2 cans (15 ounces each) black beans, rinsed and drained
1 can (15-1/4 ounces) whole kernel corn, drained
1 can (10 ounces) diced tomatoes and green chilies, undrained
1 jar (7 ounces) roasted sweet red peppers, drained and diced
2 plum tomatoes, chopped
1 medium red onion, finely chopped
4 green onions, finely chopped
1/3 cup minced fresh cilantro
2 garlic cloves, minced
1/3 cup orange juice
1 teaspoon ground cumin
1 teaspoon grated orange zest
1/8 teaspoon coarsely ground pepper
Tortilla chips

Steps:

  • In a large bowl, combine the first 13 ingredients. Cover and refrigerate for at least 2 hours. Serve with tortilla chips.

Number Of Ingredients 9

6 flour tortillas (each 7 1/2 inches)
Olive-oil, cooking spray
One 19-ounce can black beans
1 small tomato, seeded, cut into 1/2-inch dice
2 scallions, finely chopped
1 jalapeno pepper, seeds and membranes removed, minced
1/2 cup chopped fresh cilantro
2 tablespoons freshly squeezed lime juice
1/2 teaspoon coarse salt

Steps:

  • Preheat broiler. Rinse beans under cold running water. Make salsa: Place 1/4 cup black beans in the bowl of a food processor. Pulse until coarsely chopped; transfer to a bowl. Add remaining beans, tomato, scallions, jalapeno, cilantro, lime juice, and salt. Stir to combine; set aside.
  • Make chips: Cut each tortilla into eight wedges. Arrange on a baking tray; coat with cooking spray. Place under broiler, and bake until crisp and golden brown, 1 to 2 minutes per side. Transfer chips to a wire rack to cool. Serve salsa with chips.

ANNE'S CORN SALSA WITH TORTILLA CHIPS



Anne's Corn Salsa with Tortilla Chips image

3 cups canola oil
Twelve 6-inch corn tortillas, cut into sixths
Kosher salt
1/4 cup canola oil, plus more for oiling
4 ears corn, shucked
3 tomatillos, papery outer skin removed
4 scallions, thinly sliced
2 cloves garlic, smashed and finely chopped
One 15-ounce can black beans, drained and rinsed
1 jalapeno, seeded and chopped, optional
1/4 to 1/2 cup white vinegar
Kosher salt
1/2 bunch fresh cilantro, leaves roughly chopped

Steps:

  • For the chips: Heat the oil in a Dutch oven set over medium heat until a deep-frying thermometer inserted in the oil reaches 350 degrees F. Drop the tortillas in batches into the oil, being careful not to overcrowd. Fry until golden brown, a couple minutes total. Remove to a paper-towel-lined sheet pan and sprinkle liberally with salt. Repeat for the remaining tortillas.
  • For the salsa: Preheat the grill to medium. Use a wire grill brush to loosen any crud or soot from the grate. Wipe the grate down carefully with an oiled towel to remove any loosened crud.
  • Grill the corn and the tomatillos until they char and blacken on all sides. Remove from the grill and cool.
  • Cut the kernels from the cob and scrape any residual bits of corn off the cob. Scrape any really charred bits of skin off the tomatillos and then cut them into 1/2-inch chunks.
  • In a large bowl, combine the corn, tomatillos, scallions, garlic, black beans and jalapenos if using. In a small bowl or measuring cup, combine the vinegar and oil. Pour over the salsa and season with salt. Taste and adjust the seasoning, if needed. Toss in the cilantro and serve.

1/2 cup red onion, chopped

400g can chopped tomatoes
1 onion , finely chopped
1 red chilli , halved, deseeded and finely chopped
2 tsp smoked paprika
15g (1/2 pack) coriander , finely chopped
6 Kalamata olives , thinly sliced
½ lemon or lime, juiced
2 x 400g can black beans , drained
3 garlic cloves , finely grated
2 tsp ground cumin
2 tsp ground coriander
6 large eggs
1 tbsp rapeseed oil
4 generous handfuls of rocket

Steps:

  • Tip the tomatoes into a pan and stir in the onion, ½ the chilli and the smoked paprika. Cook over a low heat for 10 mins. Tip ¾ into a bowl, then stir in 2 tbsp of the coriander and the olives and lemon juice.
  • Meanwhile, heat the grill. Tip the beans into a bowl and stir in the remaining chilli, the garlic, cumin and coriander. Beat in the eggs, then add the reserved ¼ of the salsa and the remaining fresh coriander with a little salt to taste. Blitz a little using a hand blender or mash some of the beans with a potato masher.
  • Heat a 24cm non-stick pan with the oil. Pour in the bean mixture and leave to cook gently for 5-7 mins until the base is set, then grill for 5 mins. Tip out and cut into 4 wedges. If you're following our Healthy Diet Plan, serve two wedges with half of the remaining salsa and the rocket. Chill the rest for the following day.

There are many black bean salsa recipes listed on here, but I didn't see any quite like this. This is a wonderful recipe that was given to me several years ago by a friend. I always double and it's still gone in a flash at get-togethers and I get asked for the recipe every time. You can always add more of the ingredients that you really like (I always add more lime juice & garlic). We like to serve with tortilla chips or pita chips, but it's also a great relish over chicken or fish. I also sometimes make this to mix with rice. Enjoy!
