SUNNY'S SHRIMP, CORN AND BEAN SALAD

Steps:
- Skewer the shrimp onto metal skewers and place on a baking sheet.
- Whisk together 3 tablespoons of the olive oil, the juice of 1 lime, 1 tablespoon of the minced garlic, a big pinch of pink Himalayan salt and freshly ground pepper to taste in a large bowl. Pour the marinade over the shrimp and stir thoroughly to coat both sides of the shrimp. Let marinate for 20 minutes.
- Preheat a grill to medium-high heat.
- Grill the corn until slightly charred and grill marked, 3 to 4 minutes per side. Let cool, and then cut the kernels off the cob.
- Grill the shrimp until grill marked and pink in the center, 2 to 3 minutes per side. Let cool, and then remove from the skewers and slice in half crosswise.
- Combine the corn kernels, beans, shrimp, cilantro and pink Himalayan salt to taste in a large bowl. Drizzle with the remaining 2 tablespoons olive oil, the juice of 2 limes, the remaining 1 tablespoon minced garlic and freshly ground pepper to taste. Gently toss to combine. Let chill at least 30 minutes before serving.

- Combine quinoa, water, and 1/2 teaspoon of salt in medium saucepan and bring to boil.
- Reduce heat and simmer uncovered, 12 minutes. Stir in corn and cook until quinoa is tender, about 2 minutes longer.
- Drain off any excess water and transfer quinoa mixture to large bowl and let cool.
- Spray small nonstick skillet with nonstick spray and set over medium heat. Add shrimp and cook, stirring occasionally, until just opaque in center, about 3 minutes. Add to quinoa mixture.
- Add all remaining ingredients and remaining 1/2 teaspoon salt to quinoa mixture. Toss to mix well.

GRILLED SHRIMP WITH BLACK BEAN SALAD

- Combine the black beans, salt and garlic in a bowl; mix well. Stir in the mangoes, red onion and red pepper.
- Whisk the cilantro, cumin, chili powder, olive oil and lime juice in a bowl. Stir into the black bean mixture.
- Season the shrimp with salt and pepper. Thread the shrimp on bamboo skewers.
- Grill over hot coals for 3 minutes on each side or until the shrimp turn pink.
- Spoon the black bean mixture onto a serving platter; top with the shrimp.

SAUTéED SHRIMP WITH FERMENTED BLACK BEANS
For the most part, the shrimp will tell you when they're done. Certainly they're ready once they're pink, though very large shrimp may need an extra minute to cook through. To check, slice one in half; if it's opaque, or even nearly so, season to taste and start eating.

- Add 3 sliced garlic cloves, and cook until golden.

GRILLED SHRIMP, CORN AND BLACK BEAN TOSTADA SALAD

- Make Dressing:
- Place lime juice in medium bowl. Gradually whisk in olive oil. Mix in cilantro, jalepeño, and cumin. Season to taste with salt and pepper.
- Make Salad:
- Combine tomatoes, beans, green onions, 3/4 cup cilantro and red onion in large bowl. (Dressing and salad can be prepared 6 hours ahead. Cover dressing and let stand at room temperature. Cover salad and refrigerate.)
- Prepare berbeque (medium-high heat). Mix lettuce into salad. Pour 1/4 cup dressing into small bowl. Reserve remainder for salad. Brush corn with dressing from small bowl. Grill corn unril beginning to brown, turning often, about 5 minutes. Brush shrimp with dressing from small bowl and grill until opaque in center, turning occasionally, about 5 minutes.
- Cut kernels from corn and add to salad. Toss salad with enough dressing to coat. Season with salt and pepper. Top with shrimp. Garnish with tortilla chips and additional cilantro, if desired.
BEAN AND SHRIMP SALAD

- If using dried or fresh beans, place in large deep pot with onion and bay leaves. Add cold water to cover by 5 inches. Bring to a boil, reduce heat and skim off foam. Simmer until tender, 30 minutes for fresh beans, 1 hour or more for dried. Drain beans; discard onion and bay leaves.
- Place beans in a large bowl. (Canned beans may be added without cooking.) Add garlic, half the oil, and Maldon salt. Toss to mix. Cover with plastic wrap and set aside.
- Place shrimp in a large saucepan and add water just to cover. Add 1 teaspoon table salt and the vinegar. Bring to a boil and cook 1 to 2 minutes. Drain.
- Combine shrimp with beans. Add remaining oil, lemon juice to taste, and parsley, if desired. Toss gently to mix. Line a large plate with radicchio leaves, and heap with shrimp and beans. Serve.

- In a medium skillet, combine the vinegar, sugar, and salt. Bring to a boil, whisking to dissolve the sugar. Add the onion, reduce to a simmer and cook, uncovered, gently stirring, until the onions have wilted slightly, 1 to 2 minutes. Transfer the onions and pickling liquid to a heatproof bowl and let cool.
- Bring a large pot of salted water to a boil. Add the corn, then cover the pot and turn the heat down to low. Simmer for 10 minutes, then remove the corn from the water and let cool. Holding the cooled corn upright in a large mixing bowl, cut the kernels off the cob in strips.

Cook for 1 minute, then add the garlic and cook, stirring occasionally, until the shrimp are just cooked through, 1 to 2 minutes.
