Sweet Potatoes With Amaretto and Macaroons image

This is the most fabulous and delicious sweet potato recipe I have ever made, a refreshing change from the marshmallow or candied dishes. It's perfect with rich holiday meats like turkey, goose, ham and other roasted pork... and it's sooooo easy. I made it for Thanksgiving; but it would be equally wonderful for Christmas, a unique addition to the holiday table!

1 (29 ounce) can sweet potatoes
1/4 cup butter
1/4 cup brown sugar
2 tablespoons orange marmalade
1/4 teaspoon salt
2 tablespoons amaretto liqueur
10 coconut macaroons (like the Archway size)
2 tablespoons butter
1 tablespoon amaretto liqueur

Steps:

  • Heat sweet potatoes in their liquid in a saucepan over medium heat until hot, then drain.
  • Mash in the butter, then add the brown sugar, marmalade, salt and Amaretto liqueur.
  • Transfer mixture into a greased 1-1/2 quart baking dish.
  • Preheat oven to 350 degrees F.
  • Chop coconut macaroons coarsely.
  • Melt butter in a small saucepan, then add macaroons and the 1 tablespoons Amaretto liqueur.
  • Stir to combine over low heat, crumbling the macaroons further.
  • Sprinkle the macaroon topping over the prepared sweet potato mixture; then bake assembled casserole until warmed through, about 30 minutes.

8 large sweet potatoes, peeled and cooked
1/2 cup light brown sugar
2 tablespoons orange juice
1/2 cup Amaretto
1/2 cup sugar
1/2 cup melted butter
2 teaspoons grated orange rind
1/2 teaspoon salt (optional)
1 cup miniature marshmallow

Steps:

  • Preheat oven to 350 degrees.
  • Mash the sweet potatoes in a mixing bowl until they are smooth with a mix er or potato masher.
  • Add the brown sugar, orange juice, Amaretto, sugar, butter, orange rind and salt.
  • Stir until well combined.
  • Spray a 3 quart casserole dish with nonstick cooking spray.
  • Spoon the sweet potatoes into the casserole dish.
  • Bake for 20 minutes.
  • Sprinkle the marshmallows over the top of the sweet potatoes.
  • Bake for 15 minutes or until the marshmallows are melted and lightly toasted.

1 tablespoon unsalted butter, melted
1 teaspoon olive oil
1 teaspoon finely chopped fresh thyme leaves
1 garlic clove, finely grated on a microplane
Kosher salt and freshly ground black pepper
1/3 cup nonfat Greek-style yogurt
1 scallion, white and green parts chopped

Steps:

  • Preheat the oven to 425 degrees F. Line a baking sheet with aluminum foil.
  • Make a series of 1/8-inch slices along each potato, slicing 2/3 of the way through.
  • Stir together the butter, oil, thyme, garlic, 1/4 teaspoon salt and 1/4 teaspoon pepper in a small bowl. Rub the potatoes all over with the mixture, getting in between the slices.
  • Place on the baking sheet and roast until the center of the potatoes are tender and the outside is crisp, 50 minutes to 1 hour. Halfway through the roasting time, remove the potatoes from the oven and run a fork gently across the tops of the potatoes, using light pressure, to fan the slices and separate them from one another.
  • Meanwhile, stir the yogurt and scallions with a pinch salt and a pinch pepper. Serve the sauce with the potatoes.

2 eggs

2/3 cup chopped pecans

Steps:

  • In a large saucepan, cover sweet potatoes with water. Boil until tender; drain.
  • Remove the skins from the sweet potatoes and arrange them in a greased 2 quart baking dish.

4 large granny smith apples
1 (14 ounce) can pineapple chunks, drained
1/4-1/2 cup brown sugar
1 dash clove

  • Cook yams in boiling water long enough to soften, but still firm.

6 tablespoons unsalted butter, plus more for baking dish
1/2 cup heavy cream
1/4 teaspoon freshly ground nutmeg
Freshly ground pepper
1/2 cup finely grated Parmigiano-Reggiano cheese
10 Amaretti (Italian almond cookies), crushed into fine crumbs (about 3/4 cup)

Steps:

  • Cover potatoes with cold water, in a medium saucepan. Bring to a boil; add salt. Reduce heat to medium-high; cook potatoes until soft, about 25 minutes. In another medium saucepan, cover squash with cold water. Bring to a boil; add salt. Reduce heat to medium-high; cook until soft, 15 to 20 minutes. Drain potatoes and squash thoroughly.
  • Force potatoes through a ricer into a bowl. In a separate bowl, mash squash with a potato masher; stir in potatoes.
  • Bring 4 tablespoons butter and the cream to a simmer in a small saucepan over medium heat. Add 1/2 teaspoon salt and the nutmeg. Season with pepper. Stir cream mixture and 1/3 cup cheese into potato mixture. Season with salt and pepper, if desired. Spoon into a buttered 10-inch round baking dish.
  • Preheat oven to 350 degrees. Sprinkle mixture with crushed cookies and remaining cheese. Dot topping with remaining 2 tablespoons butter. Bake until topping is just browned, 20 to 30 minutes.
