2 tablespoons extra-virgin olive oil
2 italian frying bell peppers or 1 large poblano chile
fine sea salt & freshly ground black pepper
1/2 garlic clove
1/2 cup buttermilk
1/4 cup sour cream
1 teaspoon sugar
10 fresh basil leaves
1 teaspoon fresh lemon juice
1 tablespoon canola oil, plus 4 cups for frying
3 -4 ears corn
1 cup all-purpose flour
1 tablespoon baking powder
2 large egg whites
2/3 cup light beer
2 teaspoons chopped fresh tarragon
1 teaspoon grated lemon zest

Steps:

  • For the buttermilk dip, heat the olive oil and the frying peppers in a small skillet over medium-low heat, seasoning them with ¼ teaspoon salt. Cook the peppers slowly, turning them often, until they are tender at the stem, about 15 minutes.
  • Pinch out the pepper stems and most of the seeds, and put the peppers in a blender. Add the olive oil from the skillet and the garlic, buttermilk, sour cream, sugar, basil, lemon juice, and ½ teaspoon salt. Process until smooth. Pour into a bowl for serving. (This sauce can be made a few hours ahead and kept refrigerated.).
  • For the fritters, heat the 4 cups oil to 370°F While the oil is heating, shuck the corn, cut the kernels shallowly off the cobs, and then scrape the rest of the pulp with the back of the knife. Measure out 2 cups of kernels and pulp.
  • In a medium bowl, sift together the flour, baking powder, and 1 teaspoon salt. In a large bowl, whisk together the egg whites, beer, remaining tablespoon of canola oil, tarragon, lemon zest, and reserved corn. Add the flour mixture and whisk quickly to combine. (Don't overmix-a few lumps are okay.).
  • Working in batches, drop the fritter mixture by the teaspoonful into the hot oil. Cook until dark golden brown, about 3 minutes. Drain well on paper towels and serve with the buttermilk dip.

4 cups Original Bisquick™ mix
1 cup cold water
2 eggs
2 cans (15.25 ounces each) whole kernel corn, drained
2 cans (4.5 ounces each) Old El Paso™ chopped green chiles, well drained
Old El Paso™ salsa (any variety), if desired

Steps:

  • Heat oil (2 to 3 inches) in deep fryer to 375°F.
  • Stir Bisquick mix, cold water and eggs in large bowl with spoon until smooth. Stir in corn and chilies.
  • Drop batter by small spoonfuls into hot oil. Turn and fry until evenly golden brown. Drain on paper towels. Serve with salsa.

Chile Sweet Corn Fritters image

These easy fritters celebrate the flavors of summer and can be made all year round using frozen sweet corn. They are perfect for the whole family. I like to add a little fresh chile heat to mine, but when I am making them for kids, I simply leave it out.

Number Of Ingredients 13

One 10-ounce bag frozen sweet corn, thawed (about 2 cups)
1 small red onion, finely chopped
1 fresh red chile, deseeded and finely chopped, optional
1 medium clove garlic, finely chopped
3 tablespoons finely chopped fresh parsley
1 tablespoon nutritional yeast flakes, optional (or 1 tablespoon soy sauce)
1 cup all-purpose flour
1 teaspoon baking powder
A scant 1/2 cup (100 ml) unsweetened almond milk
Flaky sea salt and freshly ground black pepper
1 tablespoon fresh lemon juice
Olive oil, for frying
Store-bought sweet chili sauce, warmed, for serving

Steps:

  • In a medium bowl, mix the corn, onion, chile if using, garlic, parsley and yeast flakes. Stir in the flour and baking powder. Gradually stir in the milk, mixing to combine all the ingredients. Season with a pinch of salt and pepper and stir in the lemon juice.
  • Heat 1 tablespoon oil in a large sauté pan over medium-high heat. To check the heat, drop a test piece of batter in, and you should hear a sizzle in the pan.
  • Spoon 1 tablespoon of the corn mixture into the pan for each fritter, leaving a little space between them so they don't stick together. Pat each fritter down with the back of the spoon so it is flatter and easier to cook on both sides. Fry until golden brown on the first side, about 2 minutes, then flip to brown the other side, about 2 minutes more.
  • Cook the fritters in batches, using 1 tablespoon of oil for each batch, until all the corn mixture has been cooked.
  • Serve with the warmed sweet chili sauce for dipping.

  • Chili:

  • Cheesy Corn Fritters:
  • Combine muffin mix, egg, milk, corn, and cheese in a large bowl. Heat oil in a very large skillet over medium heat. For each fritter, pour about 3 tablespoons batter into hot skillet. Cook 4 minutes or until golden brown, turning once.*
  • *Note: Keep cooked fritters warm in a 200°F oven while cooking the remaining fritters.

3 cups fresh corn kernels, about 6 ears
1/2 cup chopped yellow sweet pepper
2 tablespoons olive oil
1 medium red onion, chopped
1 small hot green chili pepper, seeded and finely chopped
2 garlic cloves, minced
1 cup low sodium vegetable broth or 1 cup low sodium chicken broth
1/4 cup chopped parsley
1/4 teaspoon ground cumin
salt & fresh ground pepper
2 cups fresh corn kernels, about 4 ears
1 cup very finely chopped cooked chicken
1 large egg, lightly beaten
1/2 cup milk
2 tablespoons butter, melted
1 teaspoon salt
1/4 teaspoon ground black pepper
1 1/2 cups all-purpose flour
1 teaspoon baking powder
cooking oil, for deep-fat frying
6 fresh cilantro stems (optional)
6 whole hot chili peppers (optional)

Steps:

  • PUREE:.
  • In a large skillet bring 2 cups lightly salted water to a boil; add 3 cups corn.
  • Return to boil; cover and cook until tender, about 3 minutes.
  • Drain; cool slightly.
  • In a food processor, puree corn with the yellow pepper.
  • In the same skillet heat olive oil; add onion, chopped chile, and garlic; cook over medium heat until onions are tender.
  • Add corn puree and broth; simmer, uncovered, over low heat for 15 minutes, stirring occasionally.
  • Add the parsley and cumin; season with salt and pepper to taste
  • Cover and set aside.
  • FRITTERS:.
  • Place 2 cups corn in a bowl; lightly crush with a potato masher.
  • Stir in chicken, egg, milk, butter, 1 teaspoon salt, and 1/4 teaspoon black pepper.
  • In another bowl combine flour and baking powder; stir into the chicken mixture just until moistened.
  • In a deep-fat fryer or large saucepan heat 2 inches of oil to 375°F
  • Drop scant 1/4 cup dough, a few at a time, into hot oil.**
  • Fry for 3 to 4 minutes, turning if necessary, until golden brown and cooked through.
  • Drain on paper towels; keep warm.
  • TO SERVE:.
  • Place puree on 4 plates; arrange fritters evenly atop.
  • Garnish with cilantro and whole peppers, if desired.
  • Serve warm.
  • **NOTE : Corn may pop and cause oil to spatter; watch carefully while frying these fritters.
