Add 1/4 cup sugar and 1/2 tablespoon cinnamon, stir to keep from sticking.
- Pat 1/3 of the crumb mixture into a greased pie pan, smoothing down.
- Spread over this one can of the applesauce, dot with 1/3 of the remaining butter and sprinkle half the remaining sugar and cinnamon.
- Repeat, then finish with the last third of the crumbs. Dot with last of the butter.
- Bake at 325 degrees for 45 minutes.
- Cool, then turn out onto a plate and refrigerate overnight.
- Before serving coat with whipped topping and garnish with cherries and nuts.

- Preheat oven to 350 degrees F (175 degrees C). Butter a 9x12-inch baking dish generously.
- Whisk flour, sea salt, baking powder, and baking soda together in a bowl. Set aside.
- Combine walnuts, brown sugar, white sugar, salt, cinnamon, and melted butter in a bowl. Mix until walnuts and sugar are thoroughly coated with butter.

- To make the applesauce cake: Preheat oven to 350 degrees. Spray a 13 by 9-inch baking dish with non-stick cooking spray.
- In a large mixing bowl whisk together flour, baking soda, baking powder, salt, cinnamon, ginger, nutmeg, and allspice for 30 seconds. Make a well in the center and set aside.
- To a separate large mixing bowl add granulated sugar, brown sugar, and eggs. Using an electric hand mixer beat on medium speed until fairly pale and fluffy, about 2 minutes.
- Add applesauce, vegetable oil and 1 tsp vanilla extract to sugar mixture and blend with hand mixer until combined.
- Pour applesauce mixture into well in flour mixture then gently fold and stir mixture just until there's no longer streaks or pockets of flour. Mixture will be lumpy and that's okay.
- Pour mixture into prepared baking dish. Wiggle pan to level batter out even.
- Bake in preheated oven until toothpick inserted into center comes out free of batter (a moist crumb or two is fine), about 30 to 40 minutes.
- Let cake cool on a wire rack (to speed up cooling you can cool in the fridge).
- To make the cream cheese frosting: Add cream cheese, butter, powdered sugar and vanilla to a large mixing bowl.
- Using an electric hand mixer (with clean beater blades), blend mixture on low speed until combined. Then increase speed to high and whip for several minutes until light and fluffy.
- If needed you can freeze the frosting in 3 minute increments, stirring between intervals, until it's firmed up some.
- Frost cake with cream cheese frosting then cut into slices.
